Direct cooking was the first thing i mastered...the key is temp control...i cook bone side down for at least an hour and half..flip to meat side for 30 minutes....then wrap in foil with butter, maple syrup, and and apple juice for another hr on indirect heat... Sauce them up if wanted and cook an additional 30 minutes on indirect heat.. Best ribs ever...direct cooking is not hard at all
I've got decades of grilling experience, and I've watched a lot of TH-cam videos on grilling, and I must say that this is the best grilling video I've ever seen. You go over the techniques in detail, you give valuable advice that I've never heard in other grilling videos, and you eloquently describe the joy of grilling. Two things I've learned: First, lump charcoal imparts an even more intense charcoal flavor to the food, although it makes grilling more challenging because the fire is not as predictable and consistent as a charcoal briquette fire. And second, keep a grilling log, preferably on a computer so it's easy to find your notes on the last time you grilled whatever it is that you're grilling this time. For each grilling session, keep a record of what you're grilling, the weather (temperature, humidity, wind speed), how much charcoal you used, cooking details (like at the 16:52 point in your video), and the results (appearance, juiciness, tenderness, flavor). That way, once you have a great result you'll be able to easily duplicate it from then on.
Thanks! Appreciate you! Thanks a bunch for sharing your thoughts and advice. It’s advice like this that helps us all level-up our grilling game. Thanks again!
Yes sir, I always cook my ribs, chicken, pork chops etc.,and you definitely have to babysit that meat 🍖. I use my late father's homemade charcoal grill. Great video btw👌🏽👍🏼🫡
Man, this looks good. I love cooking on direct heat. Like you say, it really engages you with the cook. It's easy to smoke ribs, but if you can cook ribs on direct heat. Now you have become a grill MASTER🙏🏿🙏🏿
Indirect has its uses, but for ribs, wings, thighs and quarter direct method is the best. You remind me so much of my father when I was growing up. He would call me over to his grill and say, "come here boy, I'm trying to learn you something" . Glad I paid attention, thanks for the vid and sharing your knowledge with us.
Bro, I really understand what you are talking about. There are many who don't understand what you are saying.. It's a time to remember those who have given their lives for this great nation. Thank you, Battle. Wade Out..
My mother use to grill on a18 in. circular grill with no lid, and the 3 legs tripod. She used to cook 2 slabs at a time. So, you're speaking my language. I still do direct grilling to keep me sharp, and when I have a large party to cook for. You're doing your thang!
Thanks! Appreciate you! Sounds like your mother is a grill master for sure! Yep, you'll be all day grilling using other methods when you're grilling for a large party.
I was VolunTold by my sister that I need to cook 10 slabs of ribs, 5 baby back and 5 St Louis cuts for my niece's HS Grad party this weekend. I've been researching so here I am by YT. I was going to go Old Skool and cook direct to save time. Back in the day, we used to buy ribs off the 55g drums in garages after the club in the 70s ... LOL. I'm O G. 68, Hartford CT. Thanks for your tips.
Awesome! We have a large family. So, I’m always cooking a lot of meat. Direct grilling also allows me to save time and use all of my grill’s surface area at once. Instead of grilling indirect and setting up multiple zones and using half my grill at one time.
Growing up in Delray, in Southwest Detroit that's exactly the way everybody cooked their ribs. Nobody had a store bought grill everybody had a 55 gallon drum converted to a grill never tasted such delicious tender ribs.
Man this is the way.. growing up in Birmingham this is how it was down.. it’s a nostalgic taste when cooking directly. We do whole pork shoulders like that as well.. it’s an art that some a scared of. Man Grill on!!!!
Yes Sir! That's how I learned to cook them growing up in Memphis. The only thing I do differently now is mix the rib rubs together with the olive oil (learned this in Germany) and pour that over my ribs in a zip lock bag and refrigerate them overnight. Also, as a backup way to tenderize them... I use my oven and set it at 375 degrees and bake them wrapped in foil for 45 mins. They come out perfect every time ! Great Video!!!

Thanks! Really appreciate you stopping by the channel and taking the time to comment. Also, a huge thanks for your service in law enforcement! Since I didn’t use the traditional “low and slow” method, I still had to be mindful of making sure the ribs were tender and moist. That’s why I did the foil wrap towards the end of the cook.
New dad here✊🏾 This was the best direct ribs video Ive seen on YT yet. And I've been looking for 2 days now. After watching this, Im considering kind of a reverse sear on the ribs that I make today. Start them on my smoker to infuse that cherry wood flavor, then finish them on my weber kettle with direct. You've made a subscriber out of me. Thanks a lot
Thank you for that wonderful presentation on direct grilling! I was taught as a youngster, how to direct grill on charcoals and that’s the only way I grill to date. I never cared for gas grilling to me the meat has no taste or flavor. Also thank you for sharing how many people don’t know the proper technique for direct grilling. So many people serve you burnt 🔥 up ribs and chicken that’s under cooked and raw, so much I actually stopped attending BBQ’s and just stay home and grill my own delicious ribs and chicken. Keep on grilling!!!
I usually coat my ribs with Yellow mustard, both as a binder and as a flavoring agent (IMHO the tangy mustard counterbalances the fat & richness of the ribs). But I like this olive oil coating, seems like it would help not only minimize the meat sticking over the direct flame, but also act as an additional frying/browning agent. I'll have to try this method some time, thanks for sharing.
I've never had any luck grilling ribs, always came out tough. I started using a slow cooker and they are great, but I miss that charcoal flavor. ..... and you are limited on how much you can cook. I might give this a try. My favorite thing about youtube is seeing people who have a passion for something.....and I could tell right away you've got it. I subscribed.
Thanks for your tips! Just what I wanted to watch! Direct and looks so good!! Doing 3 slabs of ribs this 4th of July weekend and I have more confidence now in grilling. Thank you!
@@daddydiysolutions I don’t be using enough charcoal I see lol you use 2 chimney full… I only use one ☝️ and I always close my vent at the top to smoke 💨 it out. But ima leave mine open 3 quarters like yours. And when they reach 140 to 150 internally wrap them. Let it ride for another 20 min … until the temp reach 200 to 205. I like my ribs like yours with bite. Not fall off the bone. Also I struggle with how much seasoning salt to use on each spare rib. Like for both sides I’m thinking 🤔 I need like 1tablespoon per slab of ribs top and bottom. Or that’s too much salt 🧂
I really don’t measure my seasoned salt. Just going for a light shade of orange on the meat. Any more than that is probably too much. And if I’m using seasoned salt, I won’t add any plain salt to prevent making them too salty.
Thanks for this video. I've been looking for videos on how to grill ribs using direct heat. Most of the videos on TH-cam in regards to grilling ribs were instructing people to use indirect heat. The first time I did direct grilled ribs my wife and I fell in love, man. In fact it's been a while since I did some low and slow. I see you do a LOT of direct grilling on your channel, and I love it because I use a Weber Kettle. Indirect grilling is great but sometimes having that extra real estate that going direct gives you is really cool, especially when you're entertaining company. These ribs look fire man. I picked up a couple tips from you that I'm going to try next time I do some. Good stuff!
Thanks for this video. I'm used to grilling chicken, burgers, and sausage over direct heat. But ive bought a new offset smoker, and im trying to venture into ribs, and brisket. I was looking to smoke them. But you've inspired me to keep direct heat grilling. Keep doing your thing bro. Bless up!
Bro when seasoning start with your pepper first. Helps other seasonings hold better. When using ur Texas crutch wrap them tighter to hold in all the goodness. I am gonna start putting my videos out but learning how to do all the tricks with videos. I salute you bro for doing your thing.
How about you just make your videos and relax with the know-it-all stuff. Dudes always have to be jumping up on people's content giving out unwarranted advice. My man here is already doing his thing; you're watching his videos he's not on yours. SMH.
Man, right before the 4th. I needed this video as I'll be using the park grill to cook mom and her friends some ribs and chicken for the holiday. I usually just smoke them, but I don't feel like dragging the grill out to the park. Thanks for the video.
The humility you have, Sir is 💯! Great video, I consider myself somewhat of a lightweight pit master until it comes to direct cooking ribs 😢! I am a master with steak, chicken, burgers, hotdogs, brats, etc... But Ribs, over direct heat, I learned my lesson the hard way, one slab was burnt, yes, I spelled it burnt, the other 2 (St. Louis Ribs BTW) slabs were not tender enough, so thanks for this great video! You've provided plenty of insight in this video, SALUTE TO YOU!🫡 P.S. As long as I watched my pops master ribs over direct heat, I just couldn't get it!😂 Again, great videos Bro! Grill On Sir!✌🏾🙏🏾💪🏾👍🏾✊🏾👌🏾
Right on brother, count your blessings & enjoy your family quality time. With BBQ smoking when you’re looking you aint cooking. And when you’re direct heat grilling, you aint chillin’ That’s my preference too…
Also, on each flip I spritz my meat with apple cider vinegar and apple juice. on the final 30 minutes of my 2-hour cook, I add apple juice. Then I wrap them in foil. But I found a Marsh Allen 18in. circular grill for my brother, and I to see if we could do direct grilling like my mother use to do.😆
Hell yeah man! I've done 'em like that on a smaller grill and they turn out with that backyard charcoal grill flavor like steaks and burgers. I use some wood chunks in my charcoal also. May I suggest...for years I've used kingsford blue but when I switched to B&B oak briquettes it leveled the cook up a notch. They burn a little hotter at first but longer and have a cleaner smokey flavor. Great video!
I was looking for a good video. I'm planning to grill tomorrow. I will try what you said. I'm glad you mentioned brown sugar. I was going to try and I'm not now. Lol thanks for the tip
I’m enjoying watching this. You explain everything so well I also notice you have not sprayed apple juice or anything else on the ribs so you really don’t have to do that. They look so delicious
Thanks. There’s nothing wrong with spritzing your meat while grilling for additional moisture. I’ve found that I can achieve my desired tenderness without spritzing. You’ve gotta be careful with spritzing. Too much spritzing can reduce the meat’s ability to absorb the maximum amount of that charcoal smoky flavor.
I direct cooked a slab by force. Someone brought a marinated rack to a cookout, and I was only set up to cook mackerel and chicken. I did my best, kept watching the fire. Recipient loved them. I was always a meat smoker, if it wasn't burgers.
Great videos. I have the same grill you have. I don't have the side box. I noticed you add 2 cans of charcoals. I only add 1. Probably the reason my heat keeps falling.
Great video what will help you with space is trimming them down from whole spares to st louis cuts & then you’ll have the rib tips available to cook as well. I like doing direct too I run at a lower temp though I usually run bout 275 & flip every 30 minutes for the first hour then wrap in foil let ‘em finish the last 30 minutes but that kills that crispy texture you’re after. I really got to work on my chicken on the grill lol
Awesome video and thanks for you and your families service. Can’t wait to try the direct heat I’ve always done low and slow. After all the years I’ve cooked I can only remember 1 cook I felt was perfect. Ribs are finicky and some like off the bone and some like the snap.
Awesome, bro! Never thought about direct grilling opposed to low and slow smoking for ribs. I'm all about learning any and every method possible, and this was great, detailed content! #Salute
I still cook ribs on a drum barrel made into a grill. Depending on my seasonings, I adjust the coals. I like a sweet heat so lots of sugar and cayenne. I use Hennessy, Apple juice as a spritzer. Just gotta know how to control your grill. Might be a 4 hr thing, might be 2hr depending on the weather and how many coals. I be rocking with the lump charcoal lately. Cleveland out.
Great channel bro I use similar methods when direct grilling. I've done some shorts showing my BBQ but you've inspired me to post and or go live while I'm grilling. 👊🏿 Blessings to you and your beautiful family 🙏🏿💪🏿
Yeah man, this is yo boy jeremey I liked this video it was off the grind I hope to share comments as well as answers to those that is also watching the video cuz you did yo thang on the grillz so praying within the family that you and them find peace🙏 and hope throughout the days to come thank you ohh so much god bless❤
I appreciate your video. Those ribs are little tough for me. Good job direct cooking. Charcoal creates a great flavor. Maybe that why people use the pit barrel for ribs.
I had a chargriller years ago. I loved the briskets i could put out on it. Only thing is it was very inefficient, i used ALOT of charcoal and when you were done and shut everything down it was so leaky that it would continue to burn all your charcoal. It was no saving, yhat mug kept churning until there was NO fuel left. But those briskets were on point and a thick smoke ring. Taste better than on any of my other smokers but harder to regulate
Yessir I cook the same exact way, And I have the same grill with that zip strip on the handel too 😁😆 One thing extra I do is brine my ribbs in apple cider for 24 hours in the fridge, take them out let them come up to room temp oilve oil no salt dry rub , let them sit 20mins then direct heat on the grill bone side first 15 min meat side 15 min then rotate twice. Then I fix up my sauce beforei cruch them in foil , W suace garlic butter and lil bbq sauce mix and base the ribs in foil let them go for anther 30 min at 320 remove take out foil let them sit indirect heat for 10 mins then let them cool off and enjoy. I came in second place at amature BBQ contest in TX
Bro, you gotta get you a classic pit barrel. You can do them ribs as a set it and forget it. 1hrs 40. No flip no fuss. Pull sauce and eat. You can run like 8 rack of ribs and a whole chicken or two.
It’s funny cuz I’ve been perfecting my ribs. I’ve never once used an indirect or smoke method. So I guess I been doin it the hard way from the beginning. But I’ve done good if I do say so myself. Great video
Nice job! I have that same chargriller along with 2 others by them. Always tryin different ways to cook up my ribs via smoker and seldom with direct which I have done many times before. My next cook will be direct with a light apple wood smoke. I dig what you did!!!!
@@daddydiysolutions they came out great! I will alternate this with way & my normal rib smoking depending on how much time I have. Grilling first thing in the morning in AZ is better than getting cooked in the afternoon sun thats for sure! Maybe I'll take a stab at making a vid to post up soon. Thanks Man!
Great video brother!!! I do a lot of smoking but I too want to redevelop my skills for direct grilling and this video really was inspiring! Keep doing your thing!!
Love to smoke my ribs so this is a completely new concept to me. Can't wait to try it. Maybe I missed it but they hit 145 direct then I wrap and continue for how long before I pull off?
Great job Daddy DIIY, I have worn out so many Chargriller Grills that had to hawl a truck load off lol . I also do your direct style but I also do half and half. First I direct grill my ribs 20 minutes then smoke them the rest of the way. try it out sometime and you will get the best of both styles. Keep up the good content brother and again Great Job!!
Get you a drum smoker. Its direct but the space between the grate and fire is distant enough that they wont burn as easy. The drippings on the coals create a steam effect of flavor. Open pit flavor. Cant be beat
I been doing direct for about 15 years, only thing I would add is try to do a rack with BBQ sauce at the last 10 mins of grilling if you want sauce on them
Everything you did this day was so masterful and experienced. I hope one day I can do this like you. Right now im just starting and on a weber 22 inch kettle. And messing up too lol 😅. Making jerky. Im gonna go ahead and subscribe to you man.
I started grilling on the Weber 22 inch….logged a bunch of hours on that grill. Just keep putting in time on your grill and trust me, you’ll get the hang of it. Don’t get discouraged. I’ll be dropping some grilling videos soon using my Weber 22 inch.
Ro this is my first time seeing your channel and dude your doing your Thang. I'm new to grilling period. I just got my first real grill and the only way to go is charcoal. Those ribs look really good. I kinda wish I could jump through the phone. Thanks. Let me know how those ribs turn out. Appreciate you brother!
As a veteran BBQer up in Canada, This guy knows what he is doing. Enjoy my friend.
Thanks. Appreciate you!
Bro when seasoning start with your pepper first. Helps other seasonings hold better. When using ur Texas crutch wrap them tighter to hold in all the goodness. I am gonna start putting my videos out but learning how to do all the tricks with videos. I salute you bro for doing your thing.
Thanks. Appreciate you brother!
How about you just make your videos and relax with the know-it-all stuff. Dudes always have to be jumping up on people's content giving out unwarranted advice. My man here is already doing his thing; you're watching his videos he's not on yours. SMH.
@@TopBillinSports😂😂😂
For some reason it bothered me seeing the Ribs loaded awkward but I was glad to see you organize them round 2. Thanks for the vid !
Man, right before the 4th. I needed this video as I'll be using the park grill to cook mom and her friends some ribs and chicken for the holiday. I usually just smoke them, but I don't feel like dragging the grill out to the park. Thanks for the video.
My pleasure. Appreciate you! Hope you have a happy and safe 4th.
I'm on the grill right now. Decided to cut up some baby back ribs and put them on them on the grill today.
Sounds good! Let's go!
Really great video!!! No bells and whistles just grilling!!
It was a pleasure watching you work that grill. I'm going to try it this weekend haven't done direct method in a while.
Thanks. Appreciate you!
Never thought about using direct with ribs. Definitely going to try it.
You've provided plenty of insight in this video, SALUTE TO YOU!🫡
P.S. As long as I watched my pops master ribs over direct heat, I just couldn't get it!😂 Again, great videos Bro! Grill On Sir!✌🏾🙏🏾💪🏾👍🏾✊🏾👌🏾
Thanks. Appreciate you brother!
But I found a Marsh Allen 18in. circular grill for my brother, and I to see if we could do direct grilling like my mother use to do.😆
That's how i BBQ straight on the 🔥 fire 😂
hey keith just want to tell you God bless you and your family
Thanks! Appreciate the blessings!
Thanks. Appreciate you brother! I'm always looking to level-up my grilling game, gonna have to give the B&B briquettes a try. Thanks again!
Thanks! For this particular grill, I've found that 2 chimneys of coals is the sweet spot. I'll adjust from there if necessary.
My pleasure. Appreciate you!
I’ve had direct grilled ribs that were good and bad it depends on who’s doing the cooking. Those looked awesome. Keep up the good work bro 👊🏽
Thanks! Appreciate you bro!
Awesome, bro! Never thought about direct grilling opposed to low and slow smoking for ribs. I'm all about learning any and every method possible, and this was great, detailed content! #Salute
Thanks. Appreciate you brother! Yep, I thoroughly enjoy learning as well and spending time on the grill.
Sounds great! That sweet heat sounds delicious. Appreciate you!
Love the way you cook! That's the way I started a d after seeing this I am going back. Not a major fan of smoked ribs.
Thanks. Appreciate you!
Great channel bro I use similar methods when direct grilling. I've done some shorts showing my BBQ but you've inspired me to post and or go live while I'm grilling. 👊🏿 Blessings to you and your beautiful family 🙏🏿💪🏿
Thanks. Appreciate you!
Looks good bro. I'm a indirect guy. I'm gonna mess around with direct soon. Thanks for sharing your tips.
Thanks. Appreciate you brother! Definitely give that direct heat a try.
Ay Brotha i feel u on da learning from each grillin session,my lady got me a grill n im learning constantly, thanks for your knowledge
Thanks. Appreciate you brother!
Fantastic results and your video quality has improved a lot since your epic chicken videos.
Keep it up!
Thanks. Appreciate you!
Nice man! I do both. Sometimes I like to chill. Lol! 👊🏽👍🏾
Yep, nothing wrong with that…lol! Appreciate you!
Thanks Brother I'm going to try this one next week. Good luck to me my wife said I always burn the ribs.
Thanks. Appreciate you brother! I speak they turn out amazing!
Try 265/270 degrees a little slower but you won’t burn them
Yeah man, this is yo boy jeremey I liked this video it was off the grind I hope to share comments as well as answers to those that is also watching the video cuz you did yo thang on the grillz so praying within the family that you and them find peace🙏 and hope throughout the days to come thank you ohh so much god bless❤
Thanks. Appreciate you!
Bro... That was impressive! Direct heat is nothing to play with!
Thanks. Appreciate you!
I appreciate your video. Those ribs are little tough for me. Good job direct cooking. Charcoal creates a great flavor. Maybe that why people use the pit barrel for ribs.
My pleasure! Thanks for sharing your thoughts and stopping by the channel!
He did that!!! They looked delicious and I would have had a chair next to the grill waiting for him to pass me one lol….
Yessir I cook the same exact way, And I have the same grill with that zip strip on the handel too 😁😆
One thing extra I do is brine my ribbs in apple cider for 24 hours in the fridge, take them out let them come up to room temp oilve oil no salt dry rub , let them sit 20mins then direct heat on the grill bone side first 15 min meat side 15 min then rotate twice.
Nice! Let’s go! I bet they taste amazing for sure!
@@daddydiysolutions Oh yeah lol loose a finger
Great video. Amazing information and great voice. Pleasant to watch.
I agree direct ribs have a unique flavor that it like either you like or you don’t. I like both methods just depends how I feel that day.
You are a good American bro.
Thanks. Appreciate you brother!
I always smoke my ribs, but I'm going to try direct grilling. My friends in Georgia cook their ribs like this. Always good
im so happy you flipped that rib over lmao nice work
Bro, you gotta get you a classic pit barrel.
Great video
My pleasure. Appreciate you!
Nice job! I have that same chargriller along with 2 others by them. Always tryin different ways to cook up my ribs via smoker and seldom with direct which I have done many times before. My next cook will be direct with a light apple wood smoke. I dig what you did!!!!
Thanks. Appreciate you! Let me know how those ribs turn out.
Thanks Man!
Awesome! My pleasure! Let me know when that vid drop. I’m always looking to learn…look forward to seeing you on the grill!
You did an awesome job my brother I definitely will start direct method more
Thanks. Appreciate you!
Looks good brother bless you and your family
Thanks. Appreciate you!
Great video brother!!! I do a lot of smoking but I too want to redevelop my skills for direct grilling and this video really was inspiring! Keep doing your thing!!
Thanks. Appreciate you!
@@daddydiysolutions Yw!
Brotha you did an outstanding job with the cook. Keep up the great work 💯
Thanks. Appreciate you brother!
Love to smoke my ribs so this is a completely new concept to me. Can't wait to try it. Maybe I missed it but they hit 145 direct then I wrap and continue for how long before I pull off?
Sounds good. 30 minutes with foil.
Great video. I only do direct. Its the same result, no sauce needed.
Thanks. Appreciate you!
Great job working those ribs bro! thoroughly enjoyed your experiences and how you work flipping your ribs on the Hot grill! keep up outstanding work.
Thanks. Appreciate you bro!
Amen! Thank you brother! God bless you and God Bless America!!
Thanks. My pleasure. Appreciate you brother!
Great work my friend. I found your video and narrative very inspirational. Keep up spreading your knowledge.
Thanks. Appreciate you!
Thanks. Appreciate you brother!
Thank you, brother. I've been looking for something like this. I'm glad I found you. You answered so many of my questions.
My pleasure. Appreciate you!
Man you put your ankles in those ribs 🔥💪🏿
Get you a drum smoker. Its direct but the space between the grate and fire is distant enough that they wont burn as easy. The drippings on the coals create a steam effect of flavor.
Open pit flavor. Cant be beat
I been doing direct for about 15 years, only thing I would add is try to do a rack with BBQ sauce at the last 10 mins of grilling if you want sauce on them
I've been looking for a direct grilling video and found YOU! I'm so happy, thank you. 4th of July here yo girl comes😊
Thanks. Appreciate you!
@@daddydiysolutions thanks man
Ro this is my first time seeing your channel and dude your doing your Thang. I'm new to grilling period. I just got my first real grill and the only way to go is charcoal. Those ribs look really good. I kinda wish I could jump through the phone. I generally cook inside for my family and but wanted to try out a grill and so far did a fresh ham and leg quarters and some chops. I really do love cooking out and my wife wants me to cook on the grill every day.
Thanks. Appreciate you brother!
