I've a small simple electric oven, with uper and lower elements. with max 230 C of temp. When you say, to use lower elements for baking, my cake burns from below and remains white on the top. While your cake is white at the base and red at the top. Do you have any combination of uper and lower at different timing, or what? Do tell me, plz.

Yes u can use cake flour....in fact cake flour is recommended when making soft cakes like a chiffon cake...mixing corn flour with plain flour is just a substitute for cake flour when u dont hav it in hand

Was a bit confused when the instructions said to bake it cuz I normally use water bath for these. Anyway I baked according to instructions and rested in the oven for 15mins before taking it out. Still deflated hahaha. Taste and texture ok but it didn't come out as chiffon cake for me
I learn from other videos & comments, sponge cakes cannot be taken out straight after bake/steam time is up. It must be left in the oven/steaming pot for at least another 5 mins to let it "get use" of the low temperature. Try that if is useful for you

It's corn starch because it is white while the corn flour is a little yellow..
