I once had Nadan chicken curry in a kerala restaurant. It had coconut milk added to it. Is it ok to add coconut milk to this recipe as well?! If so which stage would you recommend to add the coconut milk for this recipe. I love the idea of slow roasting onions, tomatoes and the spices 😋
Hello from Perth, Western Australia. I have used this recipe several times now. For my husband and I, I halve the chillis, for my other friends and relatives, I reduce again by half. It's still absolutely beautiful and flavoursome. I always make enough to have with chapati and rice the next day for lunch. Thank you Nisa.

Why in every all recipe chicken is cooked separate and later cooked again in gravy? I cook everything from start together. In the end I add little water if needed gravy. Am I cooking wrong?

Great recipe. It's delicious. Thank you. It took me about three tries before I got it right (I initially used too much oil and tomatoes, so that it was too watery in the roasting the masala phase, but then I understood that it needs to be drier at that point, so I adjusted).
Korma Malaysian style (lamb or chicken) cashews, grated coconut and poppy seeds, a little jeera and coriander seeds, all dry roasted and ground dry roasted Blacang (concentrated shrimp paste) in the pan at the beginning a half teaspoon of coconut sugar or palm sugar caramelised in the pan fried diced red onion and garlic in ghee + oil add the chicken pieces on the bone and fry slowly on low heat add thick Greek yoghurt (very little), not thin yoghurt. fresh green chillies fresh curry leaves ginger (added and fried towards the end of frying the onions) a small bit of tamarind paste (except for Allan Davis) quality chicken stock fish sauce or sea salt at the end (for max 2 mins of cooking): add coconut cream, instead of cream light cooked and then fried and salted potatoes (chunks) added at the end optional: whole okra added at the end so they're crunchy, not slimy. Garnished with fresh coriander leaves (essential). above all: NO turmeric, tomatoes, Kashmiri chillis or chilli powder. This is a white/gray curry. Do try it!

Boiled hot water is much better to add instead of cold water, as it will keep the continuity of the cooking process. It’s an excellent recipe.

Not very spicy; you can reduce Kashmiri chilli if you prefer. Use Kashmiri chilli as it has less heat and more colour. Hope this helps :)

Allan Davis you can use Curd in place of tomatoes or dry mango powder. The idea is to balance the flavors.
