You taught me again! As I made a half batch of the bread, I made a half recipe of curd. The first time I ever tried to make curd but I just followed your instructions. I made maple curd instead by going a little short with the sweetener, replacing the lemon juice with keto maple syrup and the zest with maple extract (not optional). It is wonderful on the bread (as well as on pancakes)!

@@IndigoNili It was mentioned on a kid's baking championship and I just used your expertise (and the kid's). I came up with a full-meal today that uses up a lot of yolks going forward from the curds. After making another two loaves of the bread this weekend, I made half-batches of maple and lemon curd. Then for Sunday brunch/dinner, I made baked egg yolks in cauliflower hash brown nests, French-style (i.e. using yolks) French toast using the bread served with the maple curd and a side of breakfast sausage. There could even be more veg in the meal if the cauliflower was doctored with more than onion. A tad of planning and a bit of work but absolutely no leftover egg yolks remaining with plenty of bread as well as curd still for the week. Good for a Sunday - fun, fancy and very tasty!

Jen Edge--I use the carton egg whites all the time. The trick is to add 2 egg whites from shell eggs that you've separated yourself. Then use 3/4 cup egg whites from a carton, and the rest of the ingredients for egg white bread. They'll whip up very nicely, just like meringue. Fold in the egg yolks to the whipped whites. I know that's not PSMF, but it works. I got the idea from Carnivorish Crys You Tube Channel.

    • @gladysbigg77

@@dreamingrightnow1174 I use egg whites as soon as I've separated them. They don't have to be room temp. And yes, cream of tartar. But, I actually don't use carton or shell eggs for bread anymore. I'm following Nili's recipe using egg white protein powder and egg yolk powder. The bread is wonderful. Give it a try, if you haven't already.
I wasn't much of a fan of Maria's original PSMF bread, it was too much like Styrofoam to me. This is far superior. Let us know how it turned out.

I wouldn't freeze it but it does last in the fridge for about a month

Can you use a liquid sweetener or does it need to be granular or powdered?

Looks great, Nili. How long do you think it can last in the fridge? I am a one person household. Thank you.
