The most important thing I learned from watching Justin Wilson is when you're cooking rice. Once you put the lid on it, you stand by with a wooden spoon to hit anyone who tries to take a peak before the time is up.
Hi Kent, I'm originally from Lake Charles, Louisiana and just wanted to say great job on the Gumbo. I loved watching Justin Wilson growing up and still watch him on TH-cam. Thank you for the videos, your show is better than the Food network by far and your cooking is better too. God bless you guys.
Roux aka: Cajun Napalm😂😂😂 One has to be mindful when stirring the roux. Now being born in SW La., St. Landry Parish and all the women of the family were fabulous cooks. We forgive this awesome Oklahoma cook for forgetting the celery. I understand some don’t like okra in there gumbo and leave it out. Gumbo is forgiving as many families tweak their recipes. I have a sister in-law who makes what I call a kitchen sink gumbo😳😱 She was from a different part of the state. I eat it but I never make that. I stick with the old original recipe. If my Daddy hunted and got ducks, we had duck gumbo. Mom never mixed seafood with other meats in her gumbo. We certainly have a lot of dishes served over rice. Thanks Ken for stirring ole memories of Justin Wilson👍
I boil a whole chicken to start my Gumbo & I add shrimp & sausage and the Holy Three but I don't like okra & I add a small can of tomato paste. We're in SouthEast Missouri. My friend make basically chicken & egg noodles & called it gumbo and I was like, "Dude. That was good but no!!" I told him, "Next year, let's have a Gumbo cookoff competition!" cause I knew I could blow him outta the water! LOL
As a fellow Louisianan, I was slightly concerned reading the title of this video, even if I have faith in Kent to do an excellent job. That being said, when he brought up Justin Wilson, I knew we were in for a treat! I grew up watching his shows, and now I'm full of nostalgia thinking back on those days haha. Good job Mr. Rollins!!!
The first time I heard Justin Wilson was probably 1976-77 at the Winnie Rice Festival in Winnie, Texas. Justin had 2 or 3 shows that day. I was there doing a Rice Judging Contest for our Highschool FFA. I worked for The Texas A&M Rice Experimental Station. I guess I was Good at the different strains of rice. I stayed knee deep in the Black Gumbo Mud in SE Texas for several years during Highschool. It was a great experience.
I watched Justin Wilson myself. Between my momma, Justin, Emeril Lagasse and others, I learned to appreciate the art of cooking (for myself and family). Now I get to watch you. I do enjoy your cooking.
Same here except for me, it was my grandma, not my momma. My momma was a great cook, but when I took an interest in the kitchen, she would send me out to play saying she could do it easier and faster by herself. I would just sit at the table and watch her though, and learned some stuff anyway. But it was mainly my (southern) grandma and Justin that started my love of cooking!

As with your fine talent, I'm always amused, educated and left feeling at-home in your company, and you homage was delightful and so kind.

I live in Louisiana and can affirm Kent is doing it right! Once you learn to make a legit roux there are many wonderful things you can fix. For example, dark roux beef gravy, wonderful. Kent, thank you for the effort you put into your channel. God Bless!
The Farming Life , I had three with bad colds and one pneumonia. I gabbed a half gallon from the freezer and made rice. All three ate better and felt better the next day.
I made this a couple days ago and it was a HUGE hit! Only things different I did was I used some Tony’s for the Cajun seasoning and added some File powder at the end. Best gumbo I’ve ever made 👍🏻👏🏻
I never watched Justin Wilson as I was growing up, I wasn't into cooking. I still, somehow, infused a huge appreciation for him - enough to make me grin ear to ear every time I hear him speak and see the clips you showed. Now, you and Shannon are at the helm and I eagerly seek out each and every one of your vids! God Bless and thank you to all three of you - and your canine buddies too. That gumbo looks absolutely divine.
This dish looks mighty good like all your cooking, Kent, but I always thought gumbo had to have okra in it. Okra, also known as "gumbo", from where this stew gets its name. I'm from Georgia and we eat quite a bit of okra here!
I started recording Justin Wilson's cooking show on VCR in 1983. Now I have no way to play my tapes. You have the same great attitude, and style. God bless you, and your family.
I remember watching Justin Wilson on pbs when I was a boy on the "homestead" . That's an old term for something that doesn't really exist today if you didn't get that land under the homestead act. But that's not what I came to say. I lived watching him and listening to him on the 1 of about 2 channels we got out there in up state Ny off a wire hanger with strategically placed aluminum foil to improve reception. Yeah, it aint all New York city in New York folks, there's a lot of milk, produce and beef coming out of there. Atleast there used to be in the 70's. Cowboy Kent, would you do his chicken fricassee?
I am so old I remember Justin well...even on 8 track tape! They were NSFA (not safe for anybody). *Also, you don't like okra? Okra puts the gum in gumbo.
I didn’t grow up watching Justin, a little before my time. But I enjoy going back and watching his stuff now. I must say though, we are lucky to have Cowboy Kent now. Different accent, same kinda honest charm and good cookin.
You left out two key ingredients, okra and filé. They are thought to be the ingredients that give gumbo its name. Okra is called ki ngombo and other variants in West Africa. Filé, powder made from dried sassafras leaves, is called kombo in Choctaw. However, you are in good company. Many people think that roux is the key ingredient, but to me it is just stew without the okra. As mentioned by others, in Louisiana (and here in Texas), Gumbo is served over rice in a bowl with a higher ratio of Gumbo to rice. Don't take me wrong. I loved your video, and that is a great recipe.
@@rachelharris725 I like okra, but I know a lot of people don't. That is why you often see recipes like this without okra. I just think it should be called a mixed meat stew if it doesn't include the vegetable that gave it its name. Yes. I know I am tilting and windmills. No one is going to change the name.
@@gunlovingliberal1706 I like fried okra, just dont care for the slimness it gives in stews. That's probably because I was raised by my grandparents on a farm and my grandmother put okra in a lot of things. I've never met a vegetable I didn't like, just depends on the application. I've had gumbo in lots of Louisiana restaurants, some older than dirt, and very few put okra in it.
Big pass on the okra. I live in Thibodaux, just about the most southern city you can find in Louisiana, right on the gulf, and I don't know many people that put okra in their gumbo.
Another brand new set of ingredients for me chilli wine who thought of that.I can't gets lot of these ingredients looks like I'm going to have to come over and sample some of that fine southern dining!

Oh, & btw, you might want you tell viewers that Gumbos, Jambalayas, & Sauce Picantes go best with fragrant rices, such as Jasmine, Basmati, & TEXmati! 😁
Onion, Bell pepper, and Celery. The holy vegetable trinity .
i grew up watching Justin Wilson with my mother, one of my fondest memories
Great show, great person
I looked at my clock wrong this morning and thought i was 20 minutes late. I got up got dressed and made really good time gettin to work. I was an hour early. Now im here learning to make gumbo an im not upset, I'm just happy its friday.
Thanks for watching and have a blessed day
Well, better to be early than late.
I live in Louisiana and can affirm Kent is doing it right! Once you learn to make a legit roux there are many wonderful things you can fix. For example, dark roux beef gravy, wonderful. Kent, thank you for the effort you put into your channel. God Bless!
Remember how Justin would measure out 1 tsp of salt in his hand and then he'd proofs it to the audience? He was a very good entertainer also.
That's how I learned to measure
That gumbo knocks my socks off!!! So Good!!! Thanks Guys...Peace!!!
Bill
Thanks Bill for watching
I was a little under the weather today and I was talking to another guy that I could use a good bowl of gumbo. Thanks a video have an awesome day
The Farming Life , I had three with bad colds and one pneumonia. I gabbed a half gallon from the freezer and made rice. All three ate better and felt better the next day.
Mr Kent you just cook 👨🍳 something from one of the chef 👨🍳 that I love to see his videos Justin god bless you and your family
God bless you as well
I made this a couple days ago and it was a HUGE hit! Only things different I did was I used some Tony’s for the Cajun seasoning and added some File powder at the end. Best gumbo I’ve ever made 👍🏻👏🏻
Have to use file
I never watched Justin Wilson as I was growing up, I wasn't into cooking. I still, somehow, infused a huge appreciation for him - enough to make me grin ear to ear every time I hear him speak and see the clips you showed. Now, you and Shannon are at the helm and I eagerly seek out each and every one of your vids!
God Bless and thank you to all three of you - and your canine buddies too. That gumbo looks absolutely divine.
Thanks for watching Randy and God bless you
That gumbo needs a “Soda pop with foam on top” with it! Loved watching Justin Wilson and his funny stories while he cooked amazing meals!!
Love you all such a breath of fresh air!!
Thanks for watching
This dish looks mighty good like all your cooking, Kent, but I always thought gumbo had to have okra in it. Okra, also known as "gumbo", from where this stew gets its name. I'm from Georgia and we eat quite a bit of okra here!
I used to love watching Justin, he was the first person that made cooking look like fun to me.😊
Pass the biscuits and praise Jesus I’m gonna make me some of dat bungo like Justin Wilson used to say! Ooohh dat good!
Hush puppies is how we roll. :-)
Hope you enjoy
I can barely remember watching old Justin Wilson back in the day as a kid I always loved the way he talked and made food look so yummy
Thank you Kent & Shannon! We went to a new Cajun restaurant & I ordered some of everything! First time I had boudan balls and Omg! Life changing! :)
Sounds great! and thanks for watching
Cowboy Kent, you are the real deal. Love your genuine cowboy recipes. God Bless.
Thanks so much and God bless you
The only Worcestershire sauce that the Great Man ever used was Lea and Perrins . No other in my kitchen . Can't be beat !
Facts
He also added Peychoux Bitters to a lot of dishes and drinks.
Dan Kauffman - ain't none better 👍
I started recording Justin Wilson's cooking show on VCR in 1983. Now I have no way to play my tapes.
You have the same great attitude, and style. God bless you, and your family.
I miss Justin I do, Thanks for watching and God bless you
I remember watching Justin Wilson on pbs when I was a boy on the "homestead" .
Justin Wilson's Gumbo and Jambalaya are my favorites. Thanks for this recipe brings back great memories.
I am so old I remember Justin well...even on 8 track tape!
They were NSFA (not safe for anybody).
*Also, you don't like okra? Okra puts the gum in gumbo.
June is the season for Okra
Haven't heard Justin in years, miss him
I’ve been intimated to make some gumbo. This made it look so easy. Definitely going to try this out. Thank you!
My mother-in-low said its was gumbo of it had okra and creole of it didn't. And with some fil'e. Mmmmmm
I cant do gumbo without file! Magical stuff! As for the okra, I don't care for it in gumbo, but to each their own.
I Garuntee I loved watching Justin Wilson on PBS stations.
I miss him I do
Another brand new set of ingredients for me chilli wine who thought of that.I can't gets lot of these ingredients looks like I'm going to have to come over and sample some of that fine southern dining!
Cajun food is imo the best on earth!!
Bacon grease for the roux? Now that's Louisiana cooking!
I liked the cheer of the crowd.
I also like using beef tallow and real home made beef stock, not that store bought stuff.
Something so soothing listening to this guy talking about cooking 🍳
Wilson was a god!
