Just made it. The flavour is FANTASTIC, a bit too sweet, I'll adjust allulose for my next batch, will probably use 45g instead of 55g. Really hard to stop eating it, I couldn't wait 4 hours, tried it after 30 min in the freezer and it was the consistency of soft ice cream - my favorite. Thanks so much for this recipe! Question - what happens if one uses a mixer to whip the mixture up? Have anyone tried a hand mixer vs shaking the jar?
You have inspired me to make some yummy dessert. I have been Low Carb since the end of Jan. Lost 38 lbs. feeling great. I combined your coffee ice cream recipe with this peanut butter one, used 1 C heavy whipping cream and 1 tsp. instant coffee, may put 2 tsp. in next time..followed this recipe for rest of ingred. Since I have arthritis in fingers and hands I didnt want to shake a mason jar for a few min. Instead I used my Immersion blender...so fast and easy! Took about 2 min. to fully whip the creamy mixture. Oh My Gosh is this delicious! Ate half right away and froze the other half. Next time, I will try adding some organic coco powder! Chocolate, Peanut butter and coffee together in ice cream!!! Thanks for your inspiration Joe!

Bro. See the last one I made and it was from you and it was the first one I have ever made you used swerve. I noticed erythritol gives like a almost like the ice cream is frostbitten. I've had that with Halo Top. Enlightenment brand uses allulose and allulose is the closest thing to sugar texture wise cooking etc. That's why using allulose makes it creamy. I like how this ice cream you made came out. I like the little flecks of the peanut butter which is because of the natural. Thanks bro for sharing as always. ❤️🙂
It looks super good!!! I always add a little dark rum to my recipe to keep it extra creamy for days in the freezer, well if it lasts that long that is. 💚☘

Is there some importance to freezing it in the jar? I’d like to prep & shake it in the jar, then pour it into small freezer bowls for individual servings. Know of any reason why that wouldn’t work? I imagine the bottom third or so of the jar may be difficult to get out.
If you're lazy like me, you should be able to beat everything with a mixer until it makes medium peaks (peaks that stand but wilt fast), then put it in a container to freeze. I haven't tried it yet but that's how I've made home made ice cream in the past.
I used clumpy peanut butter still turned out well, it is definitely very rich but a delicious snack, I wish I had some chocolate I would have added some chocolate on the top but it’s still delicious, I don’t think you can a lot of it though because of its richness

How can I change this for lactose intolerant people. I have diabetes and lactose intolerance and miss ice cream. I there a way to use canned coconut cream, instead of heavy whipping cream? I do not have allulose. What other sweetener can I use?

Update: I made this last week. It’s really really good! Thanks for the recipe! I used electric mixer and it works fine and still creamy after 1 week so am grateful for the allulose. I will start using it in all your ice cream recipes 😄
Allulose is a rare sugar that doesn't metabolize and it's an alternative form of regular sugar. Basically has identical properties but it's expensive. Swerve is erythritol which is a sugar alcohol and it could get icy and has some off flavors/bloating effects

Allulose is the key ingredient. It make ice cream soft and easy to scoop. If you are going to make keto ice cream all the time you can buy one from Amazon but if you only make it once use monk fruit powder are just fine.

I have used vodka. Tastes like Dairy Queen. But Allulose keeps it pretty creamy so will not add vodka next time.

You can find Allulose on Amazon or at Walmart. I just bought a big bag of it. It is a sugar that comes from fruit such as figs and raisins.

I made it with Silk brand non dairy heavy cream. It works. It does freeze a little hard, but nothing a microwave can't fix.
