I cook my chayote squash in my electric pressure cooker. It only takes a couple minutes and it turns out perfect no too firm pieces. Love your recipes.
Hi Alicia! This pie is really delicious especially with your Caramel sauce! One thing I did that really made it taste more of apple is that I brewed some “TWINNINGS APPLE SPICE TEA” and used it with the butter instead of plain water! By the way, I’m 69 yrs young and have been cooking forever! I don’t share my secrets with just anyone! My husband thanks you for this Keto Apple Pie cause he’s a Diabetic! We’ve been doing Keto for 3 1/2 yrs now & this is something he treasures since Apples for him are a no no all the way around! Thanks for all your hard work to make our lives a lot sweeter👏❤️😋😋😋

Just found your channel and I made this last night. I put 4 coyote squash in a bowl of water placed two apple cinnamon tea bags to flavor into the squash after pealing them and leaving whole. Next time I will slice up and try it on the stove. Microwave took 17 min total 4 min at a time and after adding cinnamon to it it really tasted like apples. You will have to try it! I will try your recipe it looks perfect! Thank you
I’m on a keto upgrade recipe kick… trying each recipe one by one. I have never found a recipe creator with literally hit after hit. I can’t wait until you have a cookbook. Your breads are amazing. Now I’m moving onto desserts. So I made this crust and crumble, I have 50 lbs of blueberries in my freezer so I used those as the filling mixed with some monk fruit and xanthum instead of squash, I find that berries in moderation don’t kick me out of ketosis at all, after being consistently on keto for a while. So this crust and crumble is literally the best I’ve ever tried on keto. I’ve been baking keto for so long, and was an avid baker before that so I have very high expectations of baked goods. I’m more than capable of enjoying keto foods that don’t taste like the original. But this recipe is spot on! The crust cooked golden, it was flakey and exactly like the texture and feel of a pie crust. The crumble actually got crunchy and again, texture and mouthfeel was spot on. I have never enjoyed a keto dessert that actually satisfied all aspects of what a dessert should do before trying this. My ridiculously picky husband didn’t like the taste of the whey protein in it, oddly enough, that taste went away after sitting in the fridge over night. I will try this recipe again with egg white protein powder for him, but that’s just because he’s picky. This crust opens up so many possibilities. This will be my go to pie recipe forever. I have so few keto forever recipes, but this makes it on that list with flying colors. I’ve been dying to have a quiche with a real crust. And a chicken pot pie. Not to mention all the sweet pie possibilities. I don’t know how you do it, but please don’t stop. I love every recipe I’ve tried, and I’m so excited to see what you come up with in the future!

Wow! I made a cobbler with the squash and used "olive nation apple flavoring" but the crust has eluded me and the slice came out really clean like a real pie.

Made my first chayote pie this past Thanksgiving. I used keto focus rolled crust, and while it rolled great and was flaky and buttery, it was very bland. Can't wait to try this one.

So funny you out this out today. I was going to use your puff pastry recipe to make a mini keto apple pie. My mom grew chayote, but she never ate the skin. The kind she grew had little stickers or something on them so the skin was always peeled and tossed. There's only two stores where I live that have them so I better grow some or just eat apple pie when I can find them. Thanks for the great recipes. They really help my sweet tooth.

Thank you. I made a mock apple crumble using the chayotes but I peeled them, chopped and boiled in apple spice tea. The one I made didn’t have the bottom crust, next time I make it I will be using your recipe for the crust I will have to get some of the ingredients your recipe calls for. I have found cooking keto recipes I never have all the ingredients, I have a cabinet full of stuff I bought and only used once!!
You're Welcome. Sounds good! I hear ya, that's why I try to keep all my ingredients similar. I use oat fiber, unflavored whey protein, coconut flour and xanthan gum in a bunch of different recipes.
I made this last night. I was really impressed with the texture of the “apples”. I think I cut mine slightly thinner, but they were perfect with just a slight bite. However, I decided to add apple tea as suggested by another recipe developer and it was a very bad decision. The crust also came out really soggy, not sure what went wrong there. My crumb topping also came out very wet and I was careful to follow the instructions as you commented about this exact thing, next time I will try 1/4 c of butter and adding more if needed. The crust was really easy to make, I like the idea of grating the butter. I can definitely see how it could be a really good “apple” pie, so will try again without the tea and some slight adaptions. Thank you so much for all the time you spend to create and share these recipes with us. Will report back after “apple” pie take 2.
@@KetoUpgrade Ugg! I’ve tried this recipe three times and something is off. There is a really weird taste. I use isopure whey protein, but I think that’s what’s causing the odd taste. On another note, I let the pie rest longer and that helped prevent the soggy crust and I refrained from adding extra ingredients the last two times, the apple mixture is to die for. This crust and crumble recipe is probably not for me, but I have loved all of your other recipes. Thanks AGAIN, and I hope you have a fantastic Christmas. Can’t wait for the recipes you have coming our way in the new year.

Luckily I have another pie crust on my channel for the pumpkin pie with cheese cake bottom, no whey protein. And the crumble is the one recipe that you can sub egg white powder for the whey, it gives an even crisper crumble. Thank you for enjoying the rest of the recipes! You are so welcome! HA! I just bought some chayote squash on sale recently and was trying to figure out what I was going to make with them since I've never bought them before. But I also bought zucchini for zucchini bread. I think I'll make the "apple" filling and freeze portions for mini pies or crumbles later (using jumbo muffin tin). I also have red and green apple flavorings to try. I thought that you were going to make stovetop caramel to add in but this is certainly an easier method. I always peeled my first. The last time I made mine, I was thinking about baking some of it first to get a “softer constancy “? I would like to know your opinion on that. I went to culinary school but focused on Asian cuisine
I thought about peeling them after I put the video out. Well I sautee it forever to get it softer so baking would do the same but may dry it out, which I don't know if that's a good thing or not. Don't know if you are talking in general terms or for this particular recipe.

Thanks! I works but I don't like it as much. Just add butter until you get a crumbly texture, you might not need as much for the bamboo fiber or you may need more. Hope you enjoy!
I just found this video.. not sure if anyone has said this and I haven’t worked with this squash, but I wonder if it could be like bananas for banana bread? The longer/more ripe they are the texture might be better? Just a thought! Love the recipes!

You're very welcome! So glad everyone enjoyed. I haven't made a 2 crust pie yet mostly because the carbs would be too high. I think it may take a little experimenting, you may have to add just a little less liquid and maybe some dots of butter on top before the second pie crust goes on to help thicken the filling.
If I wanted to just make the filling to put over ice cream, do I need a thickener or will it thicken by returning it to the pan to cook the liquid down? Thank you.
Hey Alicia just wanted to ask if you’ve ever tried jícama it has a slight Apple/pear taste and I plan on using it to make an “Apple “ pie. I’ve tried the chayote but I didn’t like it maybe because I cut it up into small cubes and didn’t cook long enough. Have you done a more recent Apple pie video?

What's the difference between this crust and your layered pumpkin cheesecake pie? Flavor? Texture? Which one is more flakier? Which one hold better without breaking when cutting? Thanks and sorry for all the questions 😁
They both cut and come out relatively easy. This crust is lower carb and flakier though. The other one is easier cause everything just goes in a food processor. I don't remember the taste of the other one but I'm guessing this one tastes more buttery because the other one has an egg and cream cheese in it also.
Hey, have you tried soaking zucchini in apple cinnamon tea to make the "apples?" I'm not a chef but I heard about it and figured I'd anybody would know, you would. Or at least you'd know how to test that.
I've heard of people doing it, I haven't tried it though. I would make a very concentrated tea to do it though, not sure how long it would take to flavor them though.

I've tried using the chayote squash before, but I really didn't like it much because it takes FOREVER to get it even a little bit soft. But I really like the way zucchini takes on the apple taste. Do you think I could swap the cooked chayote for raw zucchini? Or sautee it a bit? I'm just afraid it might turn to too mushy if I cook it first. Thanks so much❣️
Made this, exactly following the recipe. Unfortunately, the crust was soggy. Maybe it should be prebaked? Filling was good and no one suspected it wasn’t apple!

Hello , I did the crust several times, it s delicious and crispy, however were difficult th handle, which may due to my gelatin, I use pork one, the one I find in France, do you think it s that or maybe an other ingredient
@@KetoUpgrade just to roll, stuck to everything even with copious amount of coconut flour , I rolled it with 2 parchment papers… I used it to do some small tartelets ( for minced pies) they were very good!!! My husband is eating one and is raving about it!!! I wonder if it s the xanthan ? On that lot I didn’t t put any gelatin… Thanks
@@KetoUpgrade thx, that is what I did. Cooked at 375 10 min. Puff pastry crust came out better than just coconut flour crust. 10min with parchment paper and ceramic weights, then removed all, put a silicone crust shield around it and 6 more minutes. Great crust. Thx for all your hard work. SO much better than almond flour crusts I have tried.
That would probably be good. The only difference I have found is in recipes with minimal ingredients like a pie crust, if you look at the ingredients on keto chow they may have some gums in it and it could be a little too much. Just found that out in my sponge cake recipe, switching to chocolate protein instead of unflavored it got really thick and gelatinous. Just looked up the packet and the second ingredient is acacia gum and the 5th is xanthan gum. One packet is 45 g so maybe try the whole packet and cut out the gelatin from the recipe? That's my best advise without trying it myself.
Please note that whey protein isolate spikes blood sugar and isn't the best protein powder source to use, if one is struggling with inflammation or weight.
May be the case for some but can't be true for everyone because I've used it to bake for 2 1/2 year and reached my goal weight and have perfect blood work even in pregnancy. I haven't done research but if you have I'd like a link to look at.
Could you explain what job the oat fibre is actually doing for your pastry, please? Only, I'm on the protocol for medical reasons. Primarily it stops my brain wanting to vacate the premises, but also because I'm allergic to the whole cereal family, so I'm gutted every time I see someone mention oat/wheat products in a 'keto' recipe, which then means I simply can't use it. If I know what job it's doing, I'll know how to swap it out.
It adds flavor and a smoother texture. I have another crust recipe for my pumpkin cheesecake pie you can use instead. And for the crumble you can replace the oat with egg white powder or a little bit of coconut flour.

If you blanch the chayote before sautéing it ,it will be perfect.

Luckily I have another pie crust on my channel for the pumpkin pie with cheese cake bottom, no whey protein. HA! I just bought some chayote squash on sale recently and was trying to figure out what I was going to make with them since I've never bought them before. But I also bought zucchini for zucchini bread. I think I'll make the "apple" filling and freeze portions for mini pies or crumbles later (using jumbo muffin tin). I also have red and green apple flavorings to try. I thought that you were going to make stovetop caramel to add in but this is certainly an easier method. Thank you, Alycia, for testing the heck out of this and the additional tips!

I always peeled my first. The last time I made mine, I was thinking about baking some of it first to get a “softer constancy “? I would like to know your opinion on that. I went to culinary school but focused on Asian cuisine
I thought about peeling them after I put the video out. Well I sautee it forever to get it softer so baking would do the same but may dry it out, which I don't know if that's a good thing or not. Don't know if you are talking in general terms or for this particular recipe.
Someone suggested blanching before sautéing and had good results.
i saw someone boil the squash in apple spice tea bags to give them apple flavor. worked great with zucchini, too.

Thanks! I works but I don't like it as much. Just add butter until you get a crumbly texture, you might not need as much for the bamboo fiber or you may need more. Hope you enjoy!

I just found this video.. not sure if anyone has said this and I haven’t worked with this squash, but I wonder if it could be like bananas for banana bread? The longer/more ripe they are the texture might be better? Just a thought! Love the recipes!

You're very welcome! So glad everyone enjoyed. I haven't made a 2 crust pie yet mostly because the carbs would be too high. I think it may take a little experimenting, you may have to add just a little less liquid and maybe some dots of butter on top before the second pie crust goes on to help thicken the filling.
If I wanted to just make the filling to put over ice cream, do I need a thickener or will it thicken by returning it to the pan to cook the liquid down? Thank you.
I would just add all the rest of the ingredients after the initial sauté stage and cook until thick. You won't need a thickener.
Hey Alicia just wanted to ask if you’ve ever tried jícama it has a slight Apple/pear taste and I plan on using it to make an “Apple “ pie. I’ve tried the chayote but I didn’t like it maybe because I cut it up into small cubes and didn’t cook long enough. Have you done a more recent Apple pie video?

What's the difference between this crust and your layered pumpkin cheesecake pie? Flavor? Texture? Which one is more flakier? Which one hold better without breaking when cutting? Thanks and sorry for all the questions 😁
They both cut and come out relatively easy. This crust is lower carb and flakier though.
The other one is easier cause everything just goes in a food processor. I don't remember the taste of the other one but I'm guessing this one tastes more buttery because the other one has an egg and cream cheese in it also.

Hey, have you tried soaking zucchini in apple cinnamon tea to make the "apples?" I'm not a chef but I heard about it and figured I'd anybody would know, you would. Or at least you'd know how to test that.
I've heard of people doing it, I haven't tried it though. I would make a very concentrated tea to do it though, not sure how long it would take to flavor them though.

Do you like using zucchini as an apple substitute? I've tried using the chayote squash before, but I really didn't like it much because it takes FOREVER to get it even a little bit soft. But I really like the way zucchini takes on the apple taste. Do you think I could swap the cooked chayote for raw zucchini? Or sautee it a bit? I'm just afraid it might turn to
too mushy if I cook it first.

Made this, exactly following the recipe. Unfortunately, the crust was soggy. Maybe it should be prebaked? Filling was good and no one suspected it wasn’t apple!
You can try. It's probably just difference in ovens. Glad it passed for the real thing!

You can add it, I looked at extracts but they all had mixed reviews so I didn't grab any.
Alycia - have you tried this recipe using jicama? I don’t know how the carb count compares, but it may cook up better. Not sure tho.
I just looked it up and chayote has 5 carbs per 100 grams and jicama has 9 per. BUT net carbs = 4.1 jicama, 3.3 chayote.
Never used jicama before, may dabble with it eventually though.

Hello , I did the crust several times, it s delicious and crispy, however were difficult th handle, which may due to my gelatin, I use pork one, the one I find in France, do you think it s that or maybe an other ingredient

@@KetoUpgrade just to roll, stuck to everything even with copious amount of coconut flour , I rolled it with 2 parchment papers… I used it to do some small tartelets ( for minced pies) they were very good!!! My husband is eating one and is raving about it!!! I wonder if it s the xanthan ? On that lot I didn’t t put any gelatin…

Yes but I would always keep track of insulin levels because different ingredients effect people differently.

To blind bake this crust, with pie weights, for a coconut cream, how long ya think and what temp as to not over brown? Hope I dont mess it up.
Not sure I haven't done that with this crust. But I would start with 10 minutes, then keep an eye on it.
@@KetoUpgrade thx, that is what I did. Cooked at 375 10 min. Puff pastry crust came out better than just coconut flour crust. 10min with parchment paper and ceramic weights, then removed all, put a silicone crust shield around it and 6 more minutes. Great crust. Thx for all your hard work. SO much better than almond flour crusts I have tried.

That would probably be good. The only difference I have found is in recipes with minimal ingredients like a pie crust, if you look at the ingredients on keto chow they may have some gums in it and it could be a little too much. Just found that out in my sponge cake recipe, switching to chocolate protein instead of unflavored it got really thick and gelatinous. Just looked up the packet and the second ingredient is acacia gum and the 5th is xanthan gum. One packet is 45 g so maybe try the whole packet and cut out the gelatin from the recipe? That's my best advise without trying it myself.

Please note that whey protein isolate spikes blood sugar and isn't the best protein powder source to use, if one is struggling with inflammation or weight.
May be the case for some but can't be true for everyone because I've used it to bake for 2 1/2 year and reached my goal weight and have perfect blood work even in pregnancy. I haven't done research but if you have I'd like a link to look at.
Could you explain what job the oat fibre is actually doing for your pastry, please? Only, I'm on the protocol for medical reasons. Primarily it stops my brain wanting to vacate the premises, but also because I'm allergic to the whole cereal family, so I'm gutted every time I see someone mention oat/wheat products in a 'keto' recipe, which then means I simply can't use it. If I know what job it's doing, I'll know how to swap it out.
It adds flavor and a smoother texture. I have another crust recipe for my pumpkin cheesecake pie you can use instead. And for the crumble you can replace the oat with egg white powder or a little bit of coconut flour.

I'm in the UK, and some of the ingredients prove difficult, or having had people vote for BREXIT, impossible to get, but it's great seeing what you all can do!
