The root of the spinach gives good flavor. Give it a good clean and it should be good.
Traditionally the separate veggies are cooked separately then added all together.
And if you cut the spinach after you squeeze it, I find it easier. 🤷🏽‍♀️
    Looks good 😋

Hello Marion! I have been following you throughout the Pandemic and I must say that I enjoy the twist you add to your dishes! Not to mention the joy that it brings me to try new dishes through this difficult time. I tried the Japchae Noodle dish today and I must say that I'm in love with this dish!!! The veggies are such a well combination together, and the flavors were amazing! I found the Korean Sweet Potato Vermicelli on "Amazon" for $10.99 14.11 oz (400 g)/Ounce). It lasts me about 3-6 months! I agree with you that these Noodles are hard to find in a store so ordering it saved me a lot of time from trying to search for it! ~;O)

You can buy the noodles at tops supermarket in Silom complex. They come in a small packet in the Korean and Japanese section. Otherwise you can visit Korea town at sukhumvit soi 12 just a short walk from terminal 21 at Asoke. The owner is Korean :). There’s also a bigger store called Jiduban G Market where you catch the MRT to Thailand cultural centre. Hope that helps.

The reason japchae is considered difficult/time-consuming to make is because traditionally, each vegetable is seasoned and stir-fried separately before the dish is assembled and seasoned again as a whole, giving it the delicate, nuanced flavor. That said, the classic method is definitely not weeknight friendly, so I'm excited to try your streamlined method!

These are my second favorite noodle dish, just after Singapore noodles. Amazon in US has loads of options for sweet potato noodles, but they run about Usd $9 a lb. I bought some at the Asian market where I live today, 1 kg for $6. I love these noodles enough that I’d pay amazon price if my only way to get them.
Another option, ask the Japanese market you shop at to order some. Just take in a picture of what you want so they know what you want. As you know there are many different options of noodles and descriptions vary.

The sweet potato starch noodles are very common if you have access to a Korean grocery store.
