I made this recipe today with lupin flour in my Philips Pasta Maker using 110 g of water and it turned out great. I made spaghetti (the thicker ones) and the only issue was that I overestimated the cooking time - 30 seconds was too much, next time I'll try 20 seconds or even less (I suppose it depends on how thin the pasta is). Other than that - glorious pasta! Thank you for this recipe!

I have made it...I tried the lupin flour and then coconut. Had to hand roll it so it was perhaps a bit thick. We won't mention my pasta maker...it will be going to the tip. I liked it so much, I might invest in a new machine😄 can't decide on my favourite but I possibly preferred the texture of the coconut. Just the coconut flavour puts me off a bit but now I know, I will make a flavoursome sauce to eat with it and disguise it slightly. I never have a problem eating a Bounty so I can't understand it🤣. Thank you so much for introducing lupen flour! I attempted the noodles without the binding agent such as xantham gum, it was a flop but I had leftover dough and was able to make one of my favorite Indian flatbread with it. So healthy and delicious! ❤

Made this today with xantan gum. Have no pasta machine but I’ll have to get one. Nice and supple but because I didn’t roll enough they were thick snd doughy. Still, i can see this being amazing once I do it right :p Thanks!!

Love your recipes! For this one, I made mung beans flour by passing whole little beans in my spice pulverizor. I obtained a very fine greenish powder. Do you think it could replace the lupin flour? and another question: how many carbs would one recipe represent?
I did try the recipe with my Kitchen aid mixer and also my Kitchen Aid pasta roller and cutter attachments. I am drying the rest to use another day. I really do like this so much. Now to try to figure out the carb count......

you are a GODESS !!! I've been wondering for months if I can just use gluten (aka wheat protein) to add that missing ingredient in pasta or bread and here I find you again !! You don't just make vegan keto possible, but you make it amazing !! I keep telling people that you can make even vegan keto variations of foods, that actually end up tasting even better than the originals ! but then, with fully unclogged arteries and happy healthy gut microbiota, you defintely start to taste things differently and crave healthy foods like there's no tomorrow. I just love your recipes soo much ! Every time I make one I can feel my body thanking me for the full nutrition and deliciousness of it all ! Now that's actual satisfaction ! Excellent, going to try this this weekend ... but small tip, add the EVOO after the sauce --- if it's anything like regular pasta the tagliatelle will absorb the sauce better that way.

I never knew there was a difference between noodles and pasta 'til you mentioned it. So now I've looked it up. It appears that: noodles are cut and have salt while pasta is extruded through a mold and don't have salt; one is used moist, the other dried dried; common wheat flour vs durum ( don't know where the keto flours fall) etc. Anyway. Great recipe (but is it actually for noodles if that matters) and directions. I learned something new. Now I have to find some of those ingredients. Thank you.

I tried this with coconut flour one, and failed. im not sure it's because of coconut flour brand or xantangum brand that i used. my dough turned out very wet, so i had to add a lot of gluten to a dough. after boiling half of its dough i knew this batch is failed, but i fried the other half cuz i didn't want to throw it away. it turned out ok! it wasn't crisp but it was fries ! I failed coconut flour one, but next time i will try oat fiber one :3!

Hi! I just made the pasta and it's really good! I used xantham gum because that's what I had but I will probably buy the konjac powder and try it. My dough was VERY hard and sticky. I added a tbsp of water 3 times and kneaded some more but still, the dough was extremely hard and sticky. I rolled it out as best I could (used muscles I didn't know I had!) and when I put it through the pasta roller, it tore the pasta and stuck to the rollers- this after putting a very thick coat of lupin flour. What am I doing wrong? I can't tell by the video what texture the dough should be. Any insight? Thanks!!
The dough is slightly firmer than regular pasta dough, but it shouldn't be sticky if the water/flour ratio is correct (recipe in the description box). Make sure you dust the dough before feeding through the pasta maker. Also use the right setting, if the dough is too thick to go through it will crunch up and stick. Practice makes perfect :)

Yes soya flour should work quite well as it’s really fine and provides binding as well.
