I’m so pleased the recipe calls for whole eggs. I know you can freeze the leftovers of separated eggs or use them in another recipe, but it’s so much easier not to have to make such a commitment 😂 I’ll definitely make this one, thank you! Can’t wait to try it.
Hi Carolyn, I just made this recipe for the second time. I decided to experiment to see if I could make it easier. Success! I put all ingredients but the butter in my Vitamix blender, since it can cook soup I figured it was worth a try, and turned it on high for about 5 minutes. I did watch it since I wasn’t sure how long this would take to cook. I added the butter and mixed it for another 10 seconds or so. It’s absolutely perfect! The creamiest lemon curd I’ve ever had! Thank you for this great recipe 😊

Thank you for this recipe I love all things lemon. I peel and eat lemons like an orange. I like sprinkling on a little bit of pink salt to make them sweet.
If you want to thicken it better, use 1/4 teaspoon of xanthan gum and 1 teaspoon of unflavored gelatin. Then you don't need the butter. For those of us who are lactose intolerant, you sure as heck don't want to add butter. Once you have the lemon curd, you can take a can of coconut milk that has been refrigerated overnight. With a spoon remove the coconut cream. Using an inversion blender or hand mixer, you can mix the coconut cream with the curd to make lemon mousse. If you don't have a problem with dairy, you can use heavy whipping cream instead of coconut cream.
Wow this thickened beautifully and in under 10min. I'm comparing to Shiriffs lemon pie filling our tried and true but since husband newly dx with Type2, this will be my go to recipe. I used straight up krisda monk fruit sweetener. I guess I'll find out about the recrystallization tomorrow.

Love lemon curd and I actually really like/love the bit of 'crunch' to the curd from the crystalization of certain sugar free sweetners. Unfortunately I'm one of those that will not be getting the new Swerve (so sad, I've used it for years) because allulose causes gastrointestinal distress to me and others in my family ... not fun.

I know a lot of people are concerned about the new formula and how it will affect baking and/or digestion. I still do need to test it more recipes but given that it has allulose, it will keep things from crisping properly. I tried it in my butter pecan cookies and they were delicious, but not as crisp as they normally would be. I do like allulose as a combo sweetener in many things, though!

I alys p zs. I do like zs. My personal taste. And I personnaly dnt fnf Cyrus zest adding he crus flavor , jus bitterness. But I guess that's just me. But for me I don't add zest to anything. Just my toghts on it. For a matter, I'm not a lemon fan like most people seem to be. So lemn curd is really no on my list of fds teat, or make. Or since I can't coo RT gt now have made for me. Different people have different tastes! And mine seems very different. 😮

I can’t seem to get allulose in the uk, would you recommend another sugar as a substitute? Love your baking book, bought it before Xmas and made the shortbread straight away. Being Scottish it doesn’t quite taste like ours over here but it was good enough to satisfy my cravings! Thank you!

Then if you want to get fancy, you can make a mousse by refrigerating one can of coconut milk overnight. Remove the coconut cream with a spoon and whip it with a hand mixer or inversion blender. You don't need the coconut water, so either discard it or use it in a smoothie. Add in the lemon curd and continue to mix. It becomes lemon mousse. I cannot get a lot of alternative sweeteners. Believe it or not, I just used sucralose (Splenda). I too am lactose intolerant and have to get really creative to avoid dairy.
I have not had occasion to compare sweeteners but I’m inclined to think that powdered sweetener would work better. It It would add some bulk to the curd whereas liquid sweetener would not.
I would live to make this as I'm sure it's delicious. However, I'm honest about myself... I have no patience. Dang girl! I want to know your weight lifting regiment!
Your printed recipe indicates different amounts of each ingredient than you use in the video. Are you just making a scaled down version for the video? So both recipes would be correct except that the final yield is different?

Why use whole eggs? Using only the yolks produces a much thicker curd and you won't have any risk of an "eggy" flavor.
So I literally JUST made this, and it thickened BEAUTIFULLY and it is NOT at all eggy.
