I made xmas cakes last year and soaked the fruit in brandy then kept the fruited brandy which was left over, put this in my chicken liver pate and it was the best thing i have done in my cooking journey. it was fantastic.

The same receipe my Grandmother used except for addition of nutmeg not all spice. Sometimes she made it using rabbit liver which I thought tasted better. Thank you for reminding me. Carry on showing wonderful receipes.

because chicken liver is so "fiddly", I use turkey liver for the pâté. it's easier to handle and the taste is nearly the same. I can also recommend adding a peeled apple. 1/3 onion, 1/3 liver, 1/3 apple. Give it a try ;) the all spice "trick" is new for me and i will def try it! thanks for sharing.

I never thought of allspice. Sounds great. I make my pate with Cape Ruby Port and a bit of lemon zest blended in. And a rosemary sprig to stick in the middle, it looks festive on the table. Thanks, Rik, you make me want to revisit old favourites!❤️😋

There are some really good vegan butters on the market now that you might want to try. I think coconut cream/oil would be too strong of a flavor for pâté

We used to have chicken liver pate on crusty toast, just like that, for a starter, if it was on the menu. We loved it. I've never thought about how it's made though. Easier than you'd think. Thanks for sharing another great recipe, Rik.
Omg. When I lived in Washington DC, used to buy liver Pate in Georgetown made with Cognac and black truffle. It was so fabulous. I'll be making this especially over the holidays. ❤

I've tried other liverwurst recipes I've found on here with various different livers, inc lamb's fry, but I NEVER had much luck with it coming out very nice! Will HAVE to try yours Rik!
