    Yes...texas native here, transplanted to TN. I hadn't had real menudo in years until my local Mexican restaurant started selling it. It's not the same as what I grew up eating, but your recipe is exactly what I'm used to. Making this tonight.

      Organ meat is the most nutritious. Our human ancestors when they hunted and killed an animal, first things they ate were fat and organs, muscle meat is the last thing they ate.

    I made menudo for the first time and after going through different recipes on line I found your “easy Menudo recipe” was actually easy. I have a small family so the recipe fit exactly what I needed. It was easy to follow and I like your how you share your opinions and give the viewers the options on what we prefer. We are in quarantine and since we can’t go out eat I am trying new recipes. Thank you for posting and sharing your cooking skills to people like me. I like hominy in my menudo too.

    OMG Now I gotta have some menudo! I also grew up with hominy in it along with pig feet in it. I miss my Dad calling me, my sister and brother up and inviting us to eat menudo with him and my mom that they made that day. My Dad is since passed I do have my Mom but she no longer makes it. It's now my turn. Such fond beautiful memories. I love all the meals you make they remind me of home. God bless, Anna

    I've watched this video at least 5 times already and every time I watch it my mouth waters.
    I've begged my mother to show me how to make menudo and a bunch of her other dishes but she doesn't measure ANYTHING!! It's always a pinch of this or a small handful of that!

    I love menudo!! Especially during December. It’s just not Christmas without menudo 😋
    My grandma cleans the tripe with lots of lemon juice. It helps kill that smell really good

    Same here....was raised on Nana’s menudo with hominy but we didn’t have can it was corn and we had to clean it. Was my job at 8 years old to clean that corn until it was bright white. I loved that listening to stories of old days and family time..making menudo and tamales for Christmas!! Love your videos!

    I am Polish, we also have tradition of eating organ meats. Our version of Menudo is called Flaczki ;) Amazing dish that is just a nutrition/health bomb. Amazing stuff.

    Everyone has there own way of making menudo. I learned from a old dead lady that was like a grandmother to me. Anyways... she taught me the real way. 1 key in prep is soaking the tripe in limes and water for about a hour. Cutting the tripe to 1/2" x 1" stripes. Soaking a variety of peppers in a big bowl. That's all I'll share.

    Yes I grew up with hominy in my menudo. That's how my grandma and mom made it. Now it's a must and we add a lot both the yellow and the white. Loved your video, fixing to run out and buy everything. Gotta a lot of family that want some , just don't want to put in the work. I don't mind making it because it brings family together.

    I grew up eating batter fried tripe {southern grandparents} & had my first bowl of menudo when I was about 18 at a friend's house. I've never made it myself, but now I'm tempted to try. Tfs!

      In San Antonio you can get tripas in tacos.
      I grew up in panhandle and west Texas and had had the crunchy tripas, but in San Antonio they called different names which I didn't know, lol
      So I ordered tripas tacos and was surprised when I got taco with soft tripe, lol
      They make the crunchy ones too, but I dont remember the name
      😕
      But it was tasty.
      Mexican food is tricky, what's called one thing one place can be a completely different dish in another region.
      It's all a taste learning experience.

    Yummy! It looks perfect! I always skim the foam and grease after the 1st boil and thereafter. What is menudo without hominy, oregano, chili flakes, onion, cilantro, lemon and corn tortillas. Such a traditional meal especially for New Years!

    I was first introduced to Menudo when I was 24yrs. old - I am now 58 and have never had a bowl w/out Hominy in it! I usually add lots of chopped onion to my bowl and usually carry a small shaker of Menudo spice to hop it up a little! Great video and looked good!

    Perfect recipe..yes my kids are not fond of whole oregano...they dont like it with "weeds" lol..so this is perfect..and if you can cut the tripe with a spoon...thats utter perfection

    I love Menudo, used to help my dad cut it up every Sunday for lunch. These r the memories I still remember fondly. My parents have passed on now and hopefully one day to make menudo instead of buying it!

      It can be done either way, no problem. I'm a chef and I know what I'm saying. About the hominy, in northern mexico they use hominy and is still authentic, all depends in your GUSTO.

      That's a waste of time because they're going to be boiled you can't make a puree that's crunchy it has to be smooth

    I make menudo every Christmas. I use the tripe, hominy, all of the recipe but do make it with pigs feet. Gives it a good flavor. Never have cooked it with the bay leaves.

    Yes, a hominy is a must!! The only thing I like to do differently is when boiling (before adding puréed chili 🌶) I skim fat off top so as not to waste the chili flavor. Thanks for the video!!

    First of all I am 100,% Mexican from Guerrero I was raised on all our traditional meals and cooking styles. To me menudo has hominy pancita doesn't so you are right I have never had menudo without it. That being said this is a wonderful and beautiful recipie love it and my props 👏 to you my girl. Also I don't boil it with Limon but I do clean it with Limon and rinse it alot

    Excellent recipe! In northern mexico we use hominy in the south they don't. I think the hominy gives it a better flavor and texture. So, the real menudo, can be with or without hominy, all depends in your GUSTO. Again, great recipe.

    Great video.... i grew up eating menudo with hominy in El Paso, Tx. The one thing i also eat with menudo is bollio bread toasted with garlic butter...i dip it in the sauce ..

      Joseph , this was in the late 80's but menudo was what I craved with my first pregnancy.... LoL. My husband would gladly go get some for me and later on my children and I like the bollilo bread. Thanks for sharing your time and reply

    We love us some menudo! It’s a real treat. I grind up some of the hominy to kinda thicken the soup just a little bit. I use pastas, colas and honey comb tripe. Such a delicious unique taste.

    I made menudo for the first time today. & I’m just browsing others recipes. I actually made it at my brothers house so I didn’t have all my spices in my own home but I’m definitely going to try adding extra onion and garlic and oregano & cumin to my purée. I also put a big table spoon of masa in the purée. (Idk why but ive watch my Mexican tias do so lol) & I actually used the menudo mix and addition having my purée but it didn’t have all the spices I lost I want to add in. Yours looks amazing!

    To kill some of the smell ,after you clean ,let it soak in cold water and a little bit of vinegar, trust it helps!!!

      The smell goes away when its been throughly cooked. Scrubbing and soaking takes away from the consistency of the meat and doesn’t allow it to absorb the garlic and salt.

    My boyfriend loves tripe. he made it once fir himself but it was alittle tough. One day we went to a pizza restaurant and they had it there, he ordered it and I tasted it and it was delicious. and it looked just like your recipe. so I'm going to save this recipe and make it for him someday. you have great recipes.thank uou for sharing.❤

    I agree with you on your comment about the hominy. I learned years ago that the Mexican menudo does not use hominy only the tripe (pansa). You also have to make sure that which ever tripe you are using that you clean it very well. By hat I mean all the fat should be removed. Not everyone uses the pigs or beef feet (pata) and that’s OK if that is your preference. However, you will find that the pasta gives the broth a good consistency because it contains lot of collagen therefore, adding a nice consistency to the broth. As you mentioned you can cook the pata first until tender, remove then add the tripe and continue the cooking to completion. All in all I like your recipes. Good job Mama.

    Very nice. Looks yummy ! Another way to get rid of the "barn yard" is to bring to a boil, turn off the heat, let sit for about 30 minutes, drain and rinse, then boil again adding your spices on the 2nd time around. I toast my chili's. If I'm in a hurry, I use canned chili sauce. So glad that I found your channel.

    That menudo looks so good! My dad makes menudo every now and then but he always makes it this way. He also adds pig feet to the menudo. It's not menudo without the hominy!

    I am an adventurous eater I am also on a very limited income so I learn how to make the food I like so I can enjoy it more often. I found a local Asian/Hispanic market that has almost everything I need to make all kinds of things. They have a pre mixed package of menudo seasonings that I put into a spice bag and simmer it along with the tripe. The oregano and red pepper pieces as well as the garlic and other spices stay in the bag while flavoring everything. I remove the bag and clean it out for the next time I make menudo. I like to sprinkle a little bit if finely rubbed dried oregano over the top of the menudo along with a fresh squeeze of lime juice. It is one of my go to meals when it is cold and snowy out side. I will try your recipe next time. It looks a lot faster than my 5 or 6 hour method.

    I just ate menudo at El Molcajete restaurant in Louisville Ky. OMG it as the best that I have ever had. It unlike the menudo that I have eaten in the past was with out hominy. I love fried hominy but I now like my menudo with out hominy better then with it.

    As a teen I was introduced to tripe in a Nigerian stew with beef, chicken, and pork with several chiles and veggies and potatoes. It was awesome! Have been wishing to try it again. This looks like a good place to start making my own version. Thanks!

    Looks great. My mother always spent a lot of time cleaning the tripe. Another thing she would do to help get rid of a little bit of the gaminess was par boil it for an hour. Then throw that water out, put it in fresh clean water and and then add the spices and chile sauce.

    " is there anymore medubo?" I was surprised my daughter liked it,I grew up eating it, everyone swear it's the only crudo cure,never worked for me tho. I like pequine,onions and oregano ,cumino for some reason I never put lemon or lime on mine,looks good good!

    DELICIOUS! Just made this today for the first time :) I felt mine needed more Chile Guajillo so I used 12 total and added 4 Chile arbol for a little more spice. It was perfect!! Probably because I used a larger portion of hominy and tripe ( 5lbs of tripe and 1 large can of hominy) Everyone tore it up! I only have 1 bowl left. 😋😃

    U can rub the oregano between your hands to break up the leaves & small stems,then u won't choke on 'em.Also try mint leaves in the boiling water,so your house won't smell,the mother of a friend of mine used to do that.

    I've watched a lot of different people prepare Menudo and each one varies in their preparation. I really was impressed with the cleaning of the Tripe while it was still in the Sheet and again after you cut it into the pieces. Too many times I've had Menudo that wasn't "up to standards"! Your preparation is the best I've watched here on You Tube!👍🏽

    There is a Mexican tienda near me. Mexican men often like to enjoy some Modelo Negra beer on Saturday evenings, and they traditionally need a big bowl of menudo on Sunday morning to settle the stomach and clear out the head. Our Mexican tienda spends all day every Saturday cooking gallons and gallons of menudo. You can smell it all over the neighborhood, it's so delicious. Every family makes its way to the tienda on Saturdays to purchase a big pot of menudo. That way, everyone is balanced and prepared for Sunday Mass. Menudo really is a wonderful dish. I tried making it one time many years ago. I didn't know what I was doing, and I had to throw it all out. This looks simple enough. Maybe I will try again.
