OLD SCHOOL PINEAPPLE 🍍 COCONUT CAKE (FRIDAY NIGHT CAKE SEGMENT)

- OLD SCHOOL PINEAPPLE COCONUT CAKE!!
EVERY FRIDAY I MAKE A CAKE
THIS IS MY CAKE THIS FRIDAY NIGHT
Cake recipe
1 cup unsalted butter
2 cups granulated sugar
2 whole eggs
3 teaspoon vanilla
2 cups cake flour
1 teaspoon baking powder
1 teaspoon salt
1 cup milk
In mixing bowl cream together butter and sugar
Add eggs slowly and vanilla
In separate bowl combine flour,salt and baking powder
Gradually add dry ingredients to mixing bowl alternating with milk
Mix until batter is smooth
Be careful not to over mix
Pour batter into two 9 in cake pans ( greased and floured)
Bake for 30-35 minutes at 350 degrees
Remove from oven and let cool about 10 minutes
Then remove from pan and glaze cake while pineapple glaze is still hot and cake is still slightly warm ( makes the cake more moist and flavorful)
Pineapple glaze recipe:
32 oz of crushed pineapple ( with juice )
4 oz butter
1 cup granulated sugar
1 tablespoons vanilla
1/2 cup shredded coconut
2 tablespoons cornstarch
Combine pineapple, butter , sugar and vanilla in a sauce pot
Bring to a boil
Add cornstarch ( slurry)
Cook 5 minutes until thicken
fold in coconut

I have been looking for this recipe for over 50 years. My Gram's older sister made this cake as a 3-layer cake and it was all glistening and yummy. Once she died in 1975, there was no recipe. One lady at my church knew about and said, Oh, yes and you use some orange juice in it. We never made the glaze. Now, you are doing it. Btw, my grandmother was from GA.

I bake and cook a lot because it is something that i have enjoyed doing for years. This cake is one of the many layer cakes that i would do for the holidays. Lemon curd, pound, red velvet, chocolate , strawberry, german chocolate, and jelly cake. Love these old school recipes learned all of them from my mama, who is now in Paradise.
Now this is old school! Can't wait to bake this!

My uncle was telling me he wanted pineapple cake and I remember my Big Mama making it all the time,(I personally never ate this cake) so I looked up some recipes and none of them looked like what I remembered. This is perfect. It's exactly what I needed. My sister and I use to make this when we were kids. Our grandmothers on both sides, and Mommy, showed us how. But it's been years since I made it. They are all gone; I couldn't really remember how to recreate the icing. So voila, you have the exact icing recorded, just for me ☺️🤗 (and, of course, everyone else 🥰). I have a can of crushed pineapple and thought...a-ha. All the other recipes added cream, and that's not what I wanted. Again, thank you SO much. Off to make it now. I am now a follower. It was buttery and I made this scrumptious cake TODAY, the day after Thanksgiving Nov 25, 2022. It is delicious!!! Everyone should try it. You can't mess it up. BTW, I used 4oz of butter, not 4 T. It still turned out good. Thank you, Chef.

I love this type of pineapple cake, they still sell this type here in NC at most of the old school BBQ joints, you can get it by the slice or a whole cake. This was also a favorite during the holidays my mom would make this and she would save some of the pineapple filling for me to eat ❤️
