One of my favourites. Haven't used mustard, but. I'll give it a run, seeing as how you're smarter than me at this. Or everything, probably. Any leftover filling gets a spud thrown in and is turned into soup. Hoping for a little cold snap before spring now.

I always poach the thighs in wine, chicken stock, garlic, pepper and a bit of tarragon, and then use the poaching liquor for the roux.
