Yessir, keep it simple. Looks absolutely delicious, i also spoon out the tripe less soup into corn tortillas and eat tacos and menudo!!! 🇨🇱🇲🇽🇮🇪🇺🇸🙏 extra onions, jalapeños, diced tomatillos and a small twist of lime ❤😊

Tripe is getting more and more expensive. They used to just throw it away till they found out we actually like to eat it.

Sapo I don't like tripe of any kind or hominy but if you invited me to your house and you served it I would eat it. My brother and sister are both married to Mexicans and they all love menudo as do all of my Tejano and Mexican compadres. I was born in San Antonio and went to high school and lived after a time in the Rio Grande Valley. I learned to appreciate every meal that was served to me. I had many friends that were poor back then who ate leftover cold beans and rice. Getting menudo for many of them was like a holiday meal. Thankfully in the RGV citrus is all over the place so good squeezin's and pleazin's of fresh lime's were all over every thing, especially with menudo. As always Sapo, you bring the chingon amigo. Mahalo.

Too much of that spice you need to cook it with a whole onion and a whole garlic head. Then when prior to being tender you add hominy and the spice taste for liking then continue cooking for tenderness. Dont forget to takeout whole onion and garlic head.
