      Wes, are you finding it difficult to control weight eating Keto? I am thinking about either carnivore or keto. The carnivore people seem to be losing more weight effortlessly but the keto people still count calories. What is your experience?

    I'm crazy about chayote as an apple substitute. You do have to cook the sliced chayote for 30-40 minutes before putting it in a crust in order to make it as tender as an apple gets just by baking it into a pie. I cook it with lemon juice, sweetener, cinnamon, a little water, and a DROP of lorann's apple flavoring. Once the chayote is tender, I remove it and boil down the liquid until it's thick. That way you don't need any thickener when you put the chayote and juice into the pie crust.

    I love love love this guy's personality and his pace like he doesn't go too fast and he doesn't mumble and he has a wonderful disposition that's contagious. Right now this episode is on apple pie and I could care less about apple pie but I was a little down and out and I thought I'll just listen to him and just watch him and I'll get into the better mood!

    I make chayote squash with swerve, cinnamon, nutmeg and vanilla extract with butter. I put it in low carb wrap (1/2) . I pinch ends and fry in avocado oil. Then put icing on top. Sooo good

    I learned a tip for cutting and getting that first piece out looking better. You cut 3 pieces and remove the one in the center first. I've tried it and it works!

    After watching this, I made the yellow summer squash pie filling, but instead of making crust I made a crumble to put on top (almond flour, butter, sweetener, vanilla extract, and pecans). Oh my.....my family had NO idea they weren’t eating apple crisp topped with whipped cream! The lemon juice in the filling really does give the squash a bit of tartness like Granny Smith apples. I’m so excited about this recipe. Thanks for sharing it!

    I like the chayote squash, sliced smaller boil to fork tender, drain, add brown swerve, apple pie spice, butter, vanila. And then top with a mixture of walnuts, a baking blend, burn swerve and butter , put in oven and viola! Apple pie crisp- so good, even have some in the refrig right now 😁👍

      Cheryl Kelly 350- after the squash is done (you can add a little cinnamon while it’s boiling, drain and add the butter, apple pie spice, brown swerve and cook until it’s thicker - you will be able to tell..then top with almonds and brown serve and more butter and cook till browned..I use a little bit of a baking mix but it’s not necessary (THM baking mix Big batch: good to use in other things as well: 1 1/2 cup oat fiber, 1 1/2 cup coconut flour, 3/4 cup almond flour, 3/4 cup whey protein powder, 1/2 cup flax meal, 2 T glucomannan)..enjoy: Basically you can use any apple crisp recipe but just make substitutions for the squash,sweetener, and flours...(it’s actually pretty simple) - enjoy

    I've been making this pie for years. We have always used green zucchini though and it tastes EXACTLY like apple pie and has a little less carbs than the yellow squash. (Peeled and scoop out the seeds.)

    Chayote squash is called Choko in Australia. They have been used for decades to plump out apple pies.

    When I was a kid it was common in my suburban neighborhood for everyone to have a backyard vegetable garden. My neighbor always had a bumper crop of zucchini and everyone in the neighborhood benefited... We were always searching for recipes to use zucchini... Waste not, want not... It was very common to use zucchini for a mock apple pie... If you weren't told, you couldn't tell the difference... I haven't made it in years, but I may start...

    Hey, Wes. Love your channel and appreciate that you refer people to the originators of the recipes. One idea: for an easier to assemble pie, I think either recipe that you showed could be used to make a "rustic" apple pie like my late mother in law made, and we enjoyed it for years on Sunday after church family meals. You make a bottom crust extra big and just fold it up around the sides. Don't have to fiddle with a top crust and deal with crimping. Still tastes the same. And although it's not as pretty, it still looks cool "as we navigate these uncertain times." 😊 Also, I live in central Indiana, too and if i ever see you out somewhere, I promise to holler "Y'all! We're making fried chicken! C'mon!"😁

    Hey Wes, My mom was a pastry chef. Her secret to that first piece of pie coming out wonderfully was to make two cuts. As if you were cutting two pieces out of the pie. Sounds simple... but it works. Good for cheese cake as well.

    You know what Paula Dean does to get that first piece out perfectly? She uses a foil pie plate and cuts through the plate with scissors to get out that first one perfectly.

    I've had my grandmother's depression era mock apple pie, made with zucchini, so can imagine how good these would be. (Hers used bigger zucchini seeded and sliced so it really looked like a regular apple pie.)

    I love the Olive Nation extracts! I got the maple one, that I used to make candied bacon with. Chopped up bacon, pan fried until chewy and then drained, add Allulose, a touch of molasses for dark brown color/brown sugary "flavour", maple extract... Fry until crystallized slightly... Mmm!

      I think if he cuts back on the xanthan gum it would taste better. I even think golden flaxseed would work just as good because it can be used as a thickener besides as an egg substitute.

      Wondorawoman xanthan gum tastes fishy in those amounts. I would sub the chayote for the squash and keep the seasoning from the first pie, and use the gelatin. I have a fave crust re pie so now I want to make “apple” pie!

    I haven’t made it as an apple pie as yet (I don’t think I could have self control if it was made as a pie. I may eat the whole thing). However I did make the filling using chayote squash and loved it. I even put a serving over my “keto” ice cream. Oh yum!!! I cut it in chunks😋

    I am intermittent fasting so that may be clouding my judgement here (haha). How in the world you managed to, not only wait so long for those to cool, but not to dive straight from the pan with a fork is beyond me. Those look so delicious and I can't wait to try them!     Just my $.02… I think the chayote is much closer to are taste and texture... I'd probably just use the sauce from the first recipe and everything else from the second.
    Would also be cool to just normalize nutrition for a 1/8 pie slice, nobody is going to cut it any smaller.

      A 16th of a pie will be less carbs. So, my guess is they aren’t that much different in carbs count.

    I love watching these videos. I haven’t been low carb or keto for quite some time but I’m originally from NW FL and hearing Wes just cook and talk while he’s in the kitchen reminds me of home. I live in Finland now, but the moment I turn on HFLC video it’s like I’m back in that kitchen at my granny or momma’s house just listening to everyone talk and carry on. Sometimes it feels like if I listen really carefully I can almost her my papa asking “when’s supper gonna be ready? I’m ‘bout to starve!” and my cousins running around slamming the screen door behind them while my granny scolds them -“in or out of the house! Choose one! We’re not gonna keep that door open and air condition the whole neighborhood!” Thank you for this little slice of home ❤️

      Sounds amazing! Paired with a salted caramel sauce it would be even more amazing! Maybe that should be the next bake off: a salted caramel sauce. One using Allulose and one using another sweetener.

    Thank you Wes. Thank you for doing these battles and helping us decide which is the better of the two or three when you do them because the world is so full of mock recipes in the keto Community it's hard to tell what's good and what isn't. The worst thing in the world is spending all that money to try a recipe for something and having it come out as a fail. And there have been a lot of them in my day.

    I use the apple extract too but I make mine with Jicama. the carb count is low but it has a natural sweetness and holds up to all the cooking.

      I just tasted Jicama today and asked why no one did this. It would exchange for pear or apple so easily with very little sweetener. :D

    The title Mock Apple Pie reminded me of a pie my mom used to make when she was out of apples. She used soda crackers covered in a cinnamony sugar syrup. It looked and tasted just like apples - there's no way you could tell the difference. Holy carb bomb. No wonder we all grew up chubby. I love that you blow on every bite whether it's hot or cold.     I did the first recipe. I double the filling and the dough for a thicker crust and lined the pan with parchment. At start, I added a tsp of apple extract to the wet mix. I also buttered, sugared, and egg washed the top crust. Once cool, lifted my pie out of the pan onto a cutting board to cut. OmGosh! So divine!!! Also, tried a strudel with cream cheese with this crust and filling. Heavenly!!!

    I made this using the crust from the chayote and the summer squash filling. I don't like apple pie so I made it for my husband. He absolutely loved it. He said if he hadn't seen the video he would not have known it was not apple!! Wes, have you tried strawberry rhubarb pie/crisp/crumble?

    I tried making mock apple pie with the chayote squash quite a while ago, and I'm sure the recipes have been greatly better developed since then, but I remember having to cook the heck out of the squash to get it tender.     I've made mock apple pie for years using zucchini. Never made it low carb but I sure its about the same as the yellow squash. Thank you! Gonna try this out on the family on the 4th of July.

    In Australia we call those fruits choko have known them myself for a lifetime of 70 years.They take on the flavour of any fruits .And were always known as a filler when short on fruits.Many preserves were made in a pie with half of it being choko,and no one knew the difference.They were also used in many different meals.

    In Brazil the chayote squash is called chuchu and it is eating in daily bases. You can do salads, soups and stew. I like very much. To avoid the peeling hands you can peel after soak them in water. Good video!

    We have a grocery store in Texas, HEB. Chayote squash is readily available. In fact, I prepared it as I used to do my cooked apples, minus the crust. I can't wait to prepare this recipe, but 8 grams of net carbs per slice is way too many for me. Won't be using yellow squash.

    I like this recipe I’ve tried it before but a different recipe and it’s been a long time ago all I did was to add apple pie spices, cornstarch a bit of lemon and a sugar.I didn’t add the gelatin but I should’ve huh! Love your channel I always watch it and I think you’re wonderful have a nice Fourth of July

    In Australia chayote is called choko and as well as being used as apple substitute or complement to apples they are used to bulk out other vegs and fruits. They readily absorb other flavours, so cooking them with pumpkin they taste like pumpkin, with rhubarb like rhubarb and so on. Great for boiled foods and mash.

    The taste is hidden under the Cinnamon, Sugar and Vanilla.
    When, you don't have apple pie taste like apple pie. It baffles me!

    I loved watching you make these. I think I'm going to try the Chayote squash pie & crust sweetened and sub gelatin for the xanthan gum and use the spices from the summer squash. The mix of the two reminds me of my traditional apple pies.

    Back in the 1960s, my grandmother made a similar pie (not keto, with a flour crust), but using green tomatoes. It was not a pleasant experience for those of us who were the taste testers. However, she also made a "green tomato cake". The cake was a take on apple sauce cake and it was actually pretty good. She was very experimental with her cooking.

    Some feedback from tonight’s mashup of these recipes, so far: couldn’t find my pie pans so had to resort to employing a Pyrex veggie pot as a “deep dish” pie plate... we shall see... But, the biggest hurdle was that I’ve never worked with the gelatin before, and mine didn’t so much as bloom as... gummie... and I followed the recipes, but I used packets of Knox gelatin, so I don’t know if that is the issue or what happened? It was ok for the filling as it melted out, but my daggone crust had semi-smallish chunks of unflavored jelly beans dotted throughout 🤣

    OMG! I just realized I was making keto recipes back in the 70's in my hippie days. Did it more because we were broke than wanting to be healthy! I used to make mock apple pe with eggplant and mock mac and cheese using eggplant. Both were so good. But this is the same hippie that made her babies popsicles using vegetable juices. Homemade and homegrown no less. LOL

    i just made the yellow summer squash recipe for filling. I did not make the crust. The filling is delicious, excellent, fab. I added shredded cheddar cheese to the filling and enjoyed it as is. FAB. no baking and dough making required to enjoy. I did find out that if one overheats the filling mixture, the butter will break and spread free oil. so be carefull.

    Did you prefer both the crust and the filling of the yellow squash pie, or, the yellow squash filling and the chayote crust? Somehow, I cant figure out what you said.....

      Eileen Fostel Good question. I liked the first crust that was pre-baked. It held up better the next day. I also think the chayote would be amazing without all the slimy xantham gum. If you asked me right now. I’d do the first pie all the way, pre-bake the crust, use the yellow squash, and add in the final egg wash and “sugar” sprinkle. That first pie with the yellow squash was AMAZING and completely blew my mind.

    I remember experimenting with chayote "apple" pie, and I used that expensive apple flavoring. My son, who isn't a low carber, tried it. After a two second pause, he said, "Oh no. It tastes like apple flavored potatoes." I will definitely try the summer squash one next time.

      It's regular yellow summer squash - NOT zucchini. Just look for "yellow squash" or "crookneck squash" in the grocery store. It'll be right beside the zucchini.

    The Chayote squash version works out to about 5 net carbs per slice when it is also divided into 12 servings, and the yellow squash version works out to 6 net cabs per slice with 16 slices.

    Very very interesting. Was there a big difference in texture between the two? Did one stand out as closer to apple feeling texture wise? Tastewise they both sound great. Might have to cut down the Xantham gum though in that other one haha.

    Chayote squash can be made both sweet and savory. I can usually find them at Walmart and at Winn-Dixie. I've used them for "Apple" Pie, but i have a friend that fries them with ground beef and makes a Cuban style dish. When I make my "Apple" Pie I use One On One Apple Pie Flavoring and 1 1/2 tsp Konjac Flour Glucomanna to thicken it. I also use half swerve and half brown swerve.

    Wes, love your battles, hint: when rolling out pie crust on parchment,lift off one side,then put top piece and flip over,and lift other side, now usually it makes it much easier in pie making,even with regular flour crust or even with homemade tortillas
