The level up to the professional studio is noted but I miss the sunlight and down home feel of your old kitchen. I'm with you either way though and the growth of this channel in the business sense is inspiring.
I am hosting Thanksgiving Dinner this year and while surfing the videos, I came across this one- OMG! I already know it will be great! Thank you so much and I am already proud of my greens! So elated that I scrolled to your video!
My mom taught me how to cook as a kid. I start by using a ham hock in boiling water with seasonings. Take stems out, roll into fat cigar ( lol), cut into thin strips . Wash greens until no more dirt is found and get to cooking until tender. Cornbread for the pot liquor, potato salad, fried drumsticks and sweet iced tea with yams on the side, yum!!!! Maybe even have macaroni and cheese. That combination will make you take a nap, lol.
Omg. Would love to eat dinner at your house. Unfortunately I have not made potato salad or collards. Shoot, I'm 42 yrs old but still a rookie when it comes to cooking so I ask my mom or my sisters how to make something.
What attracted me to your videos is your sweet spirit, professionalism, cleanliness, and just good ole-fashioned cooking. You really do make the recipes simple. My Mom taught me at age 5. It started with just helping to stir foods up while standing on my highchair. I blossomed from there and eventually learned other recipes from recipe books, other cooks, and magazines. That Pot Liquor is the bomb! All I would need is Cornbread and some Candied Yams!! I mainly use fresh greens when I can get them. It depends on where I am. In the South, that is not a problem. I also use Salt Pork for seasoning when I don't have bacon fat. What would be new for me is the Chicken Broth. I never saw my mother use that. I guess the Salt Pork did the trick! The Iodized Salt helps to prevent Thyroid disease. I learned that in Nursing School. It was discovered that people who had thyroid problems lacked Iodine in the body. Our bodies need certain minerals as well as vitamins for our health. Now if you are really Southern and Country you are supposed to eat that pot liquor by sopping it up with some cornbread and your fingers! 😂 You're the best I've seen!!!! ❤🎯
@ Ruthie Green - You are so right about our bodies needing iodine. Docs tell people to quit salt and they end up on Synthroid 🤦♀️. Blessings to you and your family from this fellow RN in Florida 💕
Crazy how just seein some greens can bring up some memories, theres never a bad time for em but they hit definitely different when its this time of year.
That pot liquor is where all of the seasoning and flavor settles. It is like a broth that is so good you can almost drink it. In the south we mix a little cornbread with the pot liquor.
Big homie. You’ve helped me make things I’ve had in my childhood that no one ever taught me how to make. But now I can share with my family and kids. I can’t begin to thank you enough!! G.O.A.T
I learned to soak my greens in a sinkful of vinegar and cold water. Soak then rinse and repeat until there's no sand in the bottom of the sink - usually takes at least 2 soaks.
Don’t forget the hot sauce,I love half package of bacon diced up into squares and fried in pan in beginning of cook too, sometimes we can’t find turkey wings or drumsticks so have to use a hammock
Collards are good for the prostate. My father was diagnosed with prostate cancer. A lady at church told him eat Collard greens at least 3 or 4xs out of the week. No more prostate cancer, no chemo or radiation was needed.
This old lady from NY loves collards, I cut the stem out as you did in this video. Pot liquor is the delicious liquid in the pot after the greens are cooked, loaded with flavor and the most vitamin packed of the whole pot. Yummy
Pot liquor is “gold” and with cornbread, omg! I fix mine very similar (old school) with capful apple cider vinegar, crushed red pepper and little bit of raw sugar added. Thanks for the content..,… on point with everything!!!
Co-worker introduced me to collard greens in the 80's. From a soul food place in Boston. Never looked back since. I get them every time its on a menu. Also make them myself. I use bacon. Another friend used to make them for me with chicken neck bones. Never thought of the turkey leg looks awesome. Found out fresh is better than frozen already chopped. Its worth the effort to make them fresh. Love your channel.
For those that gave him a thumbs down, thats a southern dish handed down for years Southern dish. We have been cooking like this for generations after generations. They used to give the slaves the pot liquid and they would eat the greens and wonder how healthy they were becoming, its because all of the nutrients were in the pot liquid
I am a northerner now living in the south. I must say how surprised at how few people really know how to cook greens. The way you cooked these is how my grandmother taught me. They looked so good! I think it's time I show them how it's really done!
I eat a few stems with my greens and when I was kid we would wipe the greens with a cloth and then put salt and baking soda in the water and clean them in water.
Hey AB pot liquor was like medicine for my fam my momma used to put some in our baby bottle 🍼 lol or for cold weather man back down memory lane bro you hit the spot on that but a pro tip my mom’s didn’t cut the stems she would say “ A leaf 🍃 is only good as it’s Branches “ old school Baton Rouge Louisiana tip ✌🏾👍🏾🙏🏾
I have been cooking Collard Greens many years but I really like how simplified you make them. I was taught to cut the whole stem off the greens and to wash each leaf 1 at a time Thanks AB
I was just talking about collard greens yesterday. I'm definitely cooking that for Thanksgiving. Yes indeed! I better get my smoke 🦃 before there's a shortage. Lol I'm going to do my Thanksgiving shopping early.
I cooked Camelia red beans Sunday/Monday and now midweek have my favorite treat; pot liquor. Beans and rice are almost gone but the liquid is still there. Learned from my mama the best part of the cook.
That's how I fixed them when I lived in Florida. You can't beat the flavor. Absolutely love greens especially with barbecue. I've done it with smoked turkey legs and I've done it with the heel of the pork ribs after they've been on the grill and smoking for 3 hours.
Been cooking in restaurants for 17 yrs and never made greens, I’m more into cooking varieties of meat, now I want to get more on the sides so I thank you for this, I can do a lot with just this.
Yesss! My great Grandma wash with salt or vinagar, use ham bone or ham hock, Grandma use bacon ends, mom used the smoke Turkey legs, non of them used chicken stock or broth but i do, i use that stuff for everything. i mix it up sometimes i use smoke Turkey Tails or legs and sometimes i may use beacon ends or ham hock depending on how rich my buget is 🤣 if i don't want meat i throw in a little smoke paprika or i use smoke sea salt for the smoky flavor. I make hot water corn bread with mine. I cut the stem off of the end only. That looks Yummy 😋
Yes, looks good. I don't do pork or beef. I do turkey leg too. Butter, chicken grease from fried chicken. I put onions ,red peppers, chicken stock little apple cider vinegar and hot sauce.😋😋

My gram dukes taught me how to cook collards, and this is very similar, except we grew them, and cut the whole stem out. Its very important to wash them first. Dont want no steamed beetles up in there, lol! Hats off to you brother AB, I aint gonna overtalk it, but you know whats up, lol! Much love from VA
Momma❤️ from Louisiana taught me to eat greens and cornbread sopped up and smashed in that pot liquor with her fingers and that’s how I introduced it to my babies…that’s that fye‼️🔥🔥🔥
Thank you for showing people that you “wash” greens with water and salt. My grandmother taught me the same way. I’ve heard ppl add actual dish wash soap to the water. smh.
Amazing! My grandmother taught me the about the same, except to remove stems & cut before washing in cold water & salt bath. But, a senior coworker and OMG she showed me how to make greens and cabbage without 🍖 meat… so good & added red pepper flakes😋 Yesssss AB, pot liquor from the greens, so good with cornbread.
Ok AB, enough commenting. I put my money where my mouth is and made this recipe, you ain’t lying. This was a huge hit at my BBQ and may be my new favorite greens recipe, thanks for sharing, we all loved it.
I’d say u where raised right! Yes Lawd wash them greens, we add a lil vinegar w salt water. Your recipe is almost exact to how my Grandma & Mom taught me. I've made greens with the smoked turkey neck, but never with chicken broth, garlic, and bacon. AND it usually o ly take 30 mins to cook.. wow I can't wait to try this recipe 😋😍
I use the whole Collard leaf and smoked turkey necks and 2 ham hocks. Lastly I lay my whole Okra on top. Then add some corn bread in a bowl mashed up with some Collards on top and that famous "Pot Liquor" and the Okra. Good Ole Deep Down Southern eatin'
I’m Latina so I didn’t grow up with collard greens but as an adult I learned through youtube how to make them for my household because they are healthy and delicious. We eat the stems. We also eat the broccoli stems. I use what I have and try not to let anything go to waste. I put dried cranberries, prunes or raisins in mine to counteract the bitterness as it steams which is a healthy, vegan option. But I’ll definitely try out your recipe and method especially since thanksgiving is around the corner.

You have shown me how to cook close to what she made. Her love and kindness is the secret ingredient I can't replicate. AB, what is the spice blend you used? You didn’t mention it during the video. Thanks I really enjoy your videos. Make that money!!
That pot liquor is the best part. From down here in Alabama I can say this looks like some of the best collards I've ever seen.
My mother also added 1 head of cabbage to her collard greens! Talkin about some good eatin' aw man. I'm salivating just thinking about her greens.

Thanks to you I know they will taste delicious. Thank you and happy new year.
