Fantastic pie making Rik! Massaman Curry is my favorite and then it gets crowned in a lovely pie. The curry even thickened enough to stay put in the pan.

No doubt some will ask why you didn't make your own curry paste. But think I'm right in saying even Thai people buy the pastes, mainly because they are time consuming to make and like modem day life, people don't have the time! Wonderful good old fashioned cooking with the Thai twist! 🙂

Most are made and piled up in stainless steel bowls in the markets, etc., and you go along and buy what you want - there are a couple of curry pastes on the channel, but to be quite honest, anyone in the West would just buy a paste - they wouldn't go to the trouble of making from scratch. If it's the paste I tried in the UK (in a tub), it is very ok. There is a tub for every curry 4 or 5 - I got them in Sainsbury's when I was there. I have just sent this link to my Thai daughter in law - she has mastered steak pies to make them for my son and loves Massaman, although she is Isaan herself. I’ll give you a laugh, Rik - my son managed to get some Xmas mincemeat up in Nong Khai and asked her to make some mince pies. She had never actually seen a mince pie, so made them the size of steak pies - the two jars made four 😂 My son wasn’t objecting, though! Best wishes from Lynette in Scotland.

Good with beef, too - I shall give it a try. 😋 BTW The cardamom should be black cardamom (not the green pods) as that’s what gives it its distinctive taste. If you want to make Massaman curry in UK the Thai brand Mae Ploy is readily available in Asian shops and some supermarkets. You could put a teaspoonful in this pie. The cardamoms used are Thai cardamoms, so I guess you have learned something as well-NO, they should not be black cardamom. That's Chinese or Indian. 🙏 Happy cooking from Chiangmai, Thailand. P.s.
