Hello everyone, today I invite you on an exquisite culinary journey to the south of China! Together we're going to explore my own version of the famous Chinese dish: Hainan chicken. Originally from the southern region of China, this recipe is a real nugget of flavour and tradition. Hold on to your hats as we discover the secrets behind this delicious preparation. Get ready to feast and learn more about the art of Chinese cooking.
For 4 people you'll need
1 free-range chicken
2 lemongrass sticks
40 g ginger
1 onion
6 garlic cloves
3 litres of water
4 tablespoons fish sauce
1 teaspoon salt
500 g fragrant Thai rice
4 shallots
600 ml chicken stock
For the first sauce
60 g ginger
1 chilli pepper
1 teaspoon sugar
1 tablespoon salted soybeans
2 tablespoons light soy sauce
1 teaspoon white vinegar
4 tablespoons chicken stock
1 clove garlic
For the second sauce
80 g ginger
1 clove garlic
1 sprig Thai chives
3 tablespoons rapeseed oil
salt
To accompany your dish and stock
A few sprigs of coriander
2 Thai spring onions
1 cucumber
