Although replacing sweets and desserts with keto/low carb/more natural alternatives is a great way to live a healthier lifestyle while still enjoying the foods you love, deciding to try ketogenic diet and starting it with a cinammon roll seems f-ing stupid. While it might be helpful to someone who needs to have an alternative to sweets first, because their sugar addiction is too strong and their will too weak, keto sweets like this shouldnt be something that your diet is based upon. Read up about food and nutrients. Read labels. Educate yourself better about whats good for you and what isn't. If you are serious about reaching and sustaining ketosis, calculate your macros and don't satisfy your sugar craving for a while. After some time, even if you decide not to stick to keto, you'll be more conscious about what you put into your basket at the store and subsequently into your body. You'll find that most of the sweets are simply too sweet, 90% chocolate is sweet enough, you don't need extra sugar/sweetener with your fruit. I'd be interested in knowing how long did you last, considering that on your first day of going keto, you chose to waste half of your daily carbohydrate limit on this thing.

Commenting again, I tripled this recipe following your 3x instructions and it didn’t work please, make sure you are giving the correct macros and grams amount, I found mistakes on few of them like amount of almond flour for the 1/2 cup is not 56 grams but 48 grams. ( 1 cup of almond flour = 96, 1/2 cup 48, you can google it). Same for the brown Swerve is different than confectioners Swerve. They don’t weight the same. Google it or even if you contact Swerve they will give you the right amount for each. For those who doesn’t like extremely sweet desserts you could find the icing totally cloys the roll, very unpleasant. I didn’t find any balance on the roll, filling and icing. No one in my family liked it. I understand we all don’t have to have the same taste. Thank you.

I just made some and it's delicious. I altered the filling a little bit. I used stevia because I don't have swerve. I used cocoa powder stevia and cinamon for the filling. Thanks for the recipe
So the stevia was OK? He said not to use it. I used Truvia confectioner which has some stevia. I didn't think the bun was all that sweet, although that's fine with me as I don't have a sweet tooth.
I made this once and over cooked it so I tried again tonight and cooked for less time and OMG what a difference! This was so good!!!! Please if you overcooked it the first time and it came out crumbly do yourself a favor and try again with less cook time its so worth it!!
Thank you for also including the oven temp and time! I don't have a microwave so a lot of these cup recipes leave me with hit or miss for oven directions.

Sometimes I miss carbs so so much. Every time I go to the grocery store I see all the shit I used to binge on. Sugar loaded, high carb, high calorie, foods. All the bakery goods and chips etc. I almost drool over it....but then... I remind myself what it causes me.... Bloat, depression, acne, weight gain, pain, no energy, lack of motivation and many many more. Since going Keto, I’ve lost weight, my cellulite is nearly gone and never has it ever lightened up on anything diet I’ve done. Keto is a lifestyle. It’s crazy how it transforms so much into good. I am looking into different meals to make which I love because I’ve been getting bored with what I’ve been eating for the past five weeks. But not bored enough to go to wrong foods. I have been researching boatloads of recipes and I can’t wait to make them. Even my boyfriend(who is not Keto) is excited to make Keto meals with me. He is not into fitness or dieting or nothing although he wants a better body. He’s gained weight over the years and he’s unhappy with it but continues to eat like shit😂 I get it I get it. But I’m so glad I am Keto. I can’t wait to keep seeing results.
I love this recipe sooo much .... the first time I made it it was a bit to dry but that was my mistake but I added on a little water and it was absolutely delicious ! Second time I felt like having a cake cookie so I took the regular recipe and added some more butter Erythritol and cinnamon and omg with the delicious topping of Creme cheese I loved it
I made this today and I’m very pleased. My modifications; half the swerve in the..pastry and use the other half in the glaze. By using less swerve it really did not have a “slap in face” sweetness. In fact just the right sweetness. The glaze, was good, but it could be better with cream cheese. The time I used was 70 seconds. Outside was tender and the inside was just a tad bit denser. Thank you for sharing, I’d make this again.
Hello Joe, I could not wait to try the roles. Most of your recipes are absolutely Stellar in quality. This role fell short. I did bake it in the oven for 15 minutes it was still very wet and there's still quite a bit of xanthan gum that doesn't really add to the texture, just adds a little sliminess. I baked it another 7 minutes and then microwave did on my very weak microwave for about a minute it kind of came out tasting and feeling like an oatmeal bar. Flavor is good and when in a pinch I probably will use it again. Yours looked way better. The easy glaze is such a perfect idea no cream cheese needed. This may not have been a 10 on my scale but I still appreciate everything you do.
Firstly, thank you for offering a non-microwave version! I tried this with a little alteration. I don't currently have confectioners or brown swerve, and felt so lazy I didn't even want to grind, so I did mine with granulated swerve. I didn't have a full 1/2 c of almond flour so I mixed in about 1 Tbs coconut flour with a bit over 1/4 c of the almond flour. Because I don't need things as sweet as most others, I only used 2 Tbs swerve in the dough. I sprinkled a tiny bit of the granulated with cinnamon for the filling and left off the icing entirely. The result was super! A bit crispy and firm on the outside, soft on the inside (probably from the coconut flour?) and plenty sweet. The texture and flavor profile felt like bakery treats. Thanks so much!
Made this just now. Cons: definitely not a 5 minute recipe. 10 minutes would be a more reasonable estimate. 5 more minutes isn't a huge deal but when you want to just throw something together really quick that 5 minutes makes a difference. Also, mine came out a little crumbly. Pros: Freaking delicious. Came out a little more like a cakey cinnamon roll. So texture wasn't what I wanted but flavor was 100%! I'll make this again cuz I'm sure I may have messed up somewhere with the texture. But flavor wise, these definitely hit the spot!!! Nice one!
I just made this! It is definitely a keeper, but it was so sweet (my first time using Swerve Brown). Next time, I’m going to make a cinnamon sugar paste with the brown and use less and make a cream cheese frosting with a bit of HWC and cream cheese with vanilla. A+
My second try at this one was way better than the first. I have a bad habit of not trusting the recipes, with keto... Or just thinking I have a better idea (usually incorrectly). I did make a cream cheese topping, instead which was awesome. I find the cream cheese gives it more body - and because it has its own flavour, it mellowed out the “sugar substitute” taste... or feel? Just finished making this Keto Cinnamon Roll, I must say it’s really an easy recipe to assemble and ready even before u know it! Still haven’t tasted it, kept it behind for my evening tea time snack😉
Made them with a few changes didn’t have butter so used ghee and instead of xantham used psyllium husk and for the filling jaggery with cinnamon .Loved it thank you for the recipe
These came out PERFECT! I probably added a little more flour bc I messed up by not putting my scale back at zero and added the flour. But anyways, the dough was the consistency of any regular dough and rolled out perfectly. Mine weren’t too sweet at all bc I added what was right for ME. That’s what some ppl need to realize is that you give them a base recipe and it’s up to them how they tweak it. 90 seconds later- I got a FLUFFY roll, perfectly sized. Not crumbly at all, like seriously AT ALL. Will be making these possibly more than I should lol thank you Joe ❤️🤗🤗🤗
Made two of these for Christmas morning. They were tasty, maybe resembled more the taste of a coffee cake rather than cinnamon roll, but delicious either way. I baked them in the oven so they would have a browned crust. To make them even more grand, I added about a tablespoon of cream cheese to the icing....cream cheese frosting, why not? Omg I wasn't expecting this to turn out so yummy! My roll was bubbly and wet when it was cooking in the microwave (I used a clear cup so I could see what's going on). And then what I did was pop it into my toaster oven for another 10 mins and my oh my! It was crusty on the top and just the right crumble on the insides!
Wow this tastes amazing. I’m usually skeptical of keto desserts because they can be so eggy. I love the taste and texture of this. I believe this is the closest taste to a regular cinnamon roll and I’ve tried a lot... So good
Have you tried to read your ketones after eating one of these like say 30 minutes after? I think once I get to my goal weight that is when I'm going to start experimenting with these recipes. For now, I'm extremely clean keto. No fake sugar, no carbs at all outside of veggies. I've read that even the substitute sugar can spike insulin if you ingest too much. I started at 186 5 weeks ago, down to 175 with my goal weight between 165 - 170. At that time I'll look at these recipes since they do provide more options.
If you add a bit of yeast (strictly for flavor), it should taste more like baked goods. Just a suggestion. Thank you for the smaller portion size to avoid overeating.

Susan Beach you only need to proof it if it needs to make bubbles for lift. Since there is no gluten, you can’t get lift with yeast. It’s only for flavoring. Just add it straight to the dry ingredients.

We buy the bag of granulated erythritol at Wal-Mart for cheaper, when it calls for confectioners then I put some in a coffee grinder. 1/4 cup of granulated = 1/2 cup of confectioners when put in the coffee grinder.

Damn, Joe! Looks like you've got another winner on your hands; excited to try it out for myself. Question, have you ever messed with baking using Allulose? From what I understand, it has a great deal of similarity to conventional sugar as it pertains to how it behaves in baked goods.
Supposedly xylitol is closer in taste to sugar BUT do not let pets, dogs especially, get ANY bc it is deadly in small quantities. Dr. Berg has a video he mentioned all of that in but I have no clue which video bc it's been quite a while & way too many videos in btwn then & now. I think he said it also acts like sugar. I know crystal erythritol can even be bruleéd (torched). Good luck! Xylitol + sorbitol is probably why I prefer Trident gum taste over any other sf gum or mint.

And about a year ago keto connect did a Costco Hall and I'm like I don't have a Costco around me I only have Sam's and BJ's. I live in upstate New York that's all we have and I noticed he had wax paper from Wegmans too and Wegmans is a really good store and I don't have one near me either... So not fair 😭😭😭. 😂🤣😂 ☺️
After a few interations with the same ingredients. Use his exact gram measurements. But dial back the almond flower 3 grams. Add 2 more grams of swerve in the dry ingredients. Egg size is important. Use 2 more grams of butter. The cup method works very well. As the cooking spray keeps it moist.

I love this recipe sooo much .... the first time I made it it was a bit to dry but that was my mistake but I added on a little water and it was absolutely delicious ! Second time I felt like having a cake cookie so I took the regular recipe and added some more butter Erythritol and cinnamon and omg with the delicious topping of Creme

I made this today and I’m very pleased. My modifications; half the swerve in the..pastry and use the other half in the glaze. By using less swerve it really did not have a “slap in face” sweetness. In fact just the right sweetness. The glaze, was good, but it could be better with cream cheese. The time I used was 70 seconds. Outside was tender and the inside was just a tad bit denser. Thank you for sharing, I’d make this again.

Hello Joe, I could not wait to try the roles. Most of your recipes are absolutely Stellar in quality. This role fell short. I did bake it in the oven for 15 minutes it was still very wet and there's still quite a bit of xanthan gum that doesn't really add to the texture, just adds a little sliminess. I baked it another 7 minutes and then microwave did on my very weak microwave for about a minute it kind of came out tasting and feeling like an oatmeal bar. Flavor is good and when in a pinch I probably will use it again. Yours looked way better. The easy glaze is such a perfect idea no cream cheese needed. This may not have been a 10 on my scale but I still appreciate everything you do.
Firstly, thank you for offering a non-microwave version! I tried this with a little alteration. I don't currently have confectioners or brown swerve, and felt so lazy I didn't even want to grind, so I did mine with granulated swerve. I didn't have a full 1/2 c of almond flour so I mixed in about 1 Tbs coconut flour with a bit over 1/4 c of the almond flour. Because I don't need things as sweet as most others, I only used 2 Tbs swerve in the dough. I sprinkled a tiny bit of the granulated with cinnamon for the filling and left off the icing entirely. The result was super! A bit crispy and firm on the outside, soft on the inside (probably from the coconut flour?) and plenty sweet. The texture and flavor profile felt like bakery treats. Thanks so much!

Cons: definitely not a 5 minute recipe. 10 minutes would be a more reasonable estimate. 5 more minutes isn't a huge deal but when you want to just throw something together really quick that 5 minutes makes a difference. Also, mine came out a little crumbly.
Pros: Freaking delicious. Came out a little more like a cakey cinnamon roll. So texture wasn't what I wanted but flavor was 100%!
I'll make this again cuz I'm sure I may have messed up somewhere with the texture. But flavor wise, these definitely hit the spot!!! Nice one!

I just made this! It is definitely a keeper, but it was so sweet (my first time using Swerve Brown). Next time, I’m going to make a cinnamon sugar paste with the brown and use less and make a cream cheese frosting with a bit of HWC and cream cheese with vanilla. A+

My second try at this one was way better than the first. I have a bad habit of not trusting the recipes, with keto... Or just thinking I have a better idea (usually incorrectly). I did make a cream cheese topping, instead which was awesome. I find the cream cheese gives it more body - and because it has its own flavour, it mellowed out the “sugar substitute” taste... or feel? This is my favourite keto recipe thus far. THANK YOU! 👌🌈👍

Just finished making this Keto Cinnamon Roll, I must say it’s really an easy recipe to assemble and ready even before u know it! Still haven’t tasted it, kept it behind for my evening tea time snack😉
Made them with a few changes didn’t have butter so used ghee and instead of xantham used psyllium husk and for the filling jaggery with cinnamon .Loved it thank you for the recipe
These came out PERFECT! I probably added a little more flour bc I messed up by not putting my scale back at zero and added the flour. But anyways, the dough was the consistency of any regular dough and rolled out perfectly. Mine weren’t too sweet at all bc I added what was right for ME. That’s what some ppl need to realize is that you give them a base recipe and it’s up to them how they tweak it. 90 seconds later- I got a FLUFFY roll, perfectly sized. Not crumbly at all, like seriously AT ALL. Will be making these possibly more than I should lol thank you Joe ❤️🤗🤗🤗
Made two of these for Christmas morning. They were tasty, maybe resembled more the taste of a coffee cake rather than cinnamon roll, but delicious either way. I baked them in the oven so they would have a browned crust. To make them even more grand, I added about a tablespoon of cream cheese to the icing....cream cheese frosting, why not? Your body just doesnt like it... But go moderate to slow and the effects greatly diminish. I use Swerve in my Peanut Butter Ice Cream with no issues.
Omg I wasn't expecting this to turn out so yummy! My roll was bubbly and wet when it was cooking in the microwave (I used a clear cup so I could see what's going on). And then what I did was pop it into my toaster oven for another 10 mins and my oh my! It was crusty on the top and just the right crumble on the insides!

Have you tried to read your ketones after eating one of these like say 30 minutes after? I think once I get to my goal weight that is when I'm going to start experimenting with these recipes. For now, I'm extremely clean keto. No fake sugar, no carbs at all outside of veggies. I've read that even the substitute sugar can spike insulin if you ingest too much. I started at 186 5 weeks ago, down to 175 with my goal weight between 165 - 170. At that time I'll look at these recipes since they do provide more options.
If you add a bit of yeast (strictly for flavor), it should taste more like baked goods. Just a suggestion. Thank you for the smaller portion size to avoid overeating.

Susan Beach you only need to proof it if it needs to make bubbles for lift. Since there is no gluten, you can’t get lift with yeast. It’s only for flavoring. Just add it straight to the dry ingredients.
WOW 🤩 made this tonight after we came from a convenience store and my boyfriend bought a krispy cream cinnamon roll and I had a craving, I wish I could attach a picture I cut my roll into half before I baked it so I have 1 for tomorrow with coffee and I used tablespoon confection swerve coconut milk and 1 tablespoon of MASCARPONE…..WOWZA YES!!

I found Bob's Red Mill xanthan gum at Natural Grocers. I put it in a glass jar after I opened it. I use it a lot, but it's lasting forever.

Swerve is toooo expensive, so much so that I am just thinking of having a cheat meal when I want a cinnamon roll.
We buy the bag of granulated erythritol at Wal-Mart for cheaper, when it calls for confectioners then I put some in a coffee grinder. 1/4 cup of granulated = 1/2 cup of confectioners when put in the coffee grinder.

Joe Duff. I just made this. OMG it is amazing. I will be making it a lot more often. I have started Keto about a month ago. The first couple weeks was rough. Craving sweets. I have been doing really good. But for some reason today I was craving something sweet, which has not been happening. So I made this today. I had a few raspberries and the icing that comes with it. Question, have you ever messed with baking using Allulose? From what I understand, it has a great deal of similarity to conventional sugar as it pertains to how it behaves in baked goods.

Supposedly xylitol is closer in taste to sugar BUT do not let pets, dogs especially, get ANY bc it is deadly in small quantities. Dr. Berg has a video he mentioned all of that in but I have no clue which video bc it's been quite a while & way too many videos in btwn then & now. I think he said it also acts like sugar. I know crystal erythritol can even be bruleéd (torched). Good luck!
Xylitol + sorbitol is probably why I prefer Trident gum taste over any other sf gum or mint.
I hate almond flour so I've been substituting with coconut flour & it comes out great also

I know.. Joe has mentioned so many times Kirkland brand almond flour is the best. And about a year ago keto connect did a Costco Hall and I'm like I don't have a Costco around me I only have Sam's and BJ's. I live in upstate New York that's all we have and I noticed he had wax paper from Wegmans too and Wegmans is a really good store and I don't have one near me either... So not fair 😭😭😭. 😂🤣😂 ☺️

Just made this and it was great! Loved having a Keto dessert that actually tastes good for once.
After a few interations with the same ingredients.
Use his exact gram measurements. But dial back the almond flower 3 grams. Add 2 more grams of swerve in the dry ingredients. Egg size is important. Use 2 more grams of butter. The cup method works very well. As the cooking spray keeps it moist.
