Nice vid man! Validating for me considering I’ve never used a thermometer to cook ever in my life. I’ve always gone by feel whether tri tip or ribs, it’s all trial and error and honestly it’s so fun and rewarding. Nothing matches that feeling of smelling a little smoke come out the barbecue sun shining with a cold one in your hand. Then tasting your own work of art. I’ll take it a step further for the first timers who may be discouraged if you don’t have all the equipment in this vid, neither do I, I make a stack of coals on each side of the kettle, throw some wood chips , tin foil in the middle to catch the juice, wide open on bottom - quarter to half open on top modulate as needed I like to be able to hold my hand above the holes for about 3 or 4 seconds before I can’t stand it anymore and that’s how I gauge my coals. 2 and a half hours. Spill some beer on it a few times during, then end it with some bbq sauce until it glazes. Just do it and don’t over think it baby it’s all gravy

I followed your video step by step today when cooking baby backs for the first time ever on my Weber kettle. I had most everything but I went to Home Depot this morning and bought the grate that had the flip up ends which was so helpful today. I can’t tell you how absolutely amazing they turned out. I absolutely love how you "cook by feel" that's how I've been teaching myself over the years. With a bunch of probes and thermometers it takes the relaxing and fun out of grilling in my opinion.
I just have a Weber, no grill grates, no charcoal side buckets, no thermometers. I'm not spending 150 bucks on side junk when I'm trying to save money on BBQ by doing my own. Grab a drink, get a comfy lawn chair, and let it happen.

Gr8 vid, tnx. I’m still using my 80’s vintage 22” Weber kettle to grill and am now moving into smoking with it. I can honestly say that I’ve never ever screwed the pooch with is grill. This is one of the most stable cooking methods there is and is recommended for new grill masters learning the ropes.

Old timer here who loves his Weber charcoal grill. Been grilling pork spareribs ribs on the Weber for over 55 years. We serv'em for ourselves, family and friends. Got a slab in the refrig right now defrosting and will grill tomorrow. Our system differs, but no matter, ribs are good on the grill. I love to BBQ pork spareribs and St. Louis pork ribs. The right seasoning, the right sauce near the end, a few Hickory chips during the process, and the proper length of time and temp on the grill and a masterpiece is created. Cook time is between 1 1/2 hours to a maximum of 2 hours. I place the ribs in a rib rack with charcoal on both sides of the Weber. About 20 briskets on each side. I do not wrap in tinfoil as I want more firmness. If I want fall off the bone as in baby back ribs I will wrap in tinfoil for first 1 1/2 hours and then stand in rib holder for 45 minutes to brown. .

Great video! I always pull the ribs off the grill when done smoke cooking, wrap in foil, then put in a 250 degree oven to finish them. Saves on coal. Tastes great!

been cookin on a webber kettle grill for about 40 years. i can say this mans video is right on. open bottom vent regulate from top fill half the slow and sear with lit ready charcoal and the other half with unlit. use good charcoal!! i have a smoke miester generator on my grill but seldom use it after learning to fill the slow and sear half way. this fella is telling you excelent advise on using your webber kettle. do what he does and you will have a great foundation to build on. john k wright wva hillbilly bbqing wild game most my life. use good sea or celtic salt and grind your own pepper would be the only thing id add

2 things....DO NOT use apple cider vinegar. It can leave a funky taste on the ribs when you are done grilling. You can avoid having to do ANY SPRAYING by simply filling up a small aluminum catch pan with water and leaving it on the top grill directly next to the ribs. The condensation will leave it moist throughout the process.
I had to improvise for today! I didn't wanna get working on the big smoker for a couple racks of ribs. I went to home depot this morning and got (4) 7-5/8 in. x 1-1/4 in. x 3-5/8 in. Red Clay Bricks I stacked them upright to make a divider between the coals and the meat. 2 in the front one in the back and one on top. It actually fit almost perfectly.... i have a nice wall right there to keep the heat away. $2.00 brick n sear divider 😂. Other than that I did exactly what you did in the video, water pan and all. Its going rn, looks like its working really well! Happy 4th of July!!🇺🇲🇺🇲🇺🇲🇺🇲 thanks for the video!! 👍👍
So this was my first time making ribs ever and I followed your recipe almost exact. I think I waited too long before wrapping them in foil and the crust was a little bit crunchier than I like but that was my fault and the meat was incredible. It had a nice bit and was tender and juicy. I didn’t use bbq sauce either just some seasonings. Thanks so much man this is a killer recipe!!!
Thanks! I feel that when we start relying on numbers and time, we are losing the real art of just cooking. Anyone can cook to a number but does that really mean it's the best result in BBQ? Not always. So I definitely try to get that out there to just understand the method and then play with it to make your own style.
My Man that's what I'm talking about, I'm all about the back yard bbq cooking. I make my ribs fall off the bone nice and tender. Great color on those ribs 👍
My wife and I have made ribs 4-5 times and while delicious, we have a hard time getting fall off the bone. We've already had them on the Weber for 5+ hours, yet they rarely turn out to our desired tenderness. I'm wondering if with all that grilling time that I should be adding charcoal as they're pretty much history after 5 hrs. Thanks!

Thanks for this video. The ribs were perfect! I squeezed in two slabs, rotated at each step. Didn't have a slow-n-sear so I made one with a foil pan (same shown in video under the ribs). I jabbed a bunch of holes with a screwdriver, bent into a shape I liked and put water in a pie tin under the meat. I used Kingsford briquets and decided it needed 5- 6 more at each hour milestone. I think that was the right call. I'm just showing these details so folks can see a little improvisation can get great results too. 😃

Great video! I always pull the ribs off the grill when done smoke cooking, wrap in foil, then put in a 250 degree oven to finish them. Saves on coal. Tastes great!

been cookin on a webber kettle grill for about 40 years. i can say this mans video is right on. open bottom vent regulate from top fill half the slow and sear with lit ready charcoal and the other half with unlit. use good charcoal!! i have a smoke miester generator on my grill but seldom use it after learning to fill the slow and sear half way. this fella is telling you excelent advise on using your webber kettle. do what he does and you will have a great foundation to build on. john k wright wva hillbilly bbqing wild game most my life. use good sea or celtic salt and grind your own pepper would be the only thing id add

Great instructional video Alton. I like using cherry wood for a nice color and flavor on rib and it's amazing how much flavor you get just using salt & pepper. Those ribs looked mighty fine brother!!! Cheers to ya and hope to see you guys again real soon!!!!

2 things....DO NOT use apple cider vinegar. It can leave a funky taste on the ribs when you are done grilling. You can avoid having to do ANY SPRAYING by simply filling up a small aluminum catch pan with water and leaving it on the top grill directly next to the ribs. The condensation will leave it moist throughout the process.

I had to improvise for today! I didn't wanna get working on the big smoker for a couple racks of ribs. I went to home depot this morning and got (4) 7-5/8 in. x 1-1/4 in. x 3-5/8 in. Red Clay Bricks
I stacked them upright to make a divider between the coals and the meat. 2 in the front one in the back and one on top. It actually fit almost perfectly.... i have a nice wall right there to keep the heat away. $2.00 brick n sear divider 😂. Other than that I did exactly what you did in the video, water pan and all. Its going rn, looks like its working really well!

So this was my first time making ribs ever and I followed your recipe almost exact. I think I waited too long before wrapping them in foil and the crust was a little bit crunchier than I like but that was my fault and the meat was incredible. It had a nice bit and was tender and juicy. I didn’t use bbq sauce either just some seasonings. Thanks so much man this is a killer recipe!!!

Going off feeling instead of a thermometer... as a city country boy from Alabama whose been to a lot of backyard bbqs... I felt that!
Thanks! I feel that when we start relying on numbers and time, we are losing the real art of just cooking. Anyone can cook to a number but does that really mean it's the best result in BBQ? Not always. So I definitely try to get that out there to just understand the method and then play with it to make your own style.

My Man that's what I'm talking about, I'm all about the back yard bbq cooking. I make my ribs fall off the bone nice and tender. Great color on those ribs 👍
My wife and I have made ribs 4-5 times and while delicious, we have a hard time getting fall off the bone. We've already had them on the Weber for 5+ hours, yet they rarely turn out to our desired tenderness. I'm wondering if with all that grilling time that I should be adding charcoal as they're pretty much history after 5 hrs. Thanks!

Thanks for this video. The ribs were perfect! I squeezed in two slabs, rotated at each step. Didn't have a slow-n-sear so I made one with a foil pan (same shown in video under the ribs). I jabbed a bunch of holes with a screwdriver, bent into a shape I liked and put water in a pie tin under the meat. I used Kingsford briquets and decided it needed 5- 6 more at each hour milestone. I think that was the right call. I'm just showing these details so folks can see a little improvisation can get great results too. 😃

I've seen chefs use mustard to keep the season on the the meat.
I use it when im doing str8 up bbq ribs. Easy with the salt though if u do. Esp if u have health issues.
