    I'd like to introduce you to one of the most famous soups in Vietnamese cuisine: Phô.     For six people, you'll need
    For the stock
    2 kg rib steak
    2 onions
    40 g ginger
    5 star anise
    6 cloves
    1 cinnamon stick
    1 teaspoon coriander seeds
    1 teaspoon fennel seeds
    1 carrot 8 tablespoons fish sauce
    1 tablespoon salt
    3 and a half litres of water
    For the side dish
    2 400 g packets of fresh rice paste
    400 g beef melt
    24 beef meatballs
    2 sprigs Thai chives or spring onion
    1 half bunch coriander
    1 onion
    200 g bean sprouts
    2 sprigs Thai basil
    1 lemon
    fresh chilli
    Sriracha sauce
    Hoisin sauce
    Prawn paste
