Ingredients
1.5 Cups of sweetened shredded coconut
1.5 Cups of plain flour
1/2 Teaspoon of baking soda
1/2 Teaspoon of salt
1/2 Cup of softened butter
1 Cup of sugar
3 Eggs
1 Cup of sour cream

I made this tonight, and it is so moist with a natural sweetness, not too sweet like traditional cakes. The browned coconut on top adds a nice crunch. Thank you so much for sharing your recipe.

That looks delicious. I envision all things tropical. Now I'm not certain if you mentioned it, but what is the size of the cake pan that you used. During the swooning over the flavors and the aroma wafting through the house plus the vision of the tropics, I no doubt missed that bit of important information.
