I love making the small dishes and having such a variety, yet simple "mini" foods. I don't feel stuffed, like I used to, when I ate more of a western diet. haha! Thank you!! it's not the most beautiful atmosphere to film behind the scenes with lots of toys to keep them interested while I'm filming but as kids grow older, they are more interested in what I'm doing during filming . it's a joy!!
I love how you toast the mushrooms without oil, a very healthy way to reduce saturated fat. I use rice vinegar or balsamic vinegar for substituting mirin because I don't have it on hand. For one tablespoon of vinegar, add ½ teaspoon of sugar and substitute the mixture for the same amount of mirin.👍
I heard someone say once that mushrooms act like sponges so using oil affects their taste negatively for some reason and this is taste wise actually the best way to fry them

Toast is on top of the stove, Roast in the oven and grill over a flame. Hope that helps as always Love your videos and they make me hungry..now I need to incorporate them into my diet ❤️🌹❤️🦋❤️
I love how creative you can get with miso soup. Tonight I decided to make some using bonito(in the bag) to make the dashi. But first I sautéed onion, garlic and ginger in sesame oil(little bit) and then added frozen kale. I added the water and bonito bag and let cook a bit. Dash of soy sauce and a bit of sriracha(maybe a bit more than planned, my lips still burn ha). Took out the bonito bag and mixed miso in ladle with dashi stock until I could add to the pot. It was so good! I had rolled omelet slices wrapped in nori( leftover bits I put into the soup) and sprinkled with furikake. Only took 15 minutes to make and I have leftover miso to have with breakfast tomorrow. I enjoy your videos so much!! I always smile when you say Oh! Oishi!!! Lol. 🥰❤️

I would use toast in that context! Roast, bake, and broil are usually in an oven, with broil being at very high temperature (at least North American English. What NA English calls a 'broiler' in the oven, the Brits call a 'grill', whereas in NA English 'grill' refers usually to something cooked in a grill pan or on a barbecue.) Frying pan things are usually (pan)fried (or aforementioned 'grilled'), or stirfried, whereas small things like that that you aren't cooking very much are toasted. Honestly... don't worry about it. Not even English speakers can decide what means what, clearly! LOL.

Miwa, I’m not a vegan nor is anyone else in my family but these recipes can be made every day for any diet! They all look delicious and I plan on making all of them. Wonderful video full of useful info, cooking info and otherwise.
Wow did your boys eat it even with the mushrooms?? that is great! It would be a great onigiri filling as well I think (school bento :D ). Perhaps it wil also work with hijiki. When you said guess what I used I thought seaweed but also green onions or nira. If you want a kind of parmasan taste for the tomato one but vegan you can add some nutritional yeast. It's supposed to have that same savory taste. Or perhaps for a more Japanese idea some aonori instead of basil. Or switch the basil for shiso. Tomato and shiso go so well together. Since these are more like the soft furikake I wonder if it would be a good chijimi filling as well.
I have never seen nutritional yeast available for sale in Japan (except online, super expensive)-- Miwa, have you seen it anywhere? I'd like to use it to season popcorn!
It's amazing right?!!!! They were actually ok with mushrooms, but they didn't eat any other mushrooms in other dishes though😂I would love to try the one with shiso & tomato!! Thank you for your inspiration!

I see dried shiitaki mushrooms used a lot in place of bonito flakes
I'm sure some other types like oyster would work just as well if not better. But shiitake and bella mushrooms are more common dried in the US
