I have just made my first batch and followed your instructions to the letter, OMG 😱 they are fantastic. Maybe leave them for 10 minutes though as they are a tad hot. Think I’ll experiment with different favoured sausages for my next batch. Thank you 👏👏

@TheDevonshireCook-ct1je I buy a fantastic quality sausage meat in 1lb tubes ( they usually sell it in large sausage casing as opposed to small) from R Campbell & Sons in Leyburn, they're a very old family concern (150 years) and i don't think they'd mind posting. They have a website, look them up.

The skin on a sausage is to keep it whole when its fried or oven baked, it browns and makes the sausage delicious. When making a sausage roll, you are effectly using the pastry as a skin, therefore it wouldn't brown off, in fact it would be chewy and not nice. That's why you remove the skin. The pastry was shop bought flaky pastry. Hope that helps, cheers Simon 🙂

Hi Mark, thanks for your kind comments. Tescos puff pastry is superb. If you buy six fat large sausages and then skin them, cut the pastry in half long wise you can then stretch and roll them out and cook them how you pleased. Please don’t hesitate to ask me more and I’ll help you. Happy new year 🥳

@mikcor... I have one of those too, mine is a Sage oven or Breville in some markets. Be warned, it is an oven not an air fryer nor does it work like an airfryer but will perform in a similar manner as it has a fan on the right hand side moving the air from right to left. But if you want an airfryer then buy an air fryer not an oven. 👍
Buy some good quality butcher's pork mince (or buy some belly pork and mince it yourself). Weigh it and then add 2% of the weight of meat in salt, and 0·2% of the weight of meat in both pepper and sage. For 1,000g meat add 135g dried breadcrumbs and 300g cold water. Mix it all together well with your hands, then place it in a covered bowl and leave overnight in the fridge. This sausage meat is better than any ready-bought sausages and has the added benefit of you knowing exactly what is in it. Try it, you will not be disappointed.👍🏻
There's nothing weird in the UK about having a washing machine in the kitchen, that's completely normal. What's genuinely weird is you don't undertand that.....

We're going to use locally made Italian sausages that have lots of fennel ,garlic, and other herbs. The ones you've cooked look absolutely delicious.

Hi, yes I said 20 mins, the temperature for an air fryer is about 180, but it depends on the pastry you purchased. Hope this helps :) Simon

You can make a few more and freeze flat on a tray, then put them in a bag in the freezer to have later.

Yes it's a Sage Smart Oven Air Fryer, you can buy them from John Lewis in the UK. Hope that helps :)
