SUCCESS IN WARMING UP BY ITSELF! I wanted to test out, warming up just the pasta by itself. I had a little bit of water in a frypan and moved it around for just a minute or two. It was perfect. So, if for some reason you don’t want to have a sauce on your noodles, (we were going to have pesto), then this is a great way. My husband thinks that these taste like egg noodles. And we are all excited to have them tonight.
You’ve knocked another one out of the park! Another miracle I never dreamed possible. In Korea there’s a tool used for slicing green onions that I’m gonna try using it to speed up the process of slicing the pasta - after I get moved into my new place. Can’t wait.

OMG....I just made this "pasta" a few hours ago. I can not believe how good it is. I felt like I was eating regular pasta. I did add a good pinch of salt to the batter as the pasta would not be boiled in salted water. Used half with Raos Marinara sauce. Saved half to have with Alfredo sauce. And am excited to cut the "pasta sheet" into Lasagna noodles as well to make with Ricotta & Mozzarella. THANK YOU SO MUCH for this recipe. He also had a stroke so it’s hard to explain things to him sometimes and he doesn’t always understand why he can’t have something. He loves fettuccine Alfredo and can’t have it the traditional way. We bought 2 silicone mats today, the powdered gelatin and the Parmesan cheese to try it that way also. We already have almond and coconut flour and the cream cheese. Thank you again. Some recipes that people have are not easy to do or the ingredients are not easy to find or are very expensive.

I had to tell him that I only made what the recipe called for because I was trying it out and wanted to make sure he liked it. Next time I will have to make double the recipe!! Mel thank you so much. Just tried the almond flour recipe with my Alfredo sauce and it was delicious. I followed your instructions exactly but my "noodles" were a bit soft and broke easily. I think I'll try baking a little longer next time. It still worked and for that I am grateful 😊

Wow this is the most easiest keto pasta to make. No more kneeling, rolling the dough sheets, putting it through the manual pasta machine and then dealing with all the dishes to wash up after. 😍
@@CookwithMel1 cutting them was easiest bit. Using them for Lasagna is next and video on other ideas for these sheet just made lunches more interesting. You’re champ Mel. @@CookwithMel1 so I made 2 batches of the almond version. I used half xanthum Gum in place of gelatin cause that’s what I had on hand. I used 2 whole eggs and a yolk (cause I had separated some for something else and don’t like wasting them). I added about a table spoon whipping cream to make up for the extra missing egg white. I think they turned out good!
I made this and although the noodles broke apart before I could get them in sauce they were wonderful. I made sauce with roasted tomatoes and garlic from my garden to top the noodles. Ty for this recipe

Great minds think alike ! I have been making lasagna sheets out of a couple of eggs and spinach, the exact way you cook in the oven! It turns out great and very green :D I will think about incorporating gelatin in order to upp the protein ! ;)

Recommend you break up oxalate with Organic Stone Breakers Tea; tastes great too, I mix equal parts to green tea, (TakingFlightOnWingssOfLight Apothecary).

In the beginning I used to like the no flour better because I used to think that it was carb less. However, the coconut one has fiber, which in my concept it’s even healthier! Hi Mel, made the almond flour version of this pasta tonite and we had ricotta & spinach cannelloni/manicotti (?)………….it was delicious 😋. The pasta didn’t collapse and had a nice “bite” when eaten …. I listened to the whole thing in 75% speed and wrote out the directions. In case it helps someone with less typing: Directions Into a blender, add liquids first, Add eggs,. Then olive oil, and softened cream cheese. Must be softened cream cheese so no lumps. Add almond flour. And then zanathan gum. Before blending, give it a quick shake (she used a bullet style). Some of the flour gets caught at the other end. Blend 10 seconds. Another shake, and blend again. Use a baking (1/2) sheet size), lined with silicone mat. Pour batter into the middle. The batter is enough for this pan. You can either tilt your baking sheet to move the batter or use something flat like a pancake turner. Spread the batter around. Make the edges ok first, before evening out the texture. Then even out any gaps or thin spots. Try to stay on the silicone mat. Tilt the pan to even out the texture and fill in thin spots. Bake in the preheated 284F/140C/GAS MARK 1 oven for exactly 10 minutes. Then cool for 10 minutes. It cools and will be removed in one sheet. So let it cool and solidify. To remove it, lift the silicone mat and lift the edges first all around. peel the sheet away carefully. Put it on your cutting board to make shapes. You can do fettucine, spaghetti, lasagna noodles… You can cut any rough or burnt edges off. You can cut it straight, or roll it up gently/ loosely, so it doesn’t crack. Cut thin slices through the roll. Heat pasta to the prepared sauce.
Thanks Diana. Leftovers would be the same as other meals, cover with Saran or cling wrap. I also make these ahead to freeze. I wrap the whole sheet and freeze. Then defrost naturally.

Hi Mel, This looks fabulous and super-easy! I will try this next week. I do have a question regarding the macros and the servings. When you say "slice", what does that mean? When you said slice my mind went to each cut/slice that you made. Are you referring to the entire sheet that is baked or is it referring to another measurement?
I must have made a mistake. Each pasta sheet is two servings. That's how I worked out the nutritional info anyways. The whole sheet would serve 2, it's a large serving so you may not even need that much. Thanks for letting me know, I will correct that. Excited for you to have pasta!!
Have you tried the recipes without the cream cheese? I have a dairy allergy and also a sensitivity to almond flour so am looking for an egg/coconut flour pasta recipe with a binder like flaxseed, etc. Thank you. Looks great!

I am so over the top excited about this pasta! It’s just so nice to have something that’s not fat head though with too much cheese or too much almond flour. I do have one question please: if you can make this into lasagna will it bake in the oven without falling apart just like real lasagna?
Hello lovely to meet you Kim. Given that your lasagna sauce and noodles are both cooked before it goes in the oven, you would only need to melt/grill the cheese...say about 10 minutes. So no I don't think it will melt.
@@kimhenderson250 can u set it to just past the 275 mark? Put your pasta in the oven and when the 10 minutes are up touch it in the middle of the pan. If it's still uncooked cook for another 2 minutes
I made a version of the flourless one and it came out identical to real lasagna. Baked for 20 mins and broiled at end. Only difference in recipe was I add 1 tablespoon of pork grinds/no oil but im sure its identical to this. Oh and double batch of noodle to fill a 9x12 lasagna perfectly. I tried a "palm of heart" lasagna noodle and not like real thing at all, stay clear.

Mel thank you so much. Just tried the almond flour recipe with my Alfredo sauce and it was delicious. I followed your instructions exactly but my "noodles" were a bit soft and broke easily. I think I'll try baking a little longer next time. It still worked and for that I am grateful 😊

Wow this is the most easiest keto pasta to make. No more kneeling, rolling the dough sheets, putting it through the manual pasta machine and then dealing with all the dishes to wash up after. 😍

Thanks for sharing these recipes! I just started experimenting with keto pasta, and have so far only made the one Anita from Ketogenic Woman makes with cooked chicken, egg whites and a whole egg. Similar process and turns out well also.

@@CookwithMel1 so I made 2 batches of the almond version. I used half xanthum Gum in place of gelatin cause that’s what I had on hand. I used 2 whole eggs and a yolk (cause I had separated some for something else and don’t like wasting them). I added about a table spoon whipping cream to make up for the extra missing egg white. I think they turned out good!

I made this and although the noodles broke apart before I could get them in sauce they were wonderful. I made sauce with roasted tomatoes and garlic from my garden to top the noodles. Ty for this recipe

Great minds think alike ! I have been making lasagna sheets out of a couple of eggs and spinach, the exact way you cook in the oven! It turns out great and very green :D I will think about incorporating gelatin in order to upp the protein ! ;)

Recommend you break up oxalate with Organic Stone Breakers Tea; tastes great too, I mix equal parts to green tea, (TakingFlightOnWingssOfLight Apothecary).

In the beginning I used to like the no flour better because I used to think that it was carb less. However, the coconut one has fiber, which in my concept it’s even healthier! But you’re the savior genius that have helped me a lot when I felt helpless thinking that I couldn’t enjoy pasta which I love ❤️ so much!

Hi Mel, made the almond flour version of this pasta tonite and we had ricotta & spinach cannelloni/manicotti (?)………….it was delicious 😋. The pasta didn’t collapse and had a nice “bite” when eaten …. Yummm .

I listened to the whole thing in 75% speed and wrote out the directions. In case it helps someone with less typing:
Directions
Into a blender, add liquids first, Add eggs,. Then olive oil, and softened cream cheese. Must be softened cream cheese so no lumps. Add almond flour. And then zanathan gum.
Before blending, give it a quick shake (she used a bullet style). Some of the flour gets caught at the other end. Blend 10 seconds. Another shake, and blend again.
Use a baking (1/2) sheet size), lined with silicone mat. Pour batter into the middle. The batter is enough for this pan. You can either tilt your baking sheet to move the batter or use something flat like a pancake turner. Spread the batter around. Make the edges ok first, before evening out the texture. Then even out any gaps or thin spots. Try to stay on the silicone mat.
Tilt the pan to even out the texture and fill in thin spots.
Bake in the preheated 284F/140C/GAS MARK 1 oven for exactly 10 minutes. Then cool for 10 minutes. It cools and will be removed in one sheet. So let it cool and solidify.
To remove it, lift the silicone mat and lift the edges first all around. peel the sheet away carefully. Put it on your cutting board to make shapes. You can do fettucine, spaghetti, lasagna noodles… You can cut any rough or burnt edges off.
You can cut it straight, or roll it up gently/ loosely, so it doesn’t crack. Cut thin slices through the roll.
Heat pasta to the prepared sauce.

Thanks Diana. Leftovers would be the same as other meals, cover with Saran or cling wrap. I also make these ahead to freeze. I wrap the whole sheet and freeze. Then defrost naturally.

This looks fabulous and super-easy! I will try this next week. I do have a question regarding the macros and the servings. When you say "slice", what does that mean? When you said slice my mind went to each cut/slice that you made. Are you referring to the entire sheet that is baked or is it referring to another measurement?
I must have made a mistake. Each pasta sheet is two servings. That's how I worked out the nutritional info anyways. The whole sheet would serve 2, it's a large serving so you may not even need that much. Thanks for letting me know, I will correct that. Excited for you to have pasta!!

I am so over the top excited about this pasta! It’s just so nice to have something that’s not fat head though with too much cheese or too much almond flour. I do have one question please: if you can make this into lasagna will it bake in the oven without falling apart just like real lasagna?
Hello lovely to meet you Kim. Given that your lasagna sauce and noodles are both cooked before it goes in the oven, you would only need to melt/grill the cheese...say about 10 minutes. So no I don't think it will melt.
I am making this now but I just do not understand how to get my oven to 284°. I have one of the gas double ovens but I can either do 275 or300°
@@kimhenderson250 can u set it to just past the 275 mark? Put your pasta in the oven and when the 10 minutes are up touch it in the middle of the pan. If it's still uncooked cook for another 2 minutes
I made a version of the flourless one and it came out identical to real lasagna. Baked for 20 mins and broiled at end. Only difference in recipe was I add 1 tablespoon of pork grinds/no oil but im sure its identical to this. Oh and double batch of noodle to fill a 9x12 lasagna perfectly. I tried a "palm of heart" lasagna noodle and not like real thing at all, stay clear.

Yes you can but you will need to stick the paper to the pan with grease so it's smooth. Have an overlap so it's easy to remove.
