I've never made these sweet potato noodles before, so thank you so much for your tip to soak first, since the instructions on the noodle package didn't mention that, and I think it made a big difference. They had the perfect texture and were, as you say, delightfully bouncy! I think this will be a terrific base recipe for experimentation in addition to being perfect as written. This will be on repeat with various meats, veg, and marinades.

Marion, your japchae noodle here is the most luxurious version I’ve ever seen. I love japchae. I live in Los Angeles, where the Korean diaspora is the largest Korean community in a major city in the world outside of Seoul. The japchae dishes I’ve eaten here do not have luxurious amounts of ingredients nor are fully seasoned as yours. We love to eat it actually w/ white steamed rice - so it’s starch on starch ! YAY !
