    Great recipe, will try it right now. Just one question though: why did you put the cardboard sheets between the small and the big mould? Wouldn't be the small mould enough or would it lose its shape during baking? Thanks

      O molde tradicional para panificação O bolo Castella é uma caixa de madeira sem fundo.
      Onde obter um molde de madeira Castella?
      Você poderia comprar um, fazer um, ou improvisar com o meu método. Eu coloco a panela segurando a massa em uma panela maior, e há papelão ondulado dobrado no espaço entre as duas panelas. Para evitar que o papelão pegue fogo no forno e depois queime a casa, enrolei-o em papel alumínio.
      Depois de obter o molde ordenado, você precisa escolher uma receita. Qual você deve ir para? Mina, claro!

      Há, claro, mel no bolo de mel Castella. Quantos? Apenas 20 g, o suficiente para dar sabor ao bolo, mas não torná-lo pegajoso. O mel é batido na massa depois das gemas.
      Depois do mel vem a farinha de pão. Quanto menos farinha houver, mais macio será o bolo.
      A última coisa adicionada à massa é o leite. Ao dobrá-lo nos outros ingredientes, eu bato a tigela contra a bancada de vez em quando para ajudar a remover grandes bolhas de ar.
      Na metade da mixagem, deixei o batedor descansar por alguns instantes. Talvez pensando que a costa é clara, algumas bolhas de ar desavisadas sobem à superfície. E é quando eu cochilo. Bang! Bang! Eu sou tão sorrateira, sim?
      Transferir a massa para a forma de bolo me dá outra chance de pegar aquelas bolhas desagradáveis. Eu despejo devagar, de modo que algumas das grandes bolhas estouram quando saem da tigela.
      O que eu faço antes da panela entrar no forno?
      Sim, bang bang! É tolerância zero para o inimigo # 1 do bolo de Castella.
      Depois que o bolo é feito, eu deixo cair a panela de 1 pé de altura para evitar que ela encolha excessivamente enquanto esfria. Este é o truque mais legal que eu já vi na confecção de bolos!
      Aqui está outro bom truque: inverta a panela e deixe descansar sobre uma tábua de cortar madeira por alguns instantes. Isso ajuda a manter a parte superior do bolo plana e lisa.

    کیک اسفنجی تون عالی بود . میشه اندازه مواد و سایز قالب رو هم بگید .. خیلی ممنون می شوم که جواب سوالم رو بهم بدهید . و چقدر تو فر باید بزاریم و با چه درجه ای ..‌ خیلی عالی بود اون کیک تون .

    What's the point of taking the time of getting the stuff peaks, folding in everything if you're just going to slam the batter and pop all the air bubbles?

      because beating egg whites till you get stiff peaks makes the cake fluffier, but you don't want big air bubbles in your cake, that's why she also pours it slowly, so remaining bubbles will pop on their own.
