But over time, people have mastered how to make the most out of the less expensive portions. It's become an artform, a delicacy! For example, 30 years ago, they couldn't give away a brisket, now it brings more than a much more tender, easier to make roast. The process of a good brisket has been perfected, and an amazing, flavorful end product is the outcome. We eat a lot of heart, tongue, and good old menudo! Thank you for your excellent video.
Let me also add, Menudo is a dish that celebrates the life of the animal. Nothing should ever be wasted when a beating heart is stopped to give one a meal! That's how the life of the animal is honored.
I'm a young Mexican guy and am trying to get in touch more with my heritage through cooking, but making Menudo seems like Mt. Everest to me. I feel like people are always particular about their Menudo and never tried to make it cuz people may not like it. I think I'm going to give it a shot, your Menudo looks so good!

Adore u too ..and this grandma is not Mexican or Spanish but LOVES TRIPE...I'm Italian and love tripe , and manudo ! We put our red marinara on it after washing and cooking and washing rinsing and cooking ,all day ..I love the stuff

One time he told me, while i was cooking meat and i wash it like you , piece by piece after boiling , he said , they never wash meat, nobody wash meat, he said, i was like, oh no! That’s gross 🤮. So, I actually bought the ingredients and made this today. It is soooo good. I had to add chicken bullion because I did not have cow feet. It is worth roasting the chili's and using the blender. It is so so so good. Thank you for detailed recipe and video. ☺️
I love menudo! My mother was too lazy to make it, after the elders from her generation passed no one made the scrumptious Mexican foods that took time to prepare. My father who wasn’t Hispanic and I drove to East L.A. to pick up pan dulce, menudo and tamales!

I love menudo because it was a favorite growing up, but also because, as a person who travels a lot for work, it's a piece of home I know I can find just about anywhere. No matter where you go in this country, the brightest corner of north-east Wisconsin, there are Mexicans there working, and if there are more than 50 of us, there will be someplace- it might look like a bodega, or a laundrymat, or a mechanic's shop!- but there will be somewhere that has amazing authentic Menudo on Sunday. Thank God.

I have made restaurant quality but it isn’t as good as the menudo my wife used to eat with the Mexican American family who would feed her when she would visit. That was her second home as a kid.

My parents are from Jalisco, but my mom makes it white without the granos. I had to figure out how to make it with chile when I got married, because my husband asked me what happened the hominy and chile. Same thing with the pozole.

I had menudo blanco for the 1st time a few months back, to my Texan eyes, it was no appetizing at all *BUT IT WAS AMAZING* ! I'm just a bit upset because my SIL from Jaliso has been in our family over 20+yrs and this is the 1st time I've had it made this way by her.
