Almost 20 years ago I had a coworker give me some menudo and homany when I didn’t bring a lunch. To this day that still has got to be the best Mexican home cooking I have had. Also working in one to two houses every day for eleven years I will say that absolutely nothing beats the smell of traditional Mexican cooking in a home.
This is the BEST video on how to clean, cut and cook. This is exactly how I learned to make Menudo. My Grandmother was from Zacatecas and Durango and my Mom from New Mexico, both cleaned/rinsed the 'beef' honeycomb tripe/menudo with lemons & water and then a final rinse with plain water before cooking. Bush's is the best hominy. I like to buy 25 lbs of Tripe, then I clean, cut, drain the water and freeze in freezer bags, then I have it ready just to cook whenever without having to do all the preparation. Your Mom is adorable!!!
Add another layer of flavor to the menudo: as it cooks in the water also add whole white onion, garlic bulb and some bay leaves. Thanks for bringing back memories of cooking with my mom.

I'm of Italian stock, and I love menudo. My Nonnu (Abuelo) made it as good as anyone. He loved it ever since he cowboyed in Mexico for a few years on a huge ranch. My wife is Mexican, and she won't eat it. It is the best cure for hangovers. I used to live in a little town just outside of Laredo, and every Saturday and Sunday morning, I would stagger down the long driveway of the little ranch we lived on to the little cafe off the highway and order a big vaso of menudo to go. I'd limp back up the driveway and just sit on the front porch eating menudo right out of the styrofoam cup and recovering from the night before's excess beer and tequila. Good old days.
My first experience with Menudo was positive. I didn’t know what it was, I just ate it and very much liked it. Back then all I knew was that there was a popular band with the same name so it must have been associated with goodness. A few years later I stoped at a small restaurant and had a bowl. It wasn’t that good. Chewy and something about the seasonings were off. While working as a surveyor in the Texas Oil fields the men working on the rigs knew I was out of food and hadn’t been able to get off location to go get groceries. This was never any real problem. When you’re working with your Mexican brothers they will make sure you stay fed. They called me up to the rig for a bowl. I knew exactly what it was. I was tired and hungry and it was the best bowl of Menudo I had ever tasted. It had the WOW factor. I had more than two bowls. Those men were surprised that I knew what it was. On one more occasion they called me an told me they had some Menudo on the rug floor. This time it was by far the worst. I didn’t want to be rude. It was food and I do not agree with too much complaining about it. Those men asked me why I kept eating it. They were all dumping it out. Evidently one of the guys on the crew didn’t know how to cook it good. I’ll always miss working with those men. My first experiences with ceviche. Molcajete was out there with those men. I’d cook them some biscuits and sausage gravy for breakfast and they’d cook up some of the best ribs on a grill. I think I gained about 10 lbs working with them.
Yeah, menudo is one of those dishes where the cook really has to know what they are doing or else it's not gonna be any good. My mom and my brother are pros at it... I myself have never made it and I'm sure I'm going to muck it up when I do try it my first time, lol. But practice makes perfect, I guess... just gotta find the courage first!
Also out here in Texas. Houston area, to be specific. There's a great meat market by the name of La Michoacana that we have in quite a few places around here and on weekends they make some pretty incredible menudo. Greetings from Houston bro!
Love your mama. Your home environment reminds me of how my Mom and Dad's home used to be. They used to make menudo for the Christmas holidays. They have since passed away prematurely and I so wish they were still around so that I could ask them to school me on this. After watching your video, I do remember yours was so close to how my Mom and Dad used to make it. I bought some red chili at Costco with the intention of making me some, but didn't know how, so, I disposed of it. My Dad used to make the best Menudo. He would take some to work for lunch, everyone wanted a taste till he had non left. He HAD to take some for everyone when he did make Menudo. He would use the lower shanks to include the hoofs for taste ( just the bones, no meat ). Now days, the sell shank bone slices for the taste.

That's awesome cooking with your mom. I remember the first time my wife had menudo at my parents house when we were dating back in the 70's. I asked her if she liked it and she said yes the soup was good but it had alot of fat in it. I looked over on her plate and she had taking all the "pansa" out thinking it was fat!
Its menudo weather! One thing that sometimes turns people off is the smell , especially before the chillis go in. Sometimes that needs a extra extra rinse before cooking. Some people will use limes or vinegar to rinse it even more. I can eat for any meal any time of the year even summer , me vale. I love Menudo!
My grandma was born New Mexico. We make it a little different- my grandma only used dry posole. She preferred the dry chilé Rojo since it’s easier then boiling chiles. she also put some chilé pequin and she used pork in both menudo and posole. She also made chilé caribé in a blender and would add some to the menudo or posole. We always saved some caribé in a bowl to add more to individual bowls for those who wanted it with more spice. We use a lot more oregano too. I had posted many videos on my channel but took them down so I can start fresh. But I’d love to try your way too. Looks delicious! My dad loved his with pig ears or pig feet. I use the can posole because it’s faster and I use the juice from the can and then add all my chiles and seasoning to that and I add some water. Taste the same as my grams lol
I was born and raised in New Mexico too. My grandma used red chile pods (not sure which other chiles she used), but I’ve used guajillos mixed with the NM red chile and it’s awesome. Gotta use Mexican oregano too. Makes a big difference. Nice to see another New Mexican out here repping!!

Your mom reminded me of my mom when it comes to cutting the menudo small. I love it! When I go to a restaurant, I'll ask them the cut of the menudo is small or big. If it's big, no thanks.

I don’t strain mine, and all I cut off are the stems from the chilies, and I like the seeds in mine. I prefer my sauce to mostly be arbol and ancho chilies

I still have my mom but she’s getting up in age and doesn’t remember recipes like before, and I will admit cutting the tripe deterred me from wanting to learn! So it is a tradition that is fading in my family. Watching this video of you and your mom is cool to watch, you cook menudo like my mom did all those years ago. Your mother is right, add the juice of the hominy. It also enhance the flavor of the menudo. it’s always best to clean as much fat off the tripe due to a odor that comes from the tripe and try adding a can of beer 12 or 16 oz’s can to eliminate odor and the yeast in the beer add a lot of more flavor to your menudo. Add beer in the beginning of cooking it add flavor and Smells amazing

African American here and I love this soup. I live in a heavy Mexican community and when I first had it I was hooked. The restaurant I go to is very traditional and omg I have it at least once a week. I love the sauce, so im making it and putting it on the crowfeet I have. it's simmering as I type this.
In the process of making this menudo tonight with pigs feet and hominy. The tripe I used was "blanket" tripe or "book Tripe". When I went to the Mexican Market no one spoke English and I don't speak spanish. Just said to the butcher, menudo tripe please. We will see how it comes out in the end!

That's awesome cooking with your mom. I remember the first time my wife had menudo at my parents house when we were dating back in the 70's. I asked her if she liked it and she said yes the soup was good but it had alot of fat in it. I looked over on her plate and she had taking all the "pansa" out thinking it was fat!

Its menudo weather! One thing that sometimes turns people off is the smell , especially before the chillis go in. Sometimes that needs a extra extra rinse before cooking. Some people will use limes or vinegar to rinse it even more. I can eat for any meal any time of the year even summer , me vale. I love Menudo!
I’ve made this twice now and my family loves it.
My grandma was born New Mexico. We make it a little different- my grandma only used dry posole. She preferred the dry chilé Rojo since it’s easier then boiling chiles. she also put some chilé pequin and she used pork in both menudo and posole. She also made chilé caribé in a blender and would add some to the menudo or posole. We always saved some caribé in a bowl to add more to individual bowls for those who wanted it with more spice. We use a lot more oregano too. I had posted many videos on my channel but took them down so I can start fresh. But I’d love to try your way too. Looks delicious! My dad loved his with pig ears or pig feet. I use the can posole because it’s faster and I use the juice from the can and then add all my chiles and seasoning to that and I add some water. Taste the same as my grams lol
I was born and raised in New Mexico too. My grandma used red chile pods (not sure which other chiles she used), but I’ve used guajillos mixed with the NM red chile and it’s awesome. Gotta use Mexican oregano too. Makes a big difference. Nice to see another New Mexican out here repping!!

Your mom reminded me of my mom when it comes to cutting the menudo small. I love it! When I go to a restaurant, I'll ask them the cut of the menudo is small or big. If it's big, no thanks.

I love how everybody has a slightly different version of their red.. I don’t strain mine, and all I cut off are the stems from the chilies, and I like the seeds in mine. I prefer my sauce to mostly be arbol and ancho chilies

I still have my mom but she’s getting up in age and doesn’t remember recipes like before, and I will admit cutting the tripe deterred me from wanting to learn! So it is a tradition that is fading in my family. Watching this video of you and your mom is cool to watch, you cook menudo like my mom did all those years ago. Your mother is right, add the juice of the hominy. It also enhance the flavor of the menudo. it’s always best to clean as much fat off the tripe due to a odor that comes from the tripe and try adding a can of beer 12 or 16 oz’s can to eliminate odor and the yeast in the beer add a lot of more flavor to your menudo. Add beer in the beginning of cooking it add flavor and Smells amazing
I've never heard of using beer, but it is definitely worth a try if it gets rid of the smell.

African American here and I love this soup. I live in a heavy Mexican community and when I first had it I was hooked. The restaurant I go to is very traditional and omg I have it at least once a week. I love the sauce, so im making it and putting it on the crowfeet I have. it's simmering as I type this.
In the process of making this menudo tonight with pigs feet and hominy. The tripe I used was "blanket" tripe or "book Tripe". When I went to the Mexican Market no one spoke English and I don't speak spanish. Just said to the butcher, menudo tripe please. We will see how it comes out in the end!

Man..I love this video. My mother never taught me how to cook menudo but she would always make me menudo year around. Grew up in Guadalupe County, Texas. Never acquired a taste for menudo. Alway figured if you could stomach tripas, you weren’t as hungover as you thought you were. Great video! Men who cook have great moms
