I appreciate you doing this, I sorta got into this comparing the 2013 vs a m1 mini. The most bonkers thing I received people profession the 6 core cpu being better than the 12 just because of a 30% clock speed over 2x the core count.

Even though I have an M1 Max, my Mac Pro 5,1 still works well for me. I generally use the laptop only when I'm traveling or moving around; at home, I barely use it. So yes, the MP 5,1 is slower than the M1 Max, but honestly, it's not intolerably slow-it's pretty manageable. I can also share what I do with my MP 5,1. I'm a full-stack developer working on front-end (Angular), back-end (Node, PHP, Python), and AI with Hugging Face, and I use Docker for these development tasks. Surprisingly, this "old" computer still keeps up with the latest industry standards, and it handles software like Adobe quite well too. So, is it still functioning? Absolutely.
Currently, my MP 5,1 is equipped with macOS Monterey, X5690 x 2, an RX6600XT, 128 GB ECC, M.2 x 2, 3 HDDs, 1 SSD, updated Wifi/Bluetooth, and USB 3. I feel like it could keep going unless it decides to quit one day.
However, I must mention, if you're developing AI, you can only use the CPU for computations, as the MPS part obviously doesn't support the GPUs used in setups like OpenCore.
Oh, and about whether this "old" computer is fast enough? I can give you a rough idea. When I run routine, small-scale, and less demanding training tasks for my RAG on the MP 5,1 using the CPU, it performs at full speed. The training speed is roughly equivalent to a cloud server with 2 to 4 vCPUs. It's an interesting comparison, though not very scientific-just something to keep in mind.
Lastly, I have to say, in 2024, it's really not worth spending money to tinker with it, and I wouldn't encourage it either. But for me, I just genuinely enjoy working on it. I like how well it still performs, and I'm not too concerned about speed. Plus, the large memory capacity of this old guy is actually quite useful. The fact that OpenCore even allows it to be upgraded to 256 GB is pretty fascinating.

I use a 2015 MBP and a 2010 Mac Pro 6-core with OpenCore, Monterey, NVMe, and an RX 6600 XT.
    I get these numbers:
    Geekbench single: 552 / Multi: 2718.
I prefer comparing it to a Mac Studio M2 Max which gets: single: 2684 / Multi: 14853 !
But the RX 6600 XT competes:
MacPro 6600XT Geekbench Metal: 102963 vs M2 Max GPU: 129976!!
Unfortunately, this Mac Pro is stuck with Monterey with the RX 6600 XT even though it runs without any problems.
The lack of fast USB is a big problem - I have to choose between PCI NVMe, SSD PCI, and USB card as I have too many things inside...
The major issue is the computing time when transcoding Canon Raw video to ProRes, due to the old weak CPU...
My 2010 has been rock solid since I bought it in 2011 ! Incredible computer. But for me, it's time to upgrade...

The 4-5,1 Mac Pro is not a computer I'd advise anyone actually pay for. At most, this is a $80 computer in 2024 and buying one on eBay for several hundred dollars is simply a terrible purchase. Doesn't matter the spec, they are just really old PCs with very dated technology (USB 2.0, slow DDR3, SATA II etc). The 6,1 is a slightly different deal. Still a much better machine, but again, I'd say keep it under $200 for one of those as the CPUs and RAM are extremely cheap to upgrade to top spec. I Still use my 6,1 Mac Pros quite a bit, but I haven't touched my cMP in years.
