If anyone thinks lining up tyre logos is ott, i line up rotor brand logos, i have the shimano or sram logo in a position you're reading it when valves are at either 12oclock or 6oclock depending in wheel brand logo orientation.

Great job and very careful renovation of details! I wish I had a workshop that clean and organized. I suspect the saddle is too far back because of a screw not tight enough, that happens many times.
I have an older S3 which was a problem bike from the outset! BB issues, handlebar issues( they snapped after about 6 months!) and a host of smaller problems. Luckily I have a few bikes so, it wasn't my primary one. The amount of money I have spent on mine, I could probably bought a new bike! When it was running well, it was an absolute dream to ride but, all the issues I've had it has put me off buying another. But, great video as always.
By putting that rear derailleur just like that into the ultrasonic cleaner filled with degreaser you neatly removed all the crucial lubrication from both the upper and the lower knuckles. Both springs inside will rust and the pins will wear our.

We regularly adjust the saddle heights on the bikes to get them in the stand, so yes we do check it but usually it’s all solved before the camera is on🧡

How do your hands look so clean when handling all those grimy parts?! Do you hit the Swarfega between shots? Even with gloves, my hands and arns are a state after cleaning and servicing my bikes!! I do my own work. Partial internal routing (not at the headset) and disc brakes don't bother me, but I'd certainly not want a fully internally routed bike like this one, or a press fit BB. GIve me standard headsets and BSA threaded bottom brackets any day of the week.

If the chain is that worn, do you also have some tool that checks the chainrings and cassette for wear? My limited experience is that putting a new chain on worn gears ends up wearing the new chain quickly. Or is the assumption that it's cheaper overall to sacrifice the new chain to get the rest of the life out of the cassette and chainrings? Back when cassettes were $40 instead of $400, I guess the trade-off was different (?).
It’s case dependant but I eye ball it and usually say to the customer to try it and see if it skips, if it does bring it straight back and we’ll fit the cassette🧡
Wide is definitely the way forward. Aero is one consideration, but just measuring the tyre in an aerodrome environment is not 'real world'. I run 42c Conti tyres on shallow rims and the width is worth more than aero (to me) may give me on seldom very smooth tarmac.
Could you please explain how a chainguard rubbing against the smaller chainring can cause a bottom bracket to fail. Wouldn't the rubber just dissapear by the abrazion over time. But it is defenitly not a design error. The guard is not a structural part of the bike frame.
Good job, I don't get the point of such a clunky rubber chainstay protector on a road bike, it's appropriate for MTBs and maybe Gravel/Cyclocross where it's also better than clear film due to more padding, but on road bikes? They aren't so prone to chain slaps, I only had sometimes dropped it when shifting to the smaller front chainring.
My 2016 R5 with Rotor chainset had a tendency to drop the chain off the small ring (I did put a chain at her on) and then get sucked between the chain rings and damage the frame by the chainset as well as particularly the LOWER chain stay… nothing to do with chain slap. My 2018 R5 has a significant rubber chain stay protector although the chain set is Dura Ace. The inner chainring absolutely does not rub on it ….. It’s hard to believe that Cervelo designed it like this … no way Pro Teams are riding with chainrings rubbing on a chainstay protector! I imagine it’s more likely that the rubber somehow shifts in use
Integrated cockpit bike... and you did not service the headset while it was stripped of its components? I think you missed a golden opportunity there. Especially with these suspiciously rusted stem bolts.

still remember him from those dumb comments he made about a guy talking about the dangers of tubeless tyres, but what he did here on the shimano cranks, props to him, shimano should have issued a full recall years and years ago.
Now this is a shop that really pays attention to detail. Kudos.

Rim brakes are great until it rains or if you run carbon wheels. Most bikes should be on rim but for high performance bikes i prefer hydraulic disc.

That rusty bearing looks like a Canyon headset bearing after 6 months !

I wore nitrile gloves when handling the grimy stuff. At most, I end up with sweaty hands.

I don’t touch it, that’s the riders choice/ decision and I don’t like to alter them, but I will let them know it’s past the travel 🧡

We made do with a 3L tank for the first 3-4-5 years of our pro work so that will do!🧡

It's subjective to the customer out on the road, but what PSI do you initially pump road bike tyres up to in the shop?
Around 6 bar but it is subjective very much🧡

You stopped lubrificate the back of the brake pads?
These are ceramic pistons not metal so they won’t corrode and therefore don’t need anti corrosion greasing!🧡
