I see what this theory is going for, but I feel like that final bit about her self-image & guilt kind of makes it seem like her final transformation as an ogre was out of more insecurity if that makes sense? Like if she only stayed an ogre because she saw herself as a this big, scary, ugly, cannibalistic monster it would kind of throw off the message of the film a bit imo
In perspective of being an ogre is like this, everyone points out your looks, even your own kind. You never can escape the smell you have around you, and your appetite is endless and you can eat anything even poisonous foods. You enjoy solitude, Ogres in general are crude, and blunt in their mannerisms. Shrek is one of a kind himself he's more considerate and smaller than other ogres. Fiona not a natural born ogress she just develops tastes due to her ogress side. Not that natural ogres can make good couples, but what they define as love is more brutish and cynical than our ideal relationships.

What if Fiona being born a human was a lie. Her parents knew they couldn’t let their kingdom know because it would raise questions about the legitimacy of their claim to the throne. The “curse” was a spell to make her to look human, to cover up her being an ogre. But her ogre tendencies proved to difficult to hide. So her parents locked her away in the tower, to protect their claim to the throne and their other heirs. That is why she turns into an ogre when the spell is broken
While that is a good theory, Fiona would take the form of true love's kiss. So if a human rescued her and a kiss happened, she would've stayed human forever. But since it was Shrek, she became a permanent ogre.

If say Prince Charming rescued her and they both fell in love, and she was an ogre when they kissed, she would turn into an ogre forever.
