Brown Shy Guys will, once they fall off a platform and land on a new one, start moving in your direction and keep going until they hit a wall or fall again; that's why they're seemingly so dangerous in sand areas. Snifits though, who knows. They seem random to me.
The deadliest enemy in Super Mario Odyssey in my opinion is the T-Rex found in the Wooden Kingdom (and yes there is a T-Rex in the Wooden Kingdom and where you find it is certain place you have to fall in)

Great vid! I feel like the huge spiky drill things in Super Mario World (SNES) deserve a mention here. Most go up and down and will insta kill Mario every time. Died to those soooo many times.
On SMB1 the bloopers never kill me. The way to completely avoid them is by going under them as they can't hit you because they will always stay above you. Fire bars also very rarely kill me, as I know their patterns and they are easy to predict. But you know what does kill me more than anything else in the entire game combined? The bad controls and physics that make me fall down holes. The one thing that you can't avoid no matter what.
The U-Foe in SMO is actually pretty easy to beat if you know how to time your Long Jumps! Simply climb up the block wall directly behind the U-Foe, turn around, and wait for the U-Foe to come close enough to Long Jump over to it and land on top of it. Rinse and repeat.
You should do some videos exploring the Mario and Luigi RPG games. These games have a wide variety of topics to talk about. Oh and Donkey Kong Country also could another topic you can talk about.
The biggest issue I had with SMB2 wasn't so much the enemies as it was the placement of enemies especially with sniff its. As for Mario 3, that freaking Boss Bass....still gives me nightmares

I always thought the reason enemies that crush you in the galaxy games insta kill you is because they lowered the amount of life you have, in 64 it caused 3 damage and in galaxy, without the life shroom, you only have 3 life. Basically, they didn't get stronger, Mario got weaker to help balance the game's difficulty around a more mobile and versatile moveset
Smb 1 has an enemy that kills you in one hit no matter how much you prepare for it and you could of collected every single power up available to you and it would still insta kill you The first gomba
