I've been quality control for industrial metal fabrication my whole career and I'm normally pretty critical of guys doing these dyi fabrication project. I think you did an amazing job on this. Simple but very well executed.

Excellent video! I grew up welding and working metal as a part of my fathers business. We always did project builds and grills were often one of those projects. The way we kept the metal from springing was to do partial cuts first and weld the hinges on, then we cut the rest afterwards. Also its easy to see that you know your way around a welder and a torch! Only someone who has been using a torch for years could cut lines that smooth. Same could be said about your welds. I tell people if you have to use a grinder to make your welds look good you're a grinder and not a welder. Great job again thanks for sharing.
TheArchangel1906 thanks man, I don’t have extensive experience on a cutting torch. It’s what I have to work with so I learned how to use it. This type of stuff its totally hobby for me. I don’t weld, grind, or cut for a living. These are hobby grade skills. Thanks for the kind words my friend.
Carpentry and plumbing I have done. But other than 8th grade metal shop (in 1985) I've not done any sort of welding. This is the one trade I'd honestly go back to school for in a heartbeat if I had time to. Found this vid by chance...because BBQ is something I actually do. And this video makes me appreciate the craftsmanship that went into my own backyard pit all the more. And also justifies the price tag one sees on the good ones. ;-)
Same here. Did electrical at a tech high school around 1989 and now I’m a microbiologist??!! Go figure. Anyway I have been thinking about welding classes because of these great offset builds I’ve seen online. However, the price tags for smokers are way to steep! I’m thinking about buying cheap Harbor Freight equipment and going to town on a smoker.
What a way to serve your customers for your garage. As they stop by and check on vehicle’s.... I can’t imagine how much it would cost to sell this grill. I can see people enjoying the food off this grill. Great Job!!!!

Great job , I built my offset 15years ago and I love it saw it in Texas told myself I’ve got to have one.Need a grate for your wood and coals to burn on to save you offset and gets better air flow .

That was one of the best builder videos I’ve seen not so much in every aspect of the build but in the way that you did it. I enjoyed watching every minute of it
First of all, welding skills, and design are just off the charts, your grandkids will really thank you, but on the next build raise the chimney up at least 4" above the grate, will draw the smoke across the meat better, next make the cooker 42" wide, 6' ft long with double grates, mount it on a small but beefy trailer, and call me when you are done, I will come and pick it up. The workmanship was just that good.

im always designing stuff in my head and one of my favorite things to build is a smoker. i like your design, and choice of materials. they look to be able to hold up over time and lots of heat cycles. im curious of you considered putting a slide on the bottom that you can pull out and drop your ashes from fire box. just a thought. otherwise, i like the build, great skill with a torch. look forward to seeing what else you come up with. good job Erocks Garage!
I build stuff in my head too. Have already thought up the ultimate Rocket stove with larger combustion chamber with improved air flow (even fan forced turbo), ash drawer removal whilst still cooking and making multiple attachments for the top including flat plate, open grille, Wok Burner, pizza oven and smoker. Flat plate and open grill would take Webber Q plates, pizza oven and smoker would be smaller pre bought ones and made to attach to the top. Also Water boiler chimney attachment. Watching many how to make you tube vids does this. Only thing is now I have to make the damn thing, LOL.
You must work for UPS! Time is money! Well job done at your smoker. I want to be where you are at for fabrication and tool selection. Just go a Lincoln tombstone welder!
You just gave me an idea. I might just build some wheels like you did except make them some swangas, lol. I'm now working on my 2nd pit its a 26 gallon tank that I will be making into an offset smoker. Videos like this really help me out thanks for sharing, this build is a nice pit and you have a lot of good tips that shows how to get it done nicely.
@@mrslam49 On flat surfaces you can use an angle iron as a guide, helps keep the lines tight. Going around a tube, tho, I dunno. Anything flexible enough to conform to the curve would just melt.
Erocks Garage well from your video I can see that you would change the placement of the temp gauge. Lol but the craftsmanship is awesome. I’m looking to buy a smoker. Would it be less then 3,000 or more?

@@richardvillanueva559 it meant the pipe opened up a bit. so when he cuts out the doors, they're less likely to need to be rolled / bent back into shape
Good Job! Nice to see someone who actually knows where the flue pipe goes. Most offset smokers have them at the top someplace and that is not correct. it needs to be even with the cooking grate as it pulls the heat and smoke across the cooking grates. Well done. Nice fire box too. The only thing I personally would have done different is put the thermometer to the left of the door, and not actually in the door. By putting it in front of the flue you get a more accurate reading of heat temp exiting the smoker. Remember, heat rises as well, so having it in the lid will tend to read a little high. Just my .02, but that is one sweet set up.
Backdraft Barbecue thanks for the complements, yea I would have done something different with the thermometer too, I got one of those maverick temp monitors with 4 probes in it and it is much different than what the thermometer in the door says!! I tried to keep the thermometer close to grate height but it’s still way off. Another thing I don’t like is your finger get caught in it if you grab the door handle to close to the thermometer. Overall the thermometer placement was a fail! Haha, easy fix tho, I can just screw a pipe plug in there and move it!
@@mrslam49 Another thing to consider is every time you open and close the door you are knocking the thermometer. Like you said easy fix, also wouldn't hurt to put a second one on the right side near the fire box. This way you can gauge temp entering and exiting, and then you can get an idea how it maintains heat, but I really don't think you have an issue with that. Just would be great to help with maintaining temp.
Making me miss steel fabrication, switched to plumbing & HVAC 20yrs ago. The plan is to build some smokers when I retire for fun, grab a cold one and smoke something 👍🏻
I just built on my channel a Tail Gating Grill. I love to weld as a hobby and wish more people would try it. I really need a garage to keep my material clean and out of the rain.Awesome video.
Cool project run a offset myself. I lost the king but one of the bbq forums has a big section on offset smoker tuning. There are formulas for size of the hole between the chamber and the firebox. Mine did not run right until I applied it had alot of trouble with black smoke which tastes bad. The firebox is going to sag, my next one will have legs supporting it. Cool project and craftsmanship!
Brad Bloomquist, yea I did plug all of the stuff into the smoker calculators. I think some of that stuff, you have to take with a grain of salt but, I tried to use it as a general guide when deciding on the size of this and that, on this build. Mine seems to burn really clean, if you have a good fire in there.

Agreed, it was so good I assumed plasma. Had to go back and watch to confirm it was oxy. Damn, I wish I could cut like that with an oxy or plasma.

You need a rack for your charcoal a d wood so it don't burn out the bottom. It also allows air to get under the coals.
Where did you get the pipe from. I would love to build one myself but have no idea how do you obtain that size of pipe.
I went to a local supplier that sells pipe and they had it in stock. I am in Oklahoma tho so it may not be the same everywhere else.

Mine did not run right until I applied it had alot of trouble with black smoke which tastes bad. The firebox is going to sag, my next one will have legs supporting it. Cool project and craftsmanship!
Brad Bloomquist, yea I did plug all of the stuff into the smoker calculators. I think some of that stuff, you have to take with a grain of salt but, I tried to use it as a general guide when deciding on the size of this and that, on this build. Mine seems to burn really clean, if you have a good fire in there.
