    Peanut Butter Banana Muffin Recipe
    Ingredients:
    Bananas, ripe: 3 (about 1 1/2 cups mashed)
    Eggs: 2
    Dairy-free Milk: 1/2 tablespoon (7.5ml)
    Vanilla Extract: 2 teaspoons (10ml)
    Natural Peanut Butter: 3/4 cup (180g)
    Pure Maple Syrup or Honey: 1/4 cup (60ml)
    Oat Flour or Gluten-free Flour: 1 cup (120g)
    Cinnamon: 1/2 teaspoon
    Baking Powder: 1 teaspoon
    Chocolate Chips: As desired
    Directions:
    1. Preheat your oven to 350°F (175°C). Line a muffin pan with baking cups or grease it to prevent sticking.
    2. In a mixing bowl, mash the ripe bananas using a fork or a masher until smooth.
    3. To the mashed bananas, add eggs, dairy-free milk, vanilla extract, natural peanut butter, and pure maple syrup (or honey). Whisk together until well combined.
    4. Add oat flour (or gluten-free flour), cinnamon, and baking powder to the wet mixture. Stir until all ingredients are fully incorporated. Optionally, switch to a spatula for easier mixing.
    5. Gently fold in the chocolate chips into the batter until evenly distributed.
    6. Evenly distribute the batter into the prepared muffin cups, filling each about 3/4 full.
    7. Place the muffin pan in the preheated oven and bake for 20 to 25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
    8. Once baked, remove the muffins from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
