    I’ve tried numerous times to tell an individual i knew avocado oil has a higher smoke point and his numb azz kept telling me coconut oil is higher… 🙄… i just left it alone bcse there are NUMEROUS articles that state otherwise. Some people really can’t be told. Thanks dr.!

      Coconut oil is saturated fat and are tropical oils which aren't the best for heart health and this is going off data for years of fats and heart health. Can't tell me it's been bought and paid for all the studies either. that's why they say saturated fats are bad for you get real.

      @@BigDees19 I don't know, newer studies said saturated fat is resistant to oxidize. While unsaturated fat is more fragile to oxidize.
      Polyunsaturated fat that common in vegetable oil is highly prone to oxidize, while monounsaturated fat that common in olive and avocado oil is less prone to oxidize. Linoleic acid in polyunsaturated fat is 40x more prone to oxidize than Oleic acid in monounsaturated fat. Note how olive oil and avocado oil have 10% of polyunsaturated fat, so it can be oxidized (worsen flavor) if you don't store it properly. (cool and dark place)
      Next refining oil usually treating oil by heat, so your oil is probably already oxidized in market. Heat is what oil oxidize faster after all
      So, in my finding, for butter, choose grass fed butter as the nutrition is like day/night difference compared wheat fed butter. For coconut/palm oil choose virgin/unrefined version. Store properly your olive/avocado oil and stay away from vegetable oil. And as always, cook at not high temp and not too long.
      Some relevant trivia. Lot of spain farmer live to 90+ year, eat butter and egg, and yet still strong to active. Saturated oil are falsely portrayed by past study. Vegetable oil is everywhere in American food product. American is higher in heart disease and obese compared to Europe.

    Engineer and Chef background... if you are burning your oil turn down your heat. You're probably burning your food too, oil and food doesn't need to be that hot. Also consider the extreme processing an avocado has to go through to become an oil. I don't think you want hexane in your system. Stick to what's worked for thousands of years, olive oil. Don't worry about smoke point unless it's flaxseed oil, worry about your terrible cooking and chemicals.

      You can't use extra virgin olive oil for normal frying. And the refined olive oil that can be used for frying is also refined. It's still very healthy, as long as people are extremely careful not to burn it. But we have to take into account that whatever your official cooking temperature is, there will always be a very thin layer of your oil that is in direct contact with the hottest parts of your pan or heating element that will be 30 to 50 degrees hotter than the rest of the oil, and if that temperature is above the smoke point of that oil, that thin layer of oil will burn and release unhealthy compounds into the rest of the oil. So the higher the smoke point, the easier it is to ensure that NONE of the oil gets burned. It doesn't take a huge amount of carcinogens to make our food dangerous. So this is why avocado oil is better for frying in most cases.

      ​​​​@@cassondralynch6342Well the heart association recommends refined oils because if more people have heart disease they make more money. Sad but very true I'm afraid. I would avoid anything that isn't olive oil, avocado and animal fats. Butter Included. You'd be surprised animal fats are way more healthier. Canola and vegetable oil has cotton seed in it which is toxic. But it's been chemically manipulated to make it not as toxic. Cotton seed oil is also used to clean machinery!

    You can also use Ghee (Purified Butter). It just doesn’t smoke or burn easily.
    Oils turn poisonous when they burn. Ghee never does that.
    How To Make Ghee -
    Melt butter in a pan and pour it through a sieve lined with paper towel or coffee filter. It separates the milk solids and you are left with purified butter.
    It has shelf life of 2 to 3 months at room temperature. Or forever in fridge.

      Most of the milk and milk products these days are A1 Cross breed milk which is harmful for our bodies. Instead opt for Desi Sahiwal/Gir A2 cow milk and ghee. Its expensive but its a natural elixir for our bodies.

      I'm interested in using ghee as living in Durban South Africa the Indian populace use it but it's only available in 1kg tubs. Good to know about shelf life, especially as we have load shedding where they switch our power off for hours at a time.

    Studies have shown that olive oil is actually way better than all the other kinds. It’s more stable and not carcinogenic at all. Second in rank come avocado oil. Canola and others are bad! Smoke point isn’t what define whether it is carcinogenic or not.

      Try to experiment urself. I often find myself to be experiencing inflammation when i consume processed oils. Try it urself, see what happens to ur skin and health in the long term when using Oils like Canola, sunflower oil. @BrianOtengoAkombe

      Smoke point isn't the only thing, but it does play a huge role in the transformation of the raw oils into carcinogenic compounds. The more stable an oil is at the temperature it is being used at, the less percentage of that oil will get turned into unhealthy compounds during cooking. And remember this: If the overall oil temperature you are cooking at is 375F, that means that a very thin layer of oil that is in direct contact with the hottest parts of the pan will be well above 425F, and if you're using an electric or gas fryer, which have much smaller heat-transfer surfaces, those hottest hot spots could go close to 500F! Yes, it's a very small amount of the oil that gets burned, but then that tiny bit of burnt oil reduces heat transfer in those hot spots, thereby causing them to heat up even further, so then you end up with even more burnt oil circulating into the batch of oil. And how much burnt oil do you really want to put into your body? By using an oil that has a smoke point over 500F and cooking with a good quality pan that distributes the heat evenly and reduces hot spots, you can reduce carcinogens to essentially zero.

      @@HeyChickensthis isn’t true. Oil is an excellent conductor of heat. There’s no way you’re going to have a 125 degree temperature gradient in your pan. As for smoke point it have been proven multiple times in recent studies that it has very little to do with the stability of an oil at high heat. EVOO is on of if not the best oil for high heat cooking because of its stability.

    The temp oil starts to degrade is different than the oils smoke point. Avocado oil starts to degrade at a lower temp than olive oil. Use olive oil it’s best.

      ​@SleeplessinOC alot of doctors and chefs will tell you that olive oil is horrible to use for cooking but it isn't. It's actually very stable at high temps and cooks things just fine. I've been using it for years. I have used rapeseed form time to time but extra virgin olive oil is the way to go if you want a healthier oil. I'm unsure whether it changes the way your food tastes though.

      What you want to avoid is just how much your oil is refined

    That avocado oil is hard to find in stores and it's frustrating

      Coconut oil has a high threshold too, and might be easier to find. But there are other pulls that work, look into it and you'll probably find something. Otherwise, talk to your grocery store, go online, or don't cook on a high of a heat.

    This info was very helpful for me because I did not understand why one oil was better than another for cooking. I use both avocado oil and EVOO. Now, I know when to use them.

    I have used California Brand, very good and recommended to me by a D.O.
    Will try the Chosen Avocado Oil.

    Avandia oil is so great & the brand you're showing is excellent. They even have a spray version.

    What’s your thoughts on EVOO from different regions? Spain, Italy, Greece, Morocco? I hear that Moroccan oil has 10x more polyphenols.
