I've made this recipe many times. LOVE it!! However, some egg yolks taste stronger and have a different taste that comes through in the flavor of this curd. I have found that if I stir in a splash of lime juice, that really helps make the flavor better. I've also done this recipe entirely with lime juice instead of lemon juice and the key lime flavor really is nice. Very fun to have some variety occasionally
I have found that after 10 months sugar free and all sweeteners free that lemons are very sweet and I enjoy a little lemon on rare occasions. I cant imagine eating anything sweet ever again.

Judi, there are 8 TBSP, 4 ounces, or 1/2 cup. in a stick of butter. Love your recipes, and have made several of them. They are all winners!
