What he said towards the end about gumbo is true for all soups and stews. You cook it today, but don't serve it today. Red River is pretty far North of the prairie lands where most Cajuns are from, and the Eastern areas where the Creoles are mostly from. But, just like all cultures, the French cultures weren't static, they blended East into Mississippi, West into the Houston area, and even North towards Arkansas and the Red River area where your family is from. My grandfather used to call non-French people "Americans" and my father and his classmates were beaten in school for speaking French. It's really interesting, and a bit sad, to see how much French people from my father's, and your grandmother's generation have changed. I grew up watching Justin Wilson on public television in Chicago, was and am a huge fan!
He was sooo young here!!!!
He was a major part of my childhood, along with Mr Rogers, Mr Wizard, & Bob Ross!!
I really enjoyed his persona and shows, he automatically drew you in with his mannerisms, dialect and humor. A true culinary artisan to boot. I've made many of his recipes and have to say that he helped inspire me to cook and experiment.
So damn precious. My first exposure to south Louisiana culture!! I was born and raised in East Texas, but married my best friend in New Orleans in 2015 on Halloween. We lived in La for six years before moving back to Texas in 2016.
I'm old enough to remember watching Justin on tv. Thanks for the memories

I would always watch his show for his jokes and stories. He was awesome!
This guy and Yan Can Cook were some of my favorite PBS shows when I was a young teen and learned I had a passion for cooking. My family were subjected to more than one expensive and only partially successful meals thanks to those two men. 😂
"'I garontee', 'if Yan Can Cook, so can you!'"
I watched both of these as well as Ms. Lucy’s Classic Cajun Cooking
I was talking about this guy a while ago, but I couldn't remember his name. Then low and behold this popped up in my feed. I remember watching his show when I had a sick day from school.
His niceness just oozes through the screen 💕
I'd be lying if I said I understood every word though! Saying that with nuthin but love...I guarantee it!
I didnt even know the word "Cajun" or what it was until Justin Wilsons cooking show came on. One of the greats. RIP my old friend.
Cajuns are ancestors of Acadian French kicked out of eastern Canada many many years ago.
Cajuns are the DESCENDANTS of the Acadians who were exiled from Acadie, now known as Nova Scotia, Canada by the English. A very sad tale indeed.
He wasn't cajun
I was a child also watching Mr. Wilson with my grandmother. He was one of my favorite Louisiana cooks on pbs. I loved his accent and hearing him speak😄
Oh man, thanks so much for posting this.... I am missinng my dad big time, and him watching Mr. Wilson cookin' up some gumbo is one of my favorite memories. This sure brought some great memories back. Thank you!

I have so many fond memories of watching this guy on PBS with my mom. Makes me happy to see him again. My mom still pronounces "onion" the way Justin Wilson does - "awn-yon."
