Chef Sanjyot ji, I want to share my experience in making rumali rotis with your recipe ( I hope it is allowed). The Rumali rotis turned out delicious- I used self raising flour as I had plenty and needed an excuse to use it. I use it for naans and it turns out well. I used our Indian roti belan but I was not able to roll it out thin ( I have more than 3 decades of roti rolling experience). So after 2 rotis I switched to American rolling pin which I use to roll out the dough for cookies, bread, pies etc. The American rolling pin is very heavy and big and has a built in rolling mechanism. With this I was able to roll the dough large and very thin in no time. The effort was minimal. The result was superb 👌🏼. I served it with vegetable jalfrezi and palak paneer ( your recipes). We all enjoyed the meal and I was very happy with it. Thank you very very much 🙏🏼🙏🏼🙏🏼
