    I actually loved your "failed" tofu. It looks rustic and delicious. Very authentic. Not at all unappetizing. Food is supposed to be real, like you and your family in the videos. I love your cooking bloopers and your positive, cheerful personality. Thank you for all the work you do and for raising another generation of healthy and sound people. ❤

    I LOVE umeboshi, but I'm the only one who eats them, so I didn't buy them often. Then I found out they last a REALLY long time in the refrigerator, so now I have some!! 😍

      Great!! Yes, it's a preservative food. Here is my other favorite recipe using umeboshi. I Hope you will enjoy it! www.shinagawa-japanese-cooking.com/post/simmered-mushrooms-with-pickled-plum-sauce

    Looks yummy! Suggestion: after slicing tofu, place the slices on a clean tea towel, then fold the towel and gently press most of the water out. Dry the tofu out even more by sprinkling on a good shake of onion powder, nutritional yeast, or cornstarch (or all three) before frying.

    Another great dish idea for my bento - spicy edamame! I've tried the original teriyaki tofu recipe, which is really good hot or cold. I've also had the carrot salad which is very simple and delicious - another great dish I can make using the meal prep method we just learned at the recent Cooking Session at the Ikigai Cooking Club. 🥰

    It is hard for me to find extra-firm tofu as well even in Asian grocery stores! It’s mainly just common in America but I use firm tofu and press it for 30mins with two plates and all the water drains out so the sauce can marinate well~~I recently also baked firm tofu with soy sauce and sesame oil it turned out amazing and super crunchy!

    Thank you for showing vegan options. I purchased your box on Kokoro website and fell in love with the natto koji paste, I love that esp. on rice. I have learned so much from watching your channel, you have opened up a whole new way of eating for me, and I feel so much better, from what I have learned thru your channel about Japanese culture and cuisine. 💚

    • @MiwasJapaneseCooking
      @MiwasJapaneseCooking  ปีที่แล้ว +2

      You can pan fry it with a splash of water. then close to steam it. I found it's easy to get burnt^^

    Simply pack everything in the bento like a tight jigsaw puzzle hahaha best way I can descripe it :)
    One favourite here is cabbage with a dressing of umeboshi. I make it by mincing umeboshi and mix with mayo but that is not vegan. Of course you can use vegan mayo, but perhaps some oil and tofu mixed with the ume works as well as vegan option (or just ume and oil). It's great in summer but I like it whole year round. You can blanch teh cabbage but I use it raw. None stick works a lot better with tofu :) With firm tofu I always make my own ganmodoki, that way you can also make sure it is vegan. I like to add carrots, green beans, shiitake (dried ones that soaked or shitake tsukudani) and season with either shiitake/mushroom powder or powdered kombu dashi. It is also great to add some soaked and chopped kombu here. You can use the kombu from making dashi for soup. Or make kombu no tsukudani. That is so good with rice! But the veggie dish I always come back to is gobo kinpira ^.^
    Seeing all these side dishes makes me really excited to come back to Tokyo! I'll finally be back this summer.

      I love mayo and umeboshi too!!!! My mum used to make pasta salad with shiso, tuna, umeboshi and mayo. it was gooood!
      Thank you so much for all of your creative ideas!

    It's been suggested, instead of pressing tofu, microwave it. It helps evaporate tofu moisture, make it slightly firmer, and prevents the demolition of the tofu structure. :D
