You have so many wonderful vegetarian dishes, even eggless ones. You use minimum ingredients but explore a wide range of flavours. Thank you so much 🙂
Some suggestions: Add coarse sea salt when grinding garlic & parsley with mortar & pestle to achieve a finer texture marinade. Add vinegar on high heat around outside of mushrooms allowing majority to evaporate and not soak mushrooms which are effectively little sponges.

Mmm..these were great. I thought the vinegar was going to be too strong - it almost blinded me when I put it in the pan but it worked beautifully. Another use for my white wine vinegar besides salad dressing. Thank you!
