Ingredients -
¼ Dry Coconut
3 Bay Leaves
5-6 Dried Red Chillies
1 tbsp Poppy Seeds
2 Stone Flowers
2-inches Cinnnamon Sticks
1 tbsp Coriander Seeds
4-5 Green Cardamom Pods
1 tbsp Cumin Seeds
4-5 Cloves
1 tsp Royal Cumin Seeds
1 Star Anise
1 blade Mace
1 Black Cardamom Pod
½ Nutmeg
1 tsp Fennel Seeds
2-3 tbsp Sorghum Flour
2 tbsp Oil
1 Onion (chopped)
10-15 Garlic Cloves (peeled)
2-inches Ginger (chopped)
1 Green Chilli
2-3 tbsp Coriander Leaves (chopped)
3 tbsp Oil
¼ tsp Asafoetida Powder
1 tsp Turmeric Powder
500 gms Chicken
4 tbsp Prepared Onion Mix
4 tbsp Prepared Saoji Mix
2 cups Hot Water

For those of you interested in making the paste, I did a little bit of research and found this:
"If you wish to make your masala into a paste, mix a tablespoon of oil in for each teaspoon of powder, or you can use equal parts of spice, oil and water."
Since we need enough oil for 4 tblspns of masala for this recipe, and 1 tblspn = 3 tspns, I used 12 tblspns of oil to make the paste.
So, how is this different from chettinad chicken?

I have all but 2 ingredients, stone flower and sorghum flour. Would it make a big difference if I skipped one and use let's say chickpea flower instead of the other one? BTW that's a lot of spices, you just kept adding more and more, haha. About the chicken skin, I noticed it's mostly removed in Indian cuisine. Is there a reason for this or just a regional preference? I usually remove it, too, when I cook Indian, but then I fry it without oil till it's crispy. It smells and tastes great, I wouldn't want to throw it away. It's rather fatty so I do not understand why it isn't used. Indian recipes don't shy away from adding extra oil, ghee, butter, or cream in a dish, so why not use the skin as well? And roasted chicken without skin that just isn't done in my region.
Yes, chicken skin adds soooo much flavour. I too fry the skins in an air fryer. Makes for a super tasty snack
No one can make saoji except Nagpuriya
Rule of thumb - you never make a saoji with broiler chicken, it should be country. This is not going to taste good at all.

Saoji chicken witnout chillipowder kaisi hosakthe hai. Not a good recepe.
I loved the curry but felt the spices are too much for my stomach and will endup in gastrointestinal issues. I'm looking forward to slightly customise the spices and oil to suit my gut.
Storing aside the dry masala is a good suggestion although it is basic and acts as a reminder.
Nagpur is the most underrated City in terms of Food.
I've travelled across the length and breadth of India.
Even the general street food in Nagpur is more powerful than complete punjab, north, south , east, etc.

you fucked up the onion we roast onion in open flame and you need to remove the carbon on the coconut otherwise the gravy gets bitter

Asafoetida Powder shouldn't be used if you have High blood pressure, or GI problems, also this is to replace onion and garlic (Which you have added) so shouldn't be noticed too much if not using it. :) (Also low blood pressure, and are on blood pressure medications)
