    I am so making these for Thanksgiving! Many decades ago, Pepperidge Farm made broccoli and cheddar cheese croquettes, but not with manchego. These will be even better. Manchego is right up there with my other favorite blue cheese.
    Back in 1963, I ws 13 y.o., my dad lived in Barcelona, working for Pan American Airways, dad, driver, brother and I went on a road trip to Madrid, "to get some culture". Stopped at every cathedral, castle, museum, art museum and bistro. I ate a manchego cheese and parma ham sandwich on warm fresh baguette, every single day for three weeks. I still drool thinking of it.

    I like that you mentioned you can use the broccoli stem for cooking. I also like that you gave an exact measurement for the chopped broccoli, 2 cups or 180 grams. A lot of recipes say "1 of this" or "1/2 of that" and it's better to give a volume or mass measurement to narrow it down to something more precise. Giving both helps. It doesn't have to be exact but for someone trying to replicate a dish it's nice to know you are fairly close. It might also be useful to suggest a cheaper alternative for manchego cheese. In Spain it might be affordable, but abroad it's a bit much. Maybe alternatives for young manchego like mozzarella, or older manchego like cheddar or monterey jack. You'd probably have better idea for substitutes. Thanks for your work, I have learned a lot from your videos. I make some of your dishes monthly.

    Those look absolutely delicious. A quick tip: after years of seasoning the bread crumbs like you do, I learned that for the best flavor to add the seasoning to the egg. It stays on whatever you are breading, doesn't burn the seasonings, and gives a nice even flavor.

    I'm definitely going to be making this! I love that it uses items I already have on hand. I was going to have steamed broccoli with cheese sauce to go with baked salmon, but this will make that simple meal fabulous! My son is going to be so surprised (and happy).
    As always, it is a joy to watch you create such delicious food. I can fool people into thinking I'm a much better cook than I am, hee hee! Thank you!

    Can you freeze them after rolling in bread crumbs? Before or after frying? Would love to be able to pull a few from the freezer and air fry for our dinner side or appetizer! Love your recipes and detailed directions. 👍👍

    Those look delicious, Albert. I'm guessing you could substitute cauliflower for broccoli, but what other vegetables would this technique work with?

    LOL. I’m watching TH-cam and eating Manchengo aged 6 months. Was at store today, looking for breadcrumbs, no luck, so I asked for “pan seco y polvo”. Was taken to the bread isle, when I seemed confuse she then said, te quieres pan rodillo? And I said yes. She was clearly irritated. Well I got the same tiny bag of bread crumbs you have.

    Help! My croquettes keep going flat in the frying pan even after putting the mixture in the freezer .. I don’t know what’s causing it not to keep its shape in the pan and looks more like a pancake. … did I just get the ratio of ingredients wrong or maybe too much cheese? Any advice thanks

    Great videos everything looks deliciosa .. im doing keto diet and im wondering if I can substitute the milk with heavy cream or almond milk and the all purpose flour with almond flour and lastly the breadcrumbs with keto breadcrumbs ( made from crushed pork rinds) what do you think ? Keep doing what your doing love it !

      In Spain you just eat them as is - no dipping sauce needed, as they're very rich & flavourful.
