Chicken Leek Tarragon Bacon Pie - Making a dozen!

- 1½lbs Chopped Leeks
6oz Butter
3oz Flour
1 Tbspn Dried Tarragon
1¼ cups Chicken Stock
1¼ cups Milk / Light Creeam
4oz Cooked Bacon Bits
1¾bs Cooked Chicken Pieces
Bake in a preheated oven for 30/35 minutes on 185c / 365f
Leave filling to cool before adding chicken or better still, assemble and bake pies the day after making the filling.
Makes 12 Individual Pies (4½ " x 1½)
Shortcrust Pie Pastry - this batch will make about a dozen. To be on the safe side make this plus ¼ and you'll have enough for a dozen beautiful pies

I saved this recipe some time ago but just got around to making these. Absolutely delicious. Made as written, letting filling sit overnight to develop flavor, and I used your shortcrust recipe as well. It all came out perfectly. Thank you so much! I'll definitely be making these lovely pot pies again. I used larger tins (so longer baking time) but tucked a few pies in the freezer for future meals. Yum!

They look amazing. Definitely going to make these for my family. Where are you from, accent sounds local to me, Castleford, West Yorkshire, everyone always asks is that near Leeds 😄 Will let you know how I do, only every made corned beef and potato pie but that went down a treat with family and neighbours.
