Great recipes. I add soda in all my idli, dosa, uttappam and punugulu recipes. My idlis are soft and dosas are crispy because of it. Soda is not so bad as we think, it balances the ph content in our body. More acid in our blood leads to cancer which many people are not aware. Soda is a base and it balances it.
But doesn't soda tend to make paniyaram fall apart? I've never tried it in dosa batter, but I was following someone else's video and adding soda in my vadai for awhile, and they always used to desintegrate in hot oil. Then I saw other vadai videos that didn't include baking soda, and since I removed it, my vadai stay fluffy but firm. I'm afraid if I put it in this batter, I'd get tiny paniyaram soups or something... This is the agony of being a non-indian lover of Indian food - we never had the mothers and the aunts to grow up with while watching them make all this heavenly food, and I'm afraid there are no dosai as street food here in Switzerland... 😭 I visited lovely India only once, a few years ago, and I can still smell the spices and feel the sun!
@@gaiagreen2690 sorry for delaying the reply, i add the soda available in stores here like Wakefield or sometimes given loose. I dont know the quantity you put in your recipes. I put only a pinch of soda in dosa batter and 2-3 pinches in idli batter. You can soak the batter for 30 minutes for good results. Soda is good for health but has its bad effects too, it destroys some vitamins in our food though not all. If flattened rice is available there you can also add it by 1/4th cup for 1 cup of urad dal and 2 or 3 cups of rice. Are you native of india?
@@ggokul4146 Thanks for your answer! 🙏💖 No, I am Swiss and I live in Switzerland. I also used to put a pinch or two, exactly per the original Indian recipe I would be following at that time. After that didn't work for me, I simply started omitting baking soda or following original recipes that do not require it. (There are hundreds and hundreds of them on the net.) Now that I have far more experience and have been cooking Indian food for years, I can make some changes and adjust the recipe without compromising it's Indian nature and flavour, so baking soda is completelly off my ingredients list. Instead of using baking soda for fluffiness, I now follow the advice of a few Indian online chefs and simply whisk the batter longer to incorporate lots of air in it. It makes the end result fluffy without breaking apart.

Today the materials available in the market have wide ranges, for eg there are lots of varieties of rice like boiled, half boiled, raw etc and each vary in texture and taste. So we had to adjust the measurements according to the materials available here. I appreciate ur love for Indian recipes. I wish you learn them faster and able to prepare delicious recipes and enjoy them.🙏💖

wow nice Archana. I will buy a grinder from Mumbai during my next visit. Adding poha to the batter is a great idea, never thought of it before. Also if you do a tadka of rai, u-dal, chana dal, ginger, green chilli and cumin seeds before making paniyaram they taste even better. Great video Archana 👍👍

If not the similar brand, you can buy Ultra Pride brand. Costed me around $275, 14 years ago. I use it often and it’s still going strong. You can buy it in any Indian electrical stores here in the Bay Area, California.
Breakfast issue is resolved. Very nice. But i want know how you stored that for one week. How to keep it long lasting. It will be ver helpful if you make video on that too.
I grind the batter n keep for 10 days. Dont ferment full batter. Just grind n mix dal plus rice batter n store in a big airtight container. Just ferment as much as required for 2 days as and when u need. It will be as good as fresh.

@@akshataindore782 just follow this video for the grinding n mixing part, everything as usual. Just dont ferment the full batter. Take the batter as much as u need for the next day and ferment it. Remaining refrigerate in fridge (not freezer) as it is in airtight container. What i do: 4 cups rice, 1 cup urad, little methi. Grind urad methi first , then grind rice. When rice is almost done i add urad batter to grinder n run 2 rounds so that it mixes properly. DO NOT add salt. I take enough batter for 2 days and keep it for fermenting by adding salt. Remaining batter i place in a box without salt , refrigerate. Next time when i need to ferment i remove required batter into a vessel n leave it out for an hour or so. Then i add salt n mix well and keep for fermenting. While removing the batter from refrigerated box, pls mix first then take required quantity. Bcoz Sometimes urad floats to top n rice will settle under. Hope this helps. Pls ask if ur still not clear, will be happy to help😍

Futura dosa tawa makes very good dosas, but you need to take care or coating will come off. Cast iron needs a lot of maintenance. Don't but imported cast iron tawa, its not suitable for Indian standard gas burners.

Usually batter is mixed with hand to allow fermentation at our home :). Mixing with ladle hasn't helped in fermentation at our home. Don't know why

It does, but I gets a little but too sour, I think the reason why she added other flour on the later days is to reduce the sourness a little bit
