Chicken Liver Pate,
In butter and onion saute.
Cooked, dried and cooked,
Blended and pureed.
Stored in a jar with butter,
And placed in the refrigerator.
Wendy has applied the pate for taste.
Delicious and passed the test.

And make a quick fruit compote to top with. I did black plum and ate it all this week on toasted sourdough, excellent. BTW, creamy pate is a great way to get liver haters to change their minds, just don't tell them beforehand.

Wendy ... this is an excellent simple recipe. To take it to the next level, after blending pus the paté through a fine sieve to remove the remnants of the liver sinew/connective tissue, the thyme and any other parts. You will notice and appreciate the difference.
Grate some fresh nutmeg into the livers while cooking. NOT Cinnamon as most Americans would advise.

How about 50% lard to 50% butter? Looks like too much butter...and I love butter....only use it.

I read on the Weston Price Foundation website last night about the amazing benefits of chicken livers for pregnancy and I made a mental note to eat chicken livers somehow. My friend just so happened to be butchering her chickens today so I asked for the livers. I watched this video and it looked pretty simple and easy so I decided to make it with half of the fresh livers. I didn't have the fresh garlic, added in sage from my garden and thyme from the garden and I used the green part of the onion. I see now how versatile this recipe can be. I didn't wait for the full hour before indulging in the pate. Thank you for this video and recipe. Interesting how much butter is used, how creamy and delicious it is!
