Wow, great idea to use up extra Zucchini from the garden. I am not a big fan of Garlic so would probably just use a small of powder. It looks very appetizing on the plate and nice and Golden Brown. You are brave to crack your eggs directly into your mixing bowl. My mom always said to break each egg into a separate bowl incase any are bad. Thanks for sharing this recipe and will give it a try this summer.
Hi! 🙋♀️ I agree w your mom. For the first time EVER.. l had a bad egg. Btw..I'm 67 yrs old..eek..lol I had cracked 8 eggs in my pan and my 9th one was bad but it was already in my pan. Ruined my whole pan of eggs and l had meat in it too! Needless to say, there went dinner. I think we ended up eating cereal and english muffins. They were fresh eggs that were given to me and l just happened to get a bad. So, now, l will crack my eggs in a small dish and add to my dishes. It was so disappointing and a waste.
Again you make me hungry. I love garlic. I will have to try this later this summer when I have some things to make it with. I am wondering if I can use a different kind of squash because I don't think I planted zuccini. Also mighy have to slice up some whole garlics in it. I will just have to try things.
I made your recipe the other day and it was Delicious!!! I really thought it would end up being dry, but it was moist! I also added about a teaspoon of dried Rosemary that I had put aside from my house plant. Try it the next time you make this, you may really like this additional herb 😊 Anyways my husband & I really loved it, & I’ll be making this recipe often!
Speaking of often, Sam just brought in another Zucchini from the garden. We think this is the last one for the summer. So guess what I’m making again today? ❤️ Hopefully we will still be getting decent Produce in our grocery stores through out the rest of this year. Have an enjoyable day! 😊
If you have large Zucchini from the garden too big for this recipe, a good way to use them up is to slice them up in ticker slices and make Zucchini Pizzas with some Spaghetti sauce and Cheese and Bake them. It is good to fry and slightly brown the Zucchini before forming the Pizzas and baking them.
Being a vegetarian 🥗 I like all your ingredients this is like a casserole or quiche dish I like 👍🏼 simplicity it looks delicious! 😋👍🏼
