    Brilliant! I am now wondering about candied ginger. Also, for how long does one store it? Make one's own raisins?

      Store it in a covered container in your fridge for about 2 weeks. To make raisins, you can dry grapes in a dehydrator. I haven't tried making candied ginger, but I believe the process is similar to the candied peel.

      @@SandraStatz A lot of Keto TH-camrs recommend blending up whole ORGANIC citrus fruits, freezing in icecube trays, then adding one or two to a glass of water for the drastically higher nutrients/much lower carb than just the juice! Whole lemons & limes are best low carb, but orange & grapefruit RINDS would be a healthy low carb addition, just not their high carb juices.
      (I believe all the cooking in this recipe keeps the flavor, but burns off some vitamin C.)
      I plan on doing this, since we have Meyer & regular lemons, limes and also blood oranges growing on our property. I've been wanting for years to plant a grapefruit, too. Just haven't found one yet.

      I haven't tried it with monkfruit. I'm not sure how it would affect the texture or flavor.
