      @@nitya4698 lots of legumes,vegetables, grains...our traditional "pancake like flatbread" is made of teff which is a tiny grain that's fermented and baked to accompany our stews

      @@NaveenKumar-ti1fc oh I have nothing against soy milk tbh since I am lactose intolerant and milk causes acid reflux. But to bring such a huge change would require massive funds not to mention people have sentiment connected to cow milk and so. Soy milk can get cheaper if only it becomes commonly produced. But as I said things aren't that cut and dry.

      1) we use litre n kgs 😂
      2) by going vegan how would YOU save water. Cows n bufflow will drink water anyways. Nobody drinks water for timepass.

    Me as a broke vegan Indian:
    Breakfast: Poha, veggie chowmein, paratha with pickle, besan chilla, etc.
    Lunch: Veg thali, rajma chawal, soybean curry with roti, etc.
    Snacks: Phuchka, samosa, corn chaat, etc.
    Dinner: Khichdi, roti sabji, daal chawal, etc.
    You don't always need cashews or tofu to be vegan.
    Indian cuisine has a lot of vegan options available.

      True, but Tofu is a great replacement for Paneer, and Indians love Cashews, in fact a lot of Korma uses cashew paste

      We usually use coconut milk to thicken. Cashew isn't used in daily dishes like matar paneer. Coconut milk is a cheaper alternative than cashew milk.

      And tofu is something I've written as "expensive" because many Indian prefer to make paneer at home rather than buying a block of paneer. But preparing firm tofu at home isn't easy. It is possible but isn't easy. So people end up purchasing and hence isn't available readily to the local mass of India.

    Being vegan in India is quite easy, especially because I was born in an already vegetarian family so I’ve never had meat and don’t crave it even after turning vegan.

    I'm so happy with all the love Indian meals are getting. I feel the Indian chef here even put some westernization in the recipe by calling it a frittata instead of cheela and putting it in the oven. In most indian households we just make it on the pan by roasting it on both sides.

      After living in India for a while I was so expecting her to say it's a cheela, but then nope. And as far as I have seen avocados are expensive here...
      Wondering if the cashew cream can be made cheaper by using a proportion of melon seeds with the cashews... Any pointers?

    Just letting everyone know, not all packaged kimchi is vegan. Traditional and some packaged kimchi contains jeotgal (salted seafood), and fish sauce.
    If you plan to make your own kimchi, you can skip the jeotgal, and add extra soy sauce instead of fish sauce

      yeah because we really don't see vegan things as meat or milk substitute. they have their own taste and way to eat. I guess it's because Americans eat alot of meat in their daily cuisine so they substitute vegan things into it and our daily cuisines are already vegan/ vegetarian most of the time

      But we do have in fact a lot of dairy based cuisine. Specially North India, the food is dairy or milk based. So you can call most indian cuisine as following strict vegetarianism, but it's not vegan :)

      Please report about the recent HUGE controversy regarding Amul (India dairy company) *after PETA’s suggestion to start selling vegan milk.* Some BJP clowns somehow managed to convince themselves that this suggestion was an “anti-national” attack against India and that it is a “conspiracy plot by USA to destroy India’s economy”. These are the same brainless dangerous hypocrite clowns that attack people for eating beef (gau rakshas) *but still consume dairy products* completely IGNORING the fact that today’s Dairy industry causes just as much suffering to cows as the beef industry does *if not more* .

      @@anshumaansinghthakur A single cow used for milk can drink up to 50 gallons of water per day-or twice that amount in hot weather-and it takes 683 gallons of water to produce just 1 gallon of cow milk. while producing 1 gallon of soy milk only requires 50 gallons of water.
      By going vegan, one person can save approximately 219,000 gallons of water a year. ~
      Also The fodder grown for cattle occupies 5 times or more the land required than producing soybeans. The rapidly shifting trend towards Veganism automatically give enough time for farmers to switch to other crops (or soy) whenever in demand. Don't worry about farmer, it's a fake plot to defend dairy cruelty
      Demand for vegan means world plant milk/dairy alternatives market will be USD$52.58 billion by 2028. Plants in vegan milks are abundant in India. It’s Good news for Indian farmers. Unilever is into vegan food. Why can't Amul? Smart businesses respond to trends.

      @@NaveenKumar-ti1fc Amul and Unilever are not comparable. The dairy industry in India is different from that of the US. Amul is a co-operative they work with several small dairy farmers. Those farmers could be people who own only one or two cows/buffalos and that could be their sole source of income. The way small local farmers raise their cattle is different from a large commercial farm in the US. Not an apple to apple comparison.

Please know about the dairy and milk products u are consuming know about the whole process of dairy industry and cruelty behind the milk (in India) i would recommend to watch these videos- "the unholy cattle of India" & "deadly dairy" 🙏
      Did u even think of how much pain a cow or buffalo experiences when her body is used for repeated pregnancy due to the demand for the milk, and what happens to the cow or buffalo when she is no longer able to produce milk.
      All the cows and buffaloes are either sent to slaughter houses (katal khane) or they are left on the road to starve, eat plastic garbage and live a meserable life (we all know the life of cattles on the road in India) and they ultimately die from starvation, poisoning, diseases, or accident. Please research on it and spread the awareness in India. Proud to be Vegan.

    Observation: The Indian and Korean meals were more natural and less processed than the American ones. Also, the American meals had more substitions which kinda represents in a way the quality and length of life. Indians and Koreans are known for living long, healthy lives whereas Americans are known more for obesity. Just an observation
    EDIT: It's my opinion. I did not come with facts and evidence, as I said, it was an observation made from my point of view and experience.

      ​@@vinithakumar7957 I think it's our relentless version of capitalism and overall focus on wealth accrual by the few at the expense of most individuals and communities. "Convenience" is a big deal here. And a lot of us have really lost our connection to where food comes from. If the person cooking American food had gone back farther into our history, she could have veganized some wonderful from-scratch meals like our great-grandparents used to make.
      Packaged foods last a lot longer on the shelf, so if your enormous corporate conglomerate is trying to profit off a plant anyone could easily just grow, you have to find a way to make it more convenient so you can sell it at a higher price. It also needs to last a long time and travel well to get all the way across the country. Once you dry and pulverize your garlic or onions or herbs, etc, you then call sell it to the consumer at a huge markup. Any extra can be used by your subsidiary companies in processed snacks, meals, etc. Those subsidiaries will cut as many corners as they can in order to drive up their profits, so quality is lost and we collectively forgot what good food is supposed to taste like. These days there are a lot of people trying to reverse this trend for themselves and their communities, but corporations are still driven by the bottom line. In fact, did you know that American shareholders can sue a company if they feel the company failed to maximize profits? It's a disaster.
      And why do we buy this stuff? We just have a very individualistic consumerist culture. I don't know, other than that. Really effective advertising? We're just suckers? Some areas have super short growing seasons, making fresh food more expensive than packaged. Almost all adults here work outside the home (2-3 jobs in many cases) and we cook less than any previous generations.

      Oh, one more note about all the substitutions: The roots of colonial American food culture were very heavy on meat and dairy, so most of our traditional meals will need some kind of subs. They don't have to be made in a lab like Impossible meat, but it's hard for me to think of American dishes without meat or dairy. Of course, the food cultures of the Native American tribes who predated Europeans on the continent had no dairy that I'm aware of and overall were much more focused on plants for food.

      @@O2life that's really sad. They make it seem like America is a desert and you can't grow fresh stuff there... I read in another TH-cam video's comment about CSA farms in USA where local farmers near you can send freshly grown stuff to you. Try that if you live in USA. (Please do your research. I'm not 100% sure, as I said I read a comment in another video but hope it helps)

      @@clorozweepvmundosalazar5153 I love everything Korean but personally i think the vegan food at least, is not as great as Indian (no hate just a preference), Korean food is just a bunch of boiled veggies in water with some sprinkling of sauces/salt I just wish there was more seasoning and frying of onions and tomatoes. It looks amazing on plates but just not the same as I expected in my mouth.

And I was uncomfortable watching her put soy sauce, different kinds of wines and vinegars, etc in everything she made. What exactly are those things? Not good for the body I guess? Is there a way I can tell the chef or cook there to make my food without those if I visit those countries? Will my meals taste good then?

    In fairness what you call Indian and Korean 'vegan' are just traditional foods. American Vegan foods are modern trendy foods

      That's an overgeneralization. Part of the problem is it's difficult to figure out what's American considering American food is really just a hodgepodge of other cultures. Like most american vegan food seems like curry, stir fry, buddha bowls, mexican food in any way, pasta, etc. Not so foreign foods are like veggie burgers, salads, potato hashes, soups, oatmeal, baked goods, and smoothies. But to take out foreign inspired foods from a typical American's diet isn't accurate.

      Take a trip to puri Jagannath. The mahabhog chappan bhog constitutes only Indian vegetables.
      Middle class constitutes the majority in Indian population, which needs to be represented.
      When was the last time u actually saw middle being represented?

      @@sanskritipatel3943 I think that prior to being colonized the majority of African and Asian countries rarely ate meat. The term vegan didn't exist because they didn't feel the need to include animal products in their meals. That's probably why they tended to live much longer than Europeans too.

    The best part of Indian cuisine is that you don't have to veganise most of the dishes as its vegan on its own though it's called vegetarian

      There is no vegan tradition in India. Its a western concept.
      In our tradition food is divided into 3 types:
      Satvic : vegetarian and doesn't include onion and garlic (usually practised by people who do yoga and achieve Nirvana or Moksha)
      Rajasic : all food except non vegetarian also includes very spicy food.
      Tamasic : Non vegetarian food
      Our body types is also based on these qualities, if a persons body is of Tamasic quality he or she should avoid tamasic food to rejuvenate the body etc.
      Also the timing of food to eat is important, according to the tradition eat only between the time period of Sun rise and sun set, because it is said that our digestive fire is in sync with the sun, at noon our capacity to digest is at maximum.
      Eat the food grown in our surroundings, food grown in similar weather conditions as we live in is easy to assimilate in our body.
      There's also several combination of foods which shouldn't consume together etc.

      Nope. Indian food are vegetarian not vegan. We love our clarified butter (ghee), cottage cheese (paneer), milk, yogurt (curd), buttermilk and cheese. I don't know how it is in western countries but in India milk is collected from local farmers (most farmers has atleast 1 cow in India) and they treat the cows as a part of the family (we even celebrate their birthdays every year)
      P.S: Vegan substitutes for milk isn't healthy, infact alternative products for milk like soya milk, almond milk is injurious to health in long term if used regularly.

    We as indians never realised how we sometimes had completely vegan meals and how it's quite easy to be vegan. Im a non vegetarian but I love to eat vegetarian too. The snack options are the best in vegetarian.

    India's population (according to wikipedia) is about 40% vegetarian and most non vegetarians also eat generous amounts of veg foods so most of our foods is pretty delicious and super easy to convert to vegan versions

      Most non vegetarians at least here in Rajasthan are actually vegetarians 95% of the time in a year. They only eat meat (chicken, mutton) occasionally like on birthday parties etc

    Most of the Indian traditions and customs have deep rooted scientific reasoning to them. And with the food practice too, Indians are far ahead since ancient times. From serving food in banana leaves to having plant based food and avoiding beef. Indian culture is truly unique and respectable.

    When I became vegetarian as a child, my family started eating a ton of Indian food because there’s so much variety. Super high amounts of flavorful veggie options but also plenty of meat based dishes. Made things really easy for me growing up. I’m not vegan myself but it’s not surprising to me that there are some pretty simple substitutions

      Vegan is not just a new label. There is a lot of difference between vegetarians and vegans as vegetarians use lots of dairy products which is so unhealthy and vegans don't, which makes a huge difference in cooking, animal welfare and our health too.

    I'm Indian and was raised vegetarian. Am slowly transitioning to veganism. I literally have to change nothing in my diet because 90 percent of our cuisine is vegan in nature which includes everyday meals, all my favourite snacks, street food, etc. India is literally the best country in which to be vegan.

      It's just an option. It is common to eat aaloo parantha (like a pancake with savoury boiled potato filling) in India which is all carbs, as well as just something 'unhealthy' as Jalebi, for breakfast. There's always plenty to choose from in any culture.

I'm from South Africa, but we have a really big Indian population, especially around Durban and I absolutely love cooking and eating indian food... There was a really affordable and lovely Indian takeaway place that was completely vegetarian, and this video is really making me crave their biryani and curry

    Through Indian and Korean cuisine I've discovered such flavourful and pleasant to cook vegan dishes, that my family likes. Both provide different health benefits. As a person with digestion area problems, sensitive to spices and frying, it was surprising that actually the ingredients oftenly balance each other, so my stomach doesn't suffer, yet I'm perfectly nutritioned.

    Love this! In my experience, it seems like Asian food is the holy grail of vegan food. A lot of them can be easily veganized, especially Indian food. Bless them 😭🙏🏾 I think my favorite cuisines as a vegan are Chinese, Indian, and Italian or Mexican, hands down.

      Thats actually not true. Yes, we have a lot of vegetarian dishes, but it also really depends on where in India you are. If you're in the north, you'll see a lot of meat in the diets there

      America eats a LOT of meat- primarily because it’s so cheap here. In order to make “traditional” American foods vegan, you have to add a lot of substitutes :/

      Yes! I tasted some American dishes that were just meant to heat up or eat cold and it was disgusting. The food tasted like pure chemicals and had no texture. I am from Switzerland.

    Luckily, when I was in India, in places where there is tourism, you can find vegan food easily however, if you are in places where there's no much tourism, you can only eat chapati, rice, noodles, traditional dahl but for anything else you have to make sure there aren't any dairies in them. I think I also ate at a Hare Khrisna restaurant where they had both vegan and vegetarian.

      Vegan isn't hard to find here. You just have to search for dishes which doesn't have any dairy in it. South Indian food in this case is good

    In india the simplest lunch or dinner which is a roti (made from whole wheat flour that is mostly gluten free).sabzi dal or rice with sambar/rasam (lentils basically)and veggies is purely vegan. I feel that a vegan would find the greatest variety of vegan dishes in india

      I observed that sesame and seaweed are common ingredients in Korean food. Is it the norm or is it that she just chose dishes which uses sesame and seaweed?

      We call that dish as Kanji in Southern Part of India and there is various versions of making it. We use oorukgai (Southern Indian pickel - sesame oil, Red chilli powder, salt and any vegetables like raw mango, garlic, gooseberry, chillies, chick peas, lemon, citron so on or fish, prawn) along with it or moormilagai (salted dry chillies which are fried).

    For anyone unfamiliar with Hing, that is Hindi for Asefetida which is what I have seen in Western supermarkets.
    I personally found the Korean and Indian dishes so much more appetising than the American ones, they seemed to have more fresh ingredients and more complex flavours with all those wonderful spices. Would be interesting to see Rachel incorporate some of those flavours into American dishes :)

But brownie points for the effort of Westerners to try and adapt to veganism for the planet's well being.     this made me realize why I was having so much trouble being vegan in America while still eating whole foods. I have such a hard time thinking of vegan meals here because I try to base them off typical american meals and its just not working. definitely gonna take some inspiration from Indian and Korean food

    Regardless of what we eat through the dietary aspect of veganism, as long as we're opposing our fellow animals being bred, used, or killed we'll be giving them the basic respect they deserve as the unique individuals who they are. We just have to remember 'why' we're doing it and the 'how' usually becomes quite easy 👍

      I'm high-raw vegan because it's the most efficient for the body to process - less complex DNA is easier to break down into component parts, with no leftovers such as hormones that will be floating around my system. Plants are just as much our fellows though, so give thanks when you take their lives so they can become a part of you

    I’m really glad that they showed dal as one of the meal options. Normal dal and rice is such a staple and so quick to make (also just an added note that you can make dal in a single pot/cooker and add veg to it so it becomes healthier and easier to clean up)

    Wow the Dal Palak is extremely similar the way my mom (who’s Haitian) makes Mais Moulin…I wonder if there’s Indian influence there. Very interesting. This was cool to watch 💕
